i am safely back in canada now but i do have an experience that im still wondering about
so me and some pals went out to a diner to get us some brunch (i have a weird amount of affection/obsession about american diner culture) and the face that I made after having a bite of sausage dipped in syrup to see if they actual had maple syrup
I deeply wonder what my friends saw on my face bc the consensus IMMEDIATELY went around the table that "oh that is NOT maple syrup"

what would ur suggestion be to make the sauce less sweet.. i dont like sweet sauces for meat 😔
replace the brown sugar and honey with either just ½ cup honey or 1/ cup molassas. you could also reduce a juice of your choice (just boil it down add maybe 2 tbs of sugar?) try grapefruit or lemon juice (esp instead of the sweet orange) or pinneapple! double the ketchup / tomato paste. try adding melted butter (or a fat of your choice like lard ghi or something ) and tiny bits of flour at a time. you could also add more vinegar to balance out any tangy sweet, and add more spice (red pepper flakes, hot sauce of your choice?) in order to round it out.
however a bbq sauce is really nothing without the sweet base. if youre looking to omit the sweet entirel, i reccomend doing a rub on the pork beforehand and adding more liquid to the pork in the cooker to give it the illusion of having a sauce and being very moist but still having the full flavor. try playing around with these ideas and see if you find something that works for you! (you likely wont get it on the first go or even first few unless ur familiar in the kitchen, but dont give up!) try halving the recipe / do small batches and have a bbq taste test party with your friends! (buy a ton of chicken tenders or have the best bbq cookout of the century lol) you can buy small sauce bottles at the dollar tree / online or just reuse sauce bottles from whatever you use up (i like to reuse personally and make my own fun labels) but im sure whatever the end result is, it will be fantastic! anyone can cook and find their own personal style and flavors that appeal to them, once u find that out and find what goes together (esp in your own mouth) its all intuition and knowing how to start stuff like sauces and basic cooking techniques from there! home cooking is the best too because.. there are no rules really!
edit: I FORGOT vinegar based bbq sauces are a thing! you can find plenty of recipes online but its basically 2 cups vinegar:2 tablespoons everything else ratio.
