What I love about Ted Allen on chopped is when he introduces the judges and he's always like "resteraunteur" or "executive chef" but whenever it's Chris Santos he's like "small plate rockstar and critically acclaimed cool guy!!" Or smth else wildly dramatic
#chopped#why does ted allen think chris santos is so cool#also sometimes when he introduces alex guarnaschelli you get the feeling hes about to be like#and my very best friend chef alex from the food network#like yes ted we love her too

Jessica B. Harris's Guide to Black Culinary History | Bon Appétit
Jessica B. Harris, Dawn Davis
Bahia, Brooklyn, New Orleans, Martha’s Vineyard, and Paris are the places she’s called home. Erudite, wickedly funny, and droll describe her personality. Who are we talking about?
None other than the culinary historian Jessica B. Harris, Ph.D.—founding member of the Southern Foodways Alliance, a member of Les Dames d’Escoffier, a professional society championing women in culinary fields, an award-winning journalist, podcaster, and author of over a dozen deeply researched books and too many articles to count. (If you’re looking for something that goes down like butter, check out her memoir, My Soul Looks Back, filled with tales about her adventures in New York’s Greenwich Village with friends James Baldwin and Maya Angelou.)
As the foremost expert on the foodways of the African diaspora, there’s no better (or wittier) guide to Black culinary traditions. Here, she shares with us a few of the dishes, books, and ingredients she finds essential to unpacking this long, rich, and ever-evolving history. —Dawn Davis, editor in chief

Try the Homestyle Favorites
Chef Edouardo Jordan’s JuneBaby restaurant in Seattle is an edible praise song to the genius of African American cooks. The menu offers classic dishes like fried chicken and greens along with specials—like chitlins and Momma Jordan’s oxtails—not usually tasted outside of home kitchens.
Tour the Archives
Toni Tipton-Martin’s The Jemima Code reclaims and celebrates the heritage of Black America’s controversial “aunt” by documenting 200 years of African American cookbooks from her personal collection. Familiar figures such as Edna Lewis show up alongside unexpected personalities such as activist Bobby Seale and singer Mahalia Jackson in this must-own compendium.

Eat Like an Icon
The late New Orleans chef Leah Chase served Gumbo z’Herbes once a year on Holy Thursday. The dense green meaty gumbo is essential to the rich culinary history of the area’s Creoles de couleur. It’s still served annually at Dooky Chase’s, her iconic family restaurant.

Required Reading
Two invaluable resources for those who want to deepen their knowledge: Black Culinary History and Cuisine Noir. Both websites preserve and promote the past and present contributions of chefs of color throughout the African diaspora.
For The Bucket List
The food of São Salvador da Bahia de Todos os Santos in northeastern Brazil is a linchpin between the food of western Africa and that of the Western Hemisphere. To taste a fish stew called a moqueca or nibble on an acarajé, a street food bean fritter, is to understand the connections.

More Okra, Please
Okra, which originated on the African continent, is a love/hate vegetable. Its detractors hate the “slime” and the lovers delight in the way it thickens a soup or stew and its crunch when blanched. Get recipes, history, and gardening tips, in The Whole Okra by Chris Smith.

Share Knowledge
You can find incredible images of African Americans and food on vintage postcards in my latest book, Vintage Postcards from the African World. They not only present the faces of ancestors but also tell amazing, often harrowing, stories of survival and triumph over adversity.

