(do this while corn husks are soaking) -so with the masa/base, you can do it two ways: make it from scratch, OR you can go to your latinx grocery store and they usually have bags of premade masa you can buy and it carves down the prep time SIGNIFICANTLY (also filling the husks is a great activity for kids).

-if you make it by scratch: masa (six ish cups, usually masa has ratio instructions on the back of how much liquid per cups) 1 teaspon baking powder water or chicken stock (follow ratio instructions on masa, depending on what brand you get etc) measure salt with your heart (sometimes i put in garlic powder/a little pepper in here, but we are a garlic fiend and its not necessary) mix mix mix mix mix until like fluffy (the texture/appearance should be a little bit like kinetic sand?). cover with wet towel and put in fridge until you're ready to use it.

-for filling, take cooked chicken x cotija and put into a bowl. use a hand mixture to mix it together (shreds the chicken AND combines it with the cheese. we love this).

-slice serrano (or jalepeno, or you can opt out entirely) into strips.

-GRAB YOUR CORN HUSKS. lay vertically, or hold it vertically (i usually just hold in my hand)

-corn husks have a rough side and a smooth side. put masa filling on the smooth side and spread it out (leave about 2 inches both ways). put one strip of pepper, and a little line of the chicken/cheese mixture.

-fold the together vertically, then fold the bottoms/tops in. some people tie them off in like bows/use toothpicks to hold together. but like, not necessary, unless you want to be fancy.

sweet tamals -i wish i knew measurements, but i just eyeball this? -put butter (like a shit ton. like 3 sticks maybe?) and sugar into a bowl, mix mix mix until fluffy -add in masa, baking powder (teaspoon), a little bit of cinnamon and salt. pineapple juice (either from the bottle or you can use the juice from the pineapple can, this is your liquid for the masa!) -your filling for this is diced pineapple (i think traditionally its supposed to have raisins/pecans in them, but we're allergic! so we don't!). you can use it from the can or. you can dice it yourself -follow the same process as the chicken ones re: laying masa on corn husk, and sealing.

idk if you have an instant pot? but if you do, the cooking part is super super easy and takes less time. put 1.5 cup water into the steam rack of instant pot. put tamals in pot vertically. seal and cook on high for 45. let it seam out for 15 minutes. GOOD TO GO.

if no instant pot, just get the biggest pot you have, put in steamer basket. bring like 1.5-2 cups water to boil and then reduce heat. put tamales in pot with the seam side down, cook for about an hour.
