Cure (recipe at bottom)
100g of cure #1: 6.25g (6 250mg) sodium nitrite; 93.75g salt (sodium chloride).
10g cure 1: 0.625g (625mg) NaNO2; 9.375g salt.
1g: 0.0625g (62.5mg); 0.9375g.
Alright. If my recipe calls for 3g cure for every 1kg of meat, I am getting (62.5x3=)187.5mg nitrite/kg. If I am curing 4kg then it is (187.5x4=)750mg. If I am curing 500g then it is (187.5x0.5=)93.75mg nitrite.
100g of cure #2: 5.67g (5 670mg) sodium nitrite; 3.63g (3 630mg) sodium nitrate; 9.3 (9 300mg) both; 90.07g salt.
10g cure 2: 0.567g (567mg) nitrite; 0.363g (363mg) NaNO3; 0.93g (930mg) both; 9.07g salt.
1g: 0.0567 (56.7mg) ite; 0.0363g (36.3mg) ate; 0.093g (93mg) both
If my recipe calls for 3g of cure for every 1kg of meat, I am getting 170.1mg nitrite/kg & 0.1089g nitrate/kg, or 279mg both/kg.
EU regulation says 150mg. Good thing I'm in Canada.
Alright so, celery leaf.
"Cold-smoked sausages containing 2.58% of freeze-dried celery (corresponding to 150 mg/kg of nitrate) or 150 mg/kg nitrite or 150 mg/kg nitrate were manufactured with S. xylosus or with S. xylosus and P. pentosaceus mixture."
This seems to imply that they cured meat with normal 150mg nitrate, then they cured meat with 150mg nitrate in the form of celery, & they cured meat with 150m nitrite. To get 150mg nitrate in the form of celery, they needed 25.8g of freeze dried celery powder.
According to my assumptions, there are 150mg of nitrate in 25.8g celery powder.
Celery Total Nitrate Content (mg kg−1[which means ppm or mg/kg]): 1103, 1544, 1495, according to different sources
That is for fresh celery & not dried celery leaves. How much weight does celery lose when dried? If I wanted to do the math, I would find a conversion for something like parsley leaves weight fresh vs dry & celery fresh vs freeze dried. Either that or multiply away the water weight from celery.
"The five different sausage formulations were: Control negative (CN) no nitrate added; Control positive (CP) 150 mg/kg potassium nitrate; Group with celery powder (GSe) 3 g/kg celery powder. Based on Sindelar et al. (2006), a mild effect on the colour of the meat was expected from celery and spinach, and beet powder was added in two lots."
So here it seems like they are treating 3g of celery as equivalent to 150mg nitrate.
This is a far cry from 26g of celery equivalent to 150mg.
Celery is 95% water. According to my brother, dry celery has 14 000mg (14g) of nitrate in one kilo.
If I need 279mg of nitrates/ites for one kilogram of meat, how many grams of dried celery powder do I need?
279 is basically 280mg. I need 20grams of dried celery.
So without further ado, here is my recipe:
For every kilogram of meat you want to cure, you need the following:
Salt: 25g (& an extra 3g from cure 2)
Cure 2: 3g (280mg nitrate/ite, 2.7g salt); ALTERNATIVELY - Dried celery leaf powder: 20g
Dry sage: 0.9g
Rosemary: 0.6g
Fennel seed: 1g
Ground fennel: 1g
White pepper: 0.3g
Garlic powder: 0.5g
Chianti (italian/tuscan red wine from sangiovese grape)
Mixing vessel, something with which to open the chianti, gram scale, fridge/cooler, plastic bag/vacuum seal bag, probably a tray or smth to do this on.
Keep all the parts apart until you are ready to mix. You'd be surprised how often you forget that you already did a part of it. Phone rings? Oh now where was I. Did I already get the salt? Hmm...
Weigh the meat you want to cure. Multiply each number by how many kilos of meat you have. Measure the ingredients all apart.
Wet with wine until it is like sand at the beach. Pack on all the salt mix. Do not waste any because this is already measured for this amount of meat. Put it into the bag & seal.
Store in the fridge for a few weeks up to a few months.
When ready, I would suggest using a thermocirculator to low-temperature pasteurize it, & then it is safe to store for another few months.
(Here is what my teacher said: Yes, once we cured the whole muscle, we store it under refrigeration to cure through. Depending on the cut and temp, that's usually about 3-4 weeks for the Coppa and 2-3 for the lomo, as reference. You can keep it vac sealed with the curing ingredients for months. Max I've done personally is 5 months. After the curing phase, I cooked them sous vide. And it's neat because once it's been cooked sous vide, the shelf life in the fridge is then also months.)

Summer maintenance feed is in. We picked up Inukshuk 26/16.
Was waiting until the 30/25 was finished before switching over, so Zarya ended up putting on a few extra pounds. Her mom Luna is 43 lbs or 19.5 kg; Zarya ended up being 27 kg which is similar to Pavel's weight. She was maintaining 20 kg throughout the entire winter, so she definitely needed the extra calories during the cold spells. My fault. To be fair, the owner of Zarya's sire (Bo) roads his dogs total of 30-50 km a week (or 15 - 25 km twice a week.) So, will have to road her as well as soon I find a Springer bicycle attachment. Last one was gifted while staying in Finland, then returned it before moving back to Canada since I'm not really allowed to own anything that doesn't fit into a carry-on or checked luggage.

