I am strong, I am brave, I am capable. So I try to keep telling myself every single day. Because life doesn’t stop and neither should I. I need to keep going and find the strength within me to do so. Sometimes I even get a little bit of help from comfort dishes such as this butternut squash burger featured in the latest issue of the @slowlyveggie magazine, which I slightly reviewed as I used Mont d’Or cheese instead of cheddar and made my own burger chickpea flour and pumpkin seeds roll. ✨🍔 • Je suis forte, je suis courageuse, je suis capable. C’est ce que j’essaie de me répéter chaque jour. Parce que la vie ne s’arrête pas et moi je ne devrais pas non plus. Je dois continuer à avancer et trouver la force en moi de le faire. Microwave Mug Khandvi Recipe is given below: 
Ingredients: For Khandvi / Chickpea Rolls: 3/4 cup chickpea flour (besan) 3/4 cup Yogurt 3/4 cup water 1 teaspoon green chili paste 1/2 teaspoon turmeric powder Pinch of Asafoetida Salt to taste For tempering (seasoned oil) 2 tablespoons oil 1 teaspoon mustard seeds 1 teaspoon sesame seeds 
 Directions: 1. In a wide bottom microwave safe soup mug - add chickpea flour, yogurt, turmeric powder, asafetida & salt to taste. Mix & little by little add water & stirring. 2. Microwave for total 4 minutes & 45 seconds. Taking out & stirring after 2 minutes, again after another 2 minutes & last after 45 minutes. 3. Spread the warm mixture on a greased surface. Let it cool down. Then making long 1” wide lines. Roll with spatula as shown. 4. In a microwave safe bowl prepare tempering as follows: 5. Add oil, mustard & sesame seeds & microwave for 1 minutes. 6. Pour the mixture over prepared Khandvi / chickpea rolls. Garnish with chopped cilantro & grated coconut. Enjoy! Note: Microwave used is 1200 watts. Please check the strength of your microwave to adjust the time.
