 Escuela de Artes y Oficios. TETUAN
Fue creada en el año 1919 por el pintor Mariano Bertuchi. Pero su actual ubicación se inauguró, en los aledaños de la Puerta de la Reina, en el año 1928, después de haber pasado por la calle Luneta. En esta escuela se están enseñando nueve especialidades de oficios artesanales a unos 100 alumnos. Otras tres o cuatro especializaciones se han dejado de impartir por ausencia de profesores, que ven en la producción privada mejores formas de ganarse la vida, ya que los maestros de estas especialidades están considerados en la escala administrativa marroquí en el último escalón. Una verdadera pena.
Cuando la hemos visitado esta escuela estaba en funcionamiento parcial puesto que los alumnos estaban en las aulas y talleres que estaban en funcionamiento y atendidas por los maestros, otras estaban cerradas. Luego visitamos la salas de exposición de los trabajos realizados, el precioso jardín y otras dependencias de la escuela, todo ello de la mano de un "amable guía" que, por casualidad, se encontraba en la puerta de la Escuela cuando preguntamos por la posible visita guiada a las instalaciones del Museo. Como todos los museos oficiales de Marruecos, el precio de la entrada es de 10 Dh, poco menos de un Euro. Para mí, el haber tenido la oportunidad de visitar el Palacete decorado y las instalaciones de este recinto expositivo cultural, ha sido una maravillosa experiencia y recomiendo su visita al conjunto por la calidad de sus piezas, objetos y por la excelente labor educacional de producción que están realizando los maestros con los jóvenes de esta escuela de la bella Ciudad de Tetuán - Marruecos.

we’re making turkey shepherd’s pie
I talk a lot about cooking and I was making some today so here we are. I’m using my mediocre phone camera so bear with me.
First you boil potato. Dice’em small and drop them in the pot. Salt the water. Throw in some whole garlic. I’m lazy and have some peeled garlic so I kind of just ignore whatever the recipe says and throw whatever I grab out of the bag (a lot)

While you’re hottening your potato, you’re gonna put oil in a pan and soften up some diced carrots.

Season these suckers with salt and pepper. If you’re a maverick you can get in early on the rosemary gang.

Into the batch goes diced celery and onions. Recipe says more salt and pepper, so assuming you were shy seasoning the carrots you can be sure you didn’t miss a step.
Oh also I forgot to take a picture but chop up some garlic real nice and fine and throw that in here too, I dunno, like five cloves who cares you can never have enough garlic.

Once you feel like everything’s suitably warmed up you can throw in the mighty Turkey Brick

Just hack and chop at this bad lad. I think this was a pound? Again, salt and pepper. You don’t have to be too gentle with the seasonings in this recipe because the whole meal is a hefty affair, just remember you can always add more after the fact - but you can’t take it out once it’s in.

Oh yeah it’s all coming together.
So the recipe wants thyme but here’s the thing, thyme is a little punk and the real arena champion, the true hero of kvatch, is rosemary. So do both, or if you want just forget the thyme and double up on rosemary. (I did both)

I hate adding flour to recipes because it can add more to cleanup but the flour really makes the pie. Throw in some butter (don’t be shy) and some flour (I think it said two tablespoons?? but I really just eyeball it) and mix that all to hell. I’m using a big ol’ cast iron skillet so the heat doesn’t really matter, I just randomly move it from Extra Hot to Pretty Hot whenever I feel like it. If you don’t have one of these I’d suggest looking up an actual recipe because this is a really half-assed post.
(also if you don’t have a gas stove I’m sorry I hope your cooking endeavors are blessed anyway)
(oh also you should add more rosemary)

Get some good chicken juice to make the mix even more thick (you don’t need a lot, and by chicken juice I mean chicken stock concentrate)

Un-wet your bodado. Back in the pot, and then throw in big dollop of sour cream and like...honestly like 1/4 stick of butter.

Mashing only goes so far and I was a dumbass and forgot to save some of the salted water the potatoes were boiled in. So I used regular virgin water bit by bit to soften things up and stirred it all in. You’re gonna want to add a fair amount of salt and some pepper.
And now my favorite part.

Drop bodado
You’re gonna lovingly and delicately spread this across the top of the turkey mix like it’s icing on a cake (and maybe add more rosemary)

There it is. I did a little swirl and then sprinkled some more thyme around, and in the center I added more rosemary (because duh). If you have the cast iron and you have an oven you can set it to broil, put this hefty boi in the top rack, and let it sit there for like, maybe five minutes. FIVE! Maybe less. Broil is insane. I forgot to set up the oven and I was hungry so I didn’t do this.
