Best lemonade scone recipe ever!

Is there anything better than sitting down to a warm scone smothered with jam and cream? We think not! 

For some reason scones get a bit of a bad wrap. People are quick to tell you that they are temperamental and difficult and only the most courageous of bakers should attempt them. When i first started baking I must admit I was a little intimated by the humble scone, but then I discovered this quick and easy way to master them. 

If you include this recipe in your baking arsenal you will have soft, fluffy and beautiful scones every time! 

So here’s what you will need: 

325g (2 cups + 2 Tbs) self raising flour

167 ml (2/3 cup) cold lemonade (make sure this is carbonated) 

167 ml (2/3 cup) thickened cream 

and that’s it! 

So how do you do it?...

Step 1: Preheat your oven to 225 degrees Celsius (205 if fan forced) and line a baking tray with baking paper.  

Step 2: Place your flour in a large bowl. In a separate bowl combine the cream and lemonade. 

Step 3: Add the liquid to the flour and mix until only JUST combined. (The mixture should not look smooth and should be sticky and still wet). I use a baking scraper to mix this together by using a folding motion to scrape from the bottom of the bowl and then fold the mix over itself. This should really only take 1-2 mins max. 

Step 4: Turn the mix out onto a lightly floured service and use your hands to bring together into a smooth rectangle shape that is approx. 2.5 - 3 cms thick (the thicker this is the taller your scones will be). No need to knead (hehe), just bring it together until it looks like this. 

Step 5: Dip a round cookie cutter (I used a 7 cm for this recipe) into some self raising flour so that it doesn’t stick and cut out your scones one at a time. After you have cut as many as possible out of your dough (I got 4 for this as I like my scones high) you can gently combine the off cuts into another rectangle and repeat. Keep in mind you should only do this once. The more you work the dough the tougher it will become and your scones will stop rising and loose their fluff! 

Step 6: Place the scones so that they are just touching on your prepared tray (I like to use a square tin as it helps them rise nice and high). 

NOTE: If you want to milk/egg wash your scones before hand you can. Washing your scones is really only for presentation purposes so have a quick read here to see whether you would like to include this step or not. If you do decide to wash your scones make sure you only do the tops. Any liquid that drops down the sides will inhibit your rise. 

Step 7: Bake in the oven for 12-15 minutes until lightly golden. 

Step 8: Serve warm with topping of your choice and ENJOY!!!!!
