K I'm gonna drop a southern recipe for y'all get ready:
Salmon Croquettes
Ingredients:
Canned salmon
Eggs
Post Toasties or Corn Flakes
White or yellow onion
Crisco, lard, or veggie oil (to fry in)
Okay so southern cooking is about feeling rather than specific measurements. I usually use 2 cans of salmon to serve 4-6 people. Salmon is the control here: it's the only one that is difficult to add cuz you have to open another can.
This works best over a gas stove, bc it's easier to control the heat and will heat more evenly, but will work on electric.
I usually mix it with my hands, you want it evenly mixed without breaking up the corn flakes too much
Put salmon into a large bowl and break it up. You don't have to remove the bones, but tbh they look gross
Salt and pepper
Add diced onion to preference
Add corn flakes maybe 1/2 cup at a time, mixing as you go
You want maybe 3:2, salmon:corn flakes
Add an egg & mix
Add eggs until the mixture can hold together enough to make patties
To cook:
In a large cast iron skillet, use enough oil to put about a .5-1 cm on the bottom of the skillet.
Heat the skillet on medium high. - Usually it's ready when you can flick a drop of water at the surface and it's dramatic. Idk temperature
Make a test patty first. If it absorbs the oil, the oil is too cool. It should go into the pan and start frying immediately. It will pop and sizzle like bacon
Keep in mind we are only pan frying these. DO NOT deep fry. The oil should go halfway up the patty AT MOST
The oil is too hot if it doesn't stay in the pan when you add a patty. (Violently. If it's popping and uncontrollable. Basically if you start to panic, it's probably too hot) If it gets that way, cover and remove from heat. Wait until it's cooled down considerably to start again
Test patty: it will probably be too cool to fry and will soak up a ton of the grease. Don't worry, just leave the patty in the oil until it does start to fry properly.
Once the oil is hot enough, you can fry multiple patties at a time. Do not crowd the pan. You should have enough room to flip the patties over.
Fry patties until golden brown and crispy on both sides.
Place finished patties on a large plate covered in a paper towel to absorb the excess grease
Side suggestions: Mac n cheese, green beans, peas, mashed potatoes, okra n tomatoes, etc. French fries could be good but I haven't had them together.
Serve with ketchup.
You can add more seasoning to the recipe if you like, but Southern cooking as I know it uses very few ingredients. My great grandma lived during the depression & my memaw (who taught me) was a kid during WWII. These foods came from poor people who needed to eat enough to work outdoors, so they're high in fat. It'll put meat on your bones, yk?
