Who doesn't love this classic comfort food? I think I've made this dish so many different ways, but this was a first using "Cauliflower" as a complimentary ingredient. It adds a texture that feels so familiar in a new way. Normally, I would layer a Mac N' Cheese with layers of cheese like a lasagna. For this dish, I decided to do a white roux which uses flour to help thicken the cheese sauce. This makes the texture extra thick and creamy! I'm getting hungry just writing about it!!
