The ever gorgeous Cassis Plum is made with cassis bombe, elderflower yogurt foam, plum liqueur, choya granita, yuzu pearls and yuzu rubies. The Cassis Plum was well-balanced between sweet and sour with a refreshingly clean acidity 😋. And I love how the magical sphere shape makes them look even more space-themed! 😍 Hidden towards the end of the eateries at Lorong Liput at level 2, it may be a little hard to notice at first sight. Kudos to the staff on duty on the 6th March, late afternoon. Not only she has offered direction to the dessert bar, she has also offered ice water once I have sat down 👍🏻. . And most importantly, thanks shootandspoon for always there during my ups and downs and all my birthday surprises 💗. I must have done something good in my past life to get a sister in my life 👭. . Heritage Trial Sweet Sweet Singapore
Summary
Singapore is very well known for food. Such as our black pepper crab, chicken rice and laksa.
For this trail, I have chosen the sweet side of our food culture. Going to three different places with different price points serving unique desserts. All opened by our locals.
Places Visited
2am: dessert bar ($$$) Opened by award winning chef, Janice Wong ( “Asia’s Best Pastry Chef” by the respected San Pellegrino Asia’s 50 Best awards in both 2013 and 2014.) With a goal to mix art with food. 21A Lorong Liput, Holland Village, 277733
Bloomsbury Bakers ($$) Opened by two friends that met in Le Cordon Bleu, London.30 Bendemeer Rd #01-889, 330030
Balmoral Bakery ($) Opened by a family. An old-school bakery with a variety of traditional and some almost extinct cakes/pastries. 105 Clementi Street 12, Singapore 120105
2AM: Dessert Bar
Dimly lit place with seats mostly separated in columns. Providing a calm and soothing atmosphere with a sense of privacy for small gatherings. Very popular as many reservations were made there. Was almost denied entry.
Cassis Plum (signature dish)
Elderflower yoghurt, red Shiso plum, liquer, cassis bombe. Cassis Plum is created to show different textures with every bite. The blackcurrant-white chocolate sphere changes in texture as it melts; becoming creamy and slightly gelatinous. It sits on a bed of Choya Shiso Granita w/ Kochi Yuzu Pearls and blackcurrant pastels. Adding “crunch” to show the versatility of the dish and adding balance of sourness to sweet finish.
Bloomsbury Bakers
A small and humble café in Boonkeng. Sweetly decorated with baby breaths. Has a graffiti wall for customers to write their thoughts on. Small and cosy place to catch up with friends and relax.Relatively popular. Many food items sold out.
Pulut Hitam Tart
Graham cracker crust, black glutinous rice base and coconut milk cream on top. The glutinous rice is very sticky and the coconut milk is made thicker in consistency. The tart is very well balanced in general; it is not overly sweet as it seems.
Balmoral Bakery
Situated in a quiet neighbourhood, No seats and barely air-conditioned. Little place to move about with barely any decorations.Mostly quiet with few customers. Customers consists mainly of the residence around the area or regulars.
Cream Cone
A simple pastry that is quite a rare find. Made using a sourdough pastry crust as the base of the cone, filled with fluffy whipped cream and topped with half of a maraschino cherry. The pastry is tough and crumbly with a buttery and sour taste. The whipped cream ensures that the product doesn’t feel too dry in the mouth and also balances the sour with a touch of sweetness along with the cherry.
Questions
Are we losing our traditional food culture ?
Yes. Throughout this heritage trail, I have found it very difficult to find places that still sell traditional desserts. These places are rapidly disappearing as the owners are aging and there are few from the younger generation willing to succeed the business.
What are we doing to keep the tradition alive ?
Like Bloomsbury Bakers, many cafes have started to add a slight twist to traditional desserts. Though the recipe has changed, the essence of our traditional dishes are kept.
How to apply what I have learned
Keeps their business going by meeting market demands (adaptability)
I shall learn to be more open minded and be more versatile when meeting expectations of other people. This will allow me to produce quality work especially in group projects.
Allowing feedback to improve themselves
I shall learn to accept constructive criticism to further improve my character, personality and habits.

This has been on my to-eat-list for the longest time ever since first watching it appear on Masterchef Australia season 7 back in 2015. Finally made it here in September last year. The dessert was intricate and I loved the sour and tangy combinations.