DISAPPOINTED BUT NOT SURPRISED
I guess the Day Of The Food Network Tumblr fandom is over, but that's okay! Have my opinions no one asked for! Yes I'm going to rank the judges :3
Alex: 4/10 my friend met alex at a food festival and Alex was mean to her so no I don't want her to judge me. I recognize shes a Good Chef though.
Amanda: 10/10 BELOVED AMANDA I'D BE HONORED TO HAVE HER EAT MY FOOD!!!!!! even when shes being mean shes not Cruel (cough alex) she has some great recipes too :)
Marc: 5/10 lol. i find it sooooo funny no one voted for him love yall youre so right. I wouldn't mind him judging me but i dont take his opinions seriously since that time i saw him on GGG and he was surprised a hunk ofncheddar was 12$ lol yeah bro cheese is Expensive for us little people
Chris: 1/10 can't explain hoe much I don't like this guy. idk what it is but his vibes are just RANCID id rather have Alex than [REDACTED] Santos
Geoff: 3/10 god hes so arrogant. I mean, most of these people are, and with good cause! but again! would rather have Alex! Who was mean to my friend! his opinions are BAD and i havent tried a recipe by him that ive enjoyed lol at least Alex's food is actually GOOD
Aarón: 9/10 i love this man i love his recipes he gives good advice in a constructive way and just gives off good energy. Dont tell me if hes secretly an asshole i can only take one icon being taken down a peg at a time
Scott Conant: 3/10 person who said you want him only to give him raw red onions I Feel You this man puts his personal opinions (onions) above techical skill and calls himself a judge?? I used to watch Chopped After Hours and one of my fave eps was when Marc (?) said "no im not going to burn my food who am i scott conant?" and you hear swearing off camera and it pans to the dark corner where scotts sitting there on his phone. Top tier. Marc's right.
Maneet: 10/10 LOVE THIS WOMAN!!!!!! WOULD LOVE TO COOK FOR HER!!!! WOULD LOVE FOR HER TO TELL ME HOW I COULD IMPROVE!!!!! She always has something good to say even if it's negative shes good at critiquing she understands the assignment.
Marcus: 8/10 my runner up tbh! hes done SO much good for the Harlem community and also understands what it means to be a judge. You're judging taste and technique not your personal food avoidances SCOTT.
THANK YOU AS ALWAYS FOR PLAYING
semi niche poll time
#bookbird babbles#marcus' cookbook is really cool i dont have it but ive perused it!#someone said jet tila and yeah hes fun too but not usually a chopped kidge but neither is damaris who is my number 1 fave so ¯\_(ツ)_/¯#i think the amount of people who voted in this poll is proof i am Unusual for having this much knowledge of different celebrity chefs l o l

GOING THROUGH THE front door, venus has a hint of a smile written across her facial features since she was on her third date with christopher. he decided to keep things casual this time around and commit to the idea that he told her before which was to cook her up a meal. however, she didn’t mind turning the date into a cute couple activity by helping him cook. “i’ve been living here for years now and i still get shocked when it rains. you look really nice by the way, chris.” she comments then follows it with a compliment. she removes the jacket that shielded her from the threatening dampness of the ruthless rain. she doesn’t know where to put it so she holds it in her hands by the hood. “what’s on the menu today, chef santos?”

Today at the farm we had beautiful conversations about foods from the Philippines and the diaspora with @bahay215, which is a resource for Filipinx in the Philadelphia area (and beyond) to connect through Filipinx cooking, gardening, and eating. We ate cassava cake wrapped in banana and fig leaves (thanks Nicky!), toured the farm with a focus on crops like bitter melon (ampalaya), moringa (mulunggay), molokhia (saluyot), okra, long beans, cucuzza gourd (similar to upo), and rice, and also discussed the cultural connections between all of these Asian and African foods (inspired by the Monsoon Exchange research by my parter Chris Bolden Newsome of @sankofacommunityfarm and our friend Lan Dinh of @vietlead). We ended the day with fermenting Syrian cucumber and Paul Robeson tomato seeds and continuing our “meeting” in the creek. Bahay 215 is Nicky Uy (@uynicky) and Omar Buenaventura (@dotdotdad) who brought along their son Eli. Our friend Neal Santos (@nealsantos) came too - he is attempting to grow some Filipinx seeds for our catalog this year, and is a chef (@lalophilly) and a food photographer. Kai Delgado-Pheifer (@lolas.apo) is a @farmschool_nyc student who is apprenticing with us and is particularly focused on keeping their ancestral Filipinx seeds with hopes to return to the Philippines someday. My coworker Amirah Mitchell (and her partner Kofi Sankofa) and Truelove apprentice Zainab Muhammed (@ainbaz), are focused on keeping seeds of the African Diaspora. So incredibly grateful for our time together today and looking forward to deepening relationships! #seedkeeping (at Newtown Square, Pennsylvania) https://www.instagram.com/p/CCzrg8Eg5hy/?igshid=ioa26bne9bwc
