This is the lovely Stefano from @italianhomecooking who I had the pleasure of teaching a one-to-one homemade pasta class to at his home in London today. Although he has been making pasta for many years both as a chef and home cook, his objective was to create a dough made with a rolling pin which has texture and to understand the differences between the thickness and textures for the various types of both filled and unfilled pasta. Here he is lifting his first Tagliatelle made with a rolling pin. I was a bit close taking the video and didn’t manage to get everything in, but the last part, when the Tagliatelle unfold like a golden fountain was captured. Sul mio Facebook oggi c'era un post di Matteo Lepore che rilancia un video sul cibo di Bologna. Certo, l'apertura ("Forget Roma or Naples, Bologna, Italy is THE Italian city of Food") non dispone benissimo, ma che invece di riderci su ci sia qualcuno che pontifica sul fatto che i bolognesi non vogliano più zappare (perché a Napoli e a Roma, invece...) e che al sud il cibo sia meno pesante... boh. Passatelli. Originally from Romagna, Emilia’s other half. Traditionally served in Brodo but I think they are one of the most delicious and versatile pastas out there and they go beautifully with meat and vegetable 🍅 sauces and fish /seafood 🐟. They are made with Parmigiano Reggiano, breadcrumbs and eggs (plus nutmeg for anything non fishy or lemon/orange rind for seafood). If I make them in Brodo I don’t add any flour, but if served ‘asciutto’ or dry (so with a condiment and not Brodo), then I add a level tablespoon of flour to 200g Parmigiano and breadcrumb mixture so they don’t fall apart when sautéed. A while ago I experimented with bread other than the classic dry and hard crusted Bolognese bread 🍞 , but was never satisfied with the result as the bread took over the flavour. All our food & market tours in downtown #bolognacityoffood begin with an artisan cappuccino and a food map of all the #DOP and #IGP food products #inemiliaromagna . We like to talk all of our guests through the agricultural history of the region, cultural and gastronomic traditions over the last 1000 years as well providing an overview of the production methods of the most important foods. We then go off to the markets and delis for tastings that could only be described as ‘abundant’, during which we taste some of the region’s rarest products. Actually, the tastings are so abundant they constitute a hefty lunch. Never say we don’t feed you! (at Bologna, Italy)

It's hot and it's summer here in #bolognacityoffood. All I want is vegetables and fruit. And herbs. These beautiful 🍅 🍅 🍅 which are hiding under rather large quantities of basil are from my local farmers Bruna and Leardo. Add a dash of excellent olive oil (in this case from Puglia), a splash of 6 year barrel-aged condimento balsamico from Modena (of course) and that's lunch. #lessismore (at Yummy Italy)

You can't get more #bolognese than this. Whenever you come to #emiliaromagna and you see the word 'bis' on a restaurant menu, you are being offered two half portions of #pasta so that you don't have to limit yourself to tasting only one dish. There is, of course, the 'tris' which consists of three tastings. This was a 'bis' of our iconic #Tagliatelle al ragù and the classic #lasagne alla bolognese. The authentic lasagne from #bologna is made with green, spinach pasta and always has an uneven number of layers (usually 5 or 7). Note the balanced amount of ragù to #béchamel as well as the texture and thickness of the Tagliatelle and the density of the ragù. I think we can definitely benchmark these two dishes. I sometimes read food bloggers or journalists who refer to a bowl of Tortellini as ‘humble’. There is nothing humble about this dish. It is a dish for kings. Chef @vivo_ristorante_bologna has (because he’s allowed to 😂) made a variation on the classic theme and added a traditionally inspired element at the same time. Classically, Tortellini contain pork loin, prosciutto crudo, Mortadella, Parmigiano Reggiano and egg and broths are made with celery , onion and carrot with either capon, hen and sometimes beef tongue and beef rib. In this instance, the chef of @vivo_ristorante_bologna has added truffle (OMG YESSSSS!) and in keeping with the Modenese tradition of adding a splash of Lambrusco to the broth, he had added Lambrusco pearls. I did say this was fit for a king.
