Nina’s Bakery is a new and upcoming cake shop in Gurgaon NCR. We specialize in vegan cakes, however we also bake regular cakes such as Chocolate, Dutch Truffle, Black Forest etc.
We also make special cakes for occasions like Anniversary and Birthdays.  We have a cake for every occasion. And hence our main tagline is “ A slice for every occasion”. We cater to every event there is. 
Now talking about how we decided to start our own Bakery.
Nina has had professional training from one of the best baking schools in France called “ Ecole de Cuisine La Varenne” in Paris. 
After working at a famous restaurant in Paris as a professional Patissier, Nina has worked with some of the most well known Patissiers in France and has had first hand experience by watching some of the best in the business. After working for about  three years in France , Nina was very happy with her job and workplace as she was doing what she loves and was also getting paid handsomely in Paris. However she felt she wasn't utilizing her abilities to the fullest potential. Nina thought she could add a lot more variety and range  of cakes to her menu. But she realized she would need to start her own business for this. So she flew back to India and started her own cake shop.
After getting back Nina realized the cake business in India, especially in Gurgaon, is very competitive and that she has  to implement something different and unique, which would make her cakes stand out.  Nina had an idea about Vegan cakes, after doing some research she realized that there is a huge demand for vegan cakes in the younger generation but not a lot of bakeries were offering quality vegan cakes in the city.  
That's when she decided that the main “USP” of her cake shop would be her Vegan cakes. However she does realize that even though there is a huge demand for Vegan cakes, it doesn't rule out  the majority of cake sales will still be regular cakes. Indian James Bond
The days were hot and dry as the sun showed no mercy with the temperature soaring to 45 degrees. As we took refuge under the huge university banyan tree, playing hide and seek with the sun. The hot wind blew ruthlessly on our bodies partially cooked by the sun’s heat.
As we were standing under the tree getting baked, I saw a huge black figure enveloped in bright yellow approaching us. “Run Shiela run”, I shouted, wrapping my dupatta all over my face like a dacoit on a run or I would say like an innocent  victim on the run 
 She was new in college. “Run in the sun why?” she asked with a confused look on her face.
“Desi James bond is coming towards us”, I shouted
But in seconds he was in front of us and now there was no escape. 
Hi! “I am  Gupta Suresh Gupta,” he introduced himself to Sheila. 
Sheila burst out laughing, now she knew why I preferred the sun to this human being.
Gupta was a tall, dark, lanky narcissistic college boy from a small city, Raebareli in the Indian state of Uttar Pradesh. He was the knight in shining armour for all the aunties, professors and girls.  I would say any damn damsel will do, the only condition is that she should be in distress.   His vacation stories would usually start with skiing in Switzerland and ended with biking in England. He was blessed with a licence to kill, kill us with his long, never-ending and self-absorbed stories. Students, as well as the professors, dodged him like criminals dodging bullets. 
“Opportunity like an elegant lady knocks once and if not answered leaves gracefully but tragedy keeps knocking and banging like a nagging possessive girlfriend and sometimes even breaks the door to enter your life, like a “BITCH”.
Gupta was that tragedy in my life. He married Shiela and we met after 5 years when he moved next door. The country was going through a crisis of pandemics and our prime minister had declared a complete lockdown, there was panic in the air. 
Tragedy rang the doorbell and I like a dumb doorknob opened the door.
There were two men dressed in black wearing black surgical masks, black goggles and black gloves, looked like international jewel thieves. 
“It’s us”, one of them said.
Oh! Guptas, I signed with relief.
I should have recognized Gupta with his potbelly and gold chains, I thought to myself.
“Hurry up or I will go alone Shiela”, Gupta said
All men love James bond, they secretly desire to be like Bond, but pulling off a bike stunt on top of a train can be extremely ambitious. So how do they satisfy this longing in their boring mundane lives? 
Gupta like a child waiting to open his birthday presents after the party waited for moments, desperate moments to occur in women’s lives, where he could rescue them out of their miseries. Phrases like Guptaji I am late for office can you drop me, Guptaji I am stuck in traffic can you pick my kids from school were like opportunity gift wrapped with a flashy bow screaming to be opened. And when this happened he seemed like a kid in the candy store, with a tinkle and hope in his eyes, for more miserable women to come his way.
“Mrs Sharma is stuck at the red light on Sherwood drive, she didn’t tell me exactly how or what happened but she needs my help”, he added looking at me.
