Working on some stepwise cooking again! I got some chickpeas on to soak before slow cooking tomorrow, with the aim of turning out something like this with part of them. (Likely with some spinach or something thrown in.)
Probably also to be slow cooked, because I can without too much energy.

Papad or papadum is a traditional Indian food not just limited to the south of India but also extensively included in the daily menu in Rajasthan, Maharashtra, Punjab, Gujarat etc. This accompaniment also extends to the neighbouring countries like Pakistan, Nepal, Sri Lanka and Bangaladesh.
Papad or papadum is a tortilla like preparation that can be fried or roasted. It is eaten as a snack or accompaniment with Indian meals. Vegetables, tomatoes or onions are often added on top for flavor. It is usually made from urad flour mostly but can also be made from chickpeaas, lentils and rice flour. In some parts of Indiam dried but uncooked papads are used in curries and vegetable dishes.

This actually turned out really good for the amount of effort involved. I pulled the leftovers out of the freezer to have tonight (and probably for lunch tomorrow too, since Mr. C is off in Stockholm for the weekend again).
About to cook some quick jeera rice to eat with that. Only this time with some leftover homemade chicken broth that needs used up, because why not.
Also simmering now: some easy jazzed-up frozen kale.
One decent-looking recipe for a pretty simple North Indian dish that'll work fine with about any greens you've got, just adjust the cooking time accordingly:
Good thing to do with frozen chopped spinach.
That's not quite what I'm doing. This is pretty much just adjusting my usual basic greens approach to use a little different seasonings, and taking it vegetarian. I'm cooking the rest of an open bag of frozen chopped kale because it's the easiest and cheapest non-spinach green to find here. I kinda want more open outdoor space so I can grow some mustard greens and stuff.

Spice powders waiting to go in. And yes, these glass top stoves look awfal as soon as you use them. That was actually just wiped off before I grabbed lunch.
Today's seasoning approach starts with some panch phoran and a little extra brown mustard seeds, because I like them and thought it should work well with the kale. This also got red chili flakes because it was easy. Being kale, it's also getting abounded half a teaspoon of sugar, extra water, and longer cooking. Planning to add a splash of lemon juice at the end.

...Which is in a small box, currently still quarantined in the freezer to kill any bug eggs. Because the last bag of basmati I bought from the same store was apparently infested with flour moths when we got it. 👿 Nope, BTDT and not letting those take hold in my kitchen now. Now I guess all dry goods are getting freezer quarantined for a while.

It is smelling good in here, at least! And no evidence of bugs so far in that new rice. Which went straight back into the freezer for a few more days.
