Thanks to 🍸 @mix.mann • • • • • For the first time in 2 years I’m not posting a Monday Mocktail! Fear not I did that yesterday featuring 2 Dutch products today I feature another as @bythedutch have launched their amazing new White Batavia Arrack! . Arrack is a catch-all term for a style of fermented spirit that’s been made for a few Millenia in India, Ceylon, across Asia to China & beyond. It predates western distillation and via the Spice Route was one of the first imported luxury spirits to the western world leading to the creation of Punch houses across London, Swedish Punsch and Dutch Batavia Arrack . There’s sooo much history about Arrack, in short during the Spice Trade race the Dutch colonised Indonesia and eventually created a strong hold in Java called Batavia in 1619 now known as Jakarta. The Dutch actively supported Chinese settlers to work and set up businesses, the Chinese brought their Arrack making technique with them that had already morphed to its distinctive style having previous settled across Indonesia for many years . Batavia Arrack is distinctive to this area as the Dutch started to produce sugar here, the molasses by-product saw a distillery open in 1641 - well sailors were powered on rum! But this combined molasses and a special red rice that develops wild yeast for a special natural fermentation. So whilst is can likened to a Rhum Agricole it’s much more exotic and spicier with tones of clove, ripe banana, vanilla, allspice & nutmeg . After being stored for 8-12 months the spirit was then shipped to Holland for final blending. By the Dutch follow the same process today! . ● Arrack cobbler ● The sun is flying high and that can only mean one thing: drinking cocktails in the sun. Summer has officialy started. The sun is amazing and the temperature is rising. So the best thing to do is cool down with a lovely cocktail. The cobbler is a classic which is traditionally served with berries in season and lots of crushed ice. The first just makes the cocktail look stunning and the latter is great for cooling down. Orinigally the sherry cobbler was the version that made this drink popular, but we're making it with a complex Batavia arrack. Batavia arrack is quite special. It tastes similar to a funky Jamaican rum, but is still slightly different. It uses suger cane as the basis as well, but it's fermentation also uses red rice cakes (yes, you read that right). It is then distilled in a pot still and in most cases it is then shipped to the Netherlands and aged in wooden cask there. In this cocktail the funky flavor of the arrack is the star of the show, but it is enhanced using some lemon juice and orange curaçao. We're adding some in season berries which tend to mix with the drink half way and then start to change the flavor slightly. This gives the whole drink an amazing fruity finish. Cheers! 2 oz Batavia arrack (@bythedutch ) 1 bsp or 5 ml orange curaçao (@pierreferrandpf ) 1/2 oz lemon juice 1/4 oz rich simple syrup 1 ds Peychaud's bitters 1 sprig of mint (as garnish) 1 orange zest (as garnish) a couple of berries in season 1 half ice sphere (as garnish, see below) Shake all ingredients with ice. Fill a nice wine glass with crushed ice and double strain in the contents of the shaker. Garnish with mint and the orange zest. Put the berries inside the half ice sphere put on top. Add a paper straw. To make a half ice sphere, use a sphere ice mold and fill it with water. Freeze for a couple of hours (5 hours is what I use). You'll have a frozen sphere with water inside. Make a whole and drain the water. Put back in the freezer until use. When ready for use, carve away roughly half of the sphere such that you can place the berries inside.
