From apples you get cider, and from pears you get perry. But in the 90s the name “pear cider” was found to be more commercially successful and it has pretty much stuck. Perry pear trees tend to be larger and more long-lived than eating pears, one particular tree in Holme Lacy, England, lived 250 years, covered three-quarters of an acre and produced five to seven tons of fruit each year. Being American, I’m more accustomed to the flavor of apples than pears; so, for me, pears have a different flavor, more floral, lighter and more delicate. California Cider Company was one of the first craft cider mills to produce traditional perry in the US. The flavor of Ace Perry is not at all light and delicate, it’s both sweet and sour, the pear flavor is nice and strong. I don’t know if that’s because perry pears are more assertive than the bartletts I get at the grocery, or if Ace Perry is brewed that way, but I like it. Carbonation is just about right for the flavor, champagne-sized bubbles, but not too many, just enough to liven it up. ABV only five percent, way short of the ten percent I want in a cider. I think most ciders, including Ace Perry, would benefit from the bitter flavor of a higher proof. But, I have lately discovered that America taxes high-proof cider as champagne, not beer, so I fear the government may be keeping me from my holy grail, kick-you-in-the-head, high proof cider.