Shiela dragged me towards the lift handing me one of her black masks and in no time we were on the dead silent roads of Gurgaon. Silence haunted the day as I could only hear the noise of the car tyres kissing the newly tarred road. 
As we approached the Sherwood road light rhythmic shouting and screaming could be heard from a distance  
Stop! Stop! the police constable shouted and we stopped the car at the traffic light. I could see Mrs Sharma and Mrs Verma standing next to their car. It was like a buy one get one offer, it was “The day” for Gupta, as the sale day of opportunity  
Feet away from them was a long line of men doing situps while holding their ears as a constable softly brushed his lathi ( long wooden stick used by Indian police) on their asses and depending on his mood he would hit one ass and the after-effects could be heard from a distance. It looked like a live circus on the roadside and Gupta was going to be part of it soon.
“Come out come out,” the constable shouted at Gupta 
Gupta clearing his throat stepped out of the car in style while waving at the ladies. All efforts to save the damsels were in goodwill. But this constable was about to burst Gupta’s bubble.
 “Because of you literates we are outside getting corona”, the constable shouted angrily.
 “one more ass for my lathi”, he added  
“ Come sit here with the other daredevils”, the constable continued pointing his lathi at the men doing situps.
Gupta panicked and said,” Sir, actually I was on my way to the hospital as my mom is not well, you can talk to her and check while dialling his mom’s number and handing the mobile phone on speaker mode to the constable.
Hello! “Beta I am at mandir red light, we were here to get our locality ladies but now your dad is doing situps, can you come and get us”, her voice echoed the empty road.
Shiela drove the car near Gupta and partially leaning out of the car window said, “ Gupta I don’t want to be selfish and keep such a nice kind-hearted brave man to myself so I will make the sacrifice for the greater good”.
Gupta was confused so was I but our confusion was resolved in seconds when Shiela drove past him leaving him to the cop and his lathi. 
Gupta kept shouting Shiela don’t leave me, but she didn’t stop. “ Shiela, what happened, why are we leaving Gupta,”? I asked hesitantly. But she just smiled, as we headed back home 
The next day the bell rang and to my surprise, it was Gupta and his father standing at the door.
Mama and Shiela left us, he cried as he pushed the door and barged in with his dad. 
Can we have some breakfast, we are in a hurry. I have to go and help my sweet neighbour Pinky with her laundry, though I am missing Shiela I can’t look away from my responsibility towards my community.  Corona was spreading like wildfire so was the bond syndrome in my neighbourhood.
A few weeks later I got a message from Shiela  which was as follows 
She was having a time of her life.

Yesterday when I go to know that I may have to quarantine again alone for 14 days in Gurgaon, my heart sank a bit. To cheer myself a bit , I decided to make something from my childhood . A mutta perattu that my grandmother used to make for lunch on days when we would get no fish. My grandparents used to live in Painkulam, an idyllic hamlet in Kanyakumari district with Tamirabharani river encircling it . So there was no gas till I became 10 or something. She had a typical old school aduppu where she would use kothumbu( the Dried spathe of Coconut palms) to light up the fire & she would take her own sweet time to make the lunch . The mutta perattu is quite different in flavor from the Suriani Tomato flavored Egg Roast even though it may look similar. In this recipe, the coriander seeds, red chillies & peppercorns are slow Roasted but the color should not change. This is then ground with a few Cloves of garlic & shallots to a smooth paste. Ammooma used to grind this in an ammi kallu ( sil batta) which obviously yields more flavor. Since I was in no mood for a morning work out, I stuck to my Philips mixie. This was sauteed in some oil with some caramelised onions & curry leaves till it becomes a thick paste enveloping the hard boiled eggs. I also end up making Vellayappam today after a long time. Now appam in Kerala can be a gazillion things, fry , steam, roast , bake, you name it we have it pretty much like pithas of Eastern India. Vellayappam means white Appam . Temperature control is key here for you to swirl it in the appa chatti. I like it a bit sweet. If the appam pan gets too hot, it will start leaving the sides of the pan and you won't be able to swirl. A perfectly made appam should be soft in the centre & crisp at the edges & should be able to hold shape. It did take a few attempts for me to get it right. Appam again is there in countries across south & South East Asia. In Srilanka it is called Hoppers, Apom Balik in Malaysia where it tends to be sweet & mostly had like a dessert with palm sugar or other toppings. One bite,amma took of the appam & perattu & she told me it tasted just like granny's with the characteristic Garlic aroma.What a win ! Surbhi is a national level Archer who has won several Gold, Silver and Bronze medals at the National Archery Championships.