The chunkier pellet is the Inukshuk 30/25 which sheens, and is dark brown. The lighter tan discs are the 26/16.
I like how I can switch between the different tiers of 26/16, 30/25 and 32/32 without adjusting the feeding volume. That was always a pain with one of our previous dogs who was always hungry if you change the volume (regardless of calorie density), and most pet food manufacturers don't keep their manufacturing and formulations consistent. Zarya seems to be less picky about this product compared to the Purina ONE dry food. She will only eat wet variation of the Purina ONE formulation, as long it's not a stew or in a gravy form and has a texture more similar to ground meat or paté. I need to be really clear: there is a lot Corey Nutrition Company should improve upon to make their products better as indicated in the review of the 30/25, especially with tightening up control over the excess minerals. They have the equipment and infrastructure to have those quality control in place, so not going to give the 'small business" excuse a pass like most social media influencers and pet guardians or pet parents.
The bags cost $60 CAD through a wholesaler which ends up being between $20 to $30 a month. Normally a similar bag from the petstore will end up be $80-$120 dollar. It's very unlikely I will get a similar discount with Royal Canin or Purina unless I run a large kennel program. Once we go back to paying retail prices on Inukshuk, I would be a lot more strongly critical of the processing plants.

What Is Hemp?
It’s A Trillion Dollar Cash Crop.

Hemp is a name given to a strain of the cannabis plant.
Hemp is a name given to cultivars of the cannabis plant (Cannabis sativa) that have been selected over many generations for fiber and seed production. Most hemp cultivars contain less than 1.5% THC, a narcotic compound that has the potential for abuse in high concentrations. Cannabis sativa cultivars selected and developed for their drug properties, referred to as marijuana, or dagga, can have a THC content of 3%-25%.  Hemp is a bast fiber, producing its fibers in the stalk similar to flax, kenaf, and sun hemp.
Multiple Uses
Hemp fiber and seed are used to produce a wide range of commodities including food and beverage products, fiberboard, insulation, paper, composites, textiles, carpets, animal bedding and feed, cosmetics, body-care products, soaps, paints, fuels, and medicines.
Hemp Seed Food and Beverage Products
Hemp seed contains about 25% protein, 30% carbohydrates, & 15% insoluble fiber. Hemp seed is reported to contain more easily digestible protein than soybeans. Hemp seed contains all 8 amino acids essential to human nutrition. Hemp seed is high in calcium, magnesium, phosphorus, potassium, carotene, sulfur, iron and zinc, as well as Vitamins A, E, C, B1, B2, B3, and B6.
Hemp seed imported into the United States or Canada must be steam sterilized at between 180 degrees F and 212 degrees F for 15 minutes to prevent sprouting. Many US facilities receive imported viable seed under customs bond, steam it, and release it to the consignee or customer with a Certificate of Sterilization.
Hemp food and beverage products include hemp oil and seed, flour, pasta, cheese, tofu, salad dressings, snacks, sweets, hemp protein powders, soft drinks, beer, and wine. Hemp beer can be made from the seed, flowers, sprouts, and seed cake that is a by-product of oil pressing. Hemp beer is produced and sold in Europe and the United States of America.
Hemp Oil
Hemp seed is 25% to 35% oil, and is one of the oils lowest in saturated fats (8%). Hemp seed oil is the richest source of polyunsaturated essential fatty acids (80%). Hemp seed oil is the only common edible seed oil containing Omega-6 Gamma-Linolenic Acid. Hemp seed oil is very fragile and not suitable for cooking.
Pressed hemp seed oil must be bottled immediately under oxygen-free conditions, and must be refrigerated in dark, airtight containers.
Fiberboard
Hemp fiberboard tested by Washington State University Wood Materials and Engineering Laboratory proved to be two and one half times stronger than wood MDF composites, and the hemp composite boards were three times more elastic.
Hemp herds can be used in existing mills without major changes in equipment. Russia, Poland and other Eastern European countries already manufacture composite boards from hemp and other plant materials.
Pulp and Paper
The major use of hemp fiber in Europe is in the production of specialty papers such as cigarette paper, archival paper, tea bags, and currency paper. The average bast fiber pulp and paper mill produces 5,000 tons of paper per year. Most mills process long bast fiber strands, which arrive as bales of cleaned ribbon from per-processing plants located near the cultivation areas.
Composites
Until the 1930’s, hemp-based cellophane, celluloid and other products were common, and Henry Ford used hemp to make car doors and fenders. Today hemp herds can be used to make new plastic and injection-molded products or blended into recycled plastic products. Hemp fibers are introduced into plastics to make them stiffer, stronger and more impact resistant. Hemp plastics can be designed that are hard, dense, and heat resistant, and which can be drilled, ground, milled, and planed.
Hemp plastic products currently made include chairs, boxes, percussion instruments, lampshades, bowls, cups, spectacles, jewelry, skateboards, and snowboards.
Hemp Animal Care
Hemp horse bedding and cat litter are produced and sold in Europe. After oil is extracted from the hemp seed, the remaining seed cake is about 25% protein and makes an excellent feed for chicken, cattle, and fish. Chickens fed hemp seed on a regular basis have been found to produce more eggs, without the added hormones used in most poultry plants.
Fuels
Hemp seed oil can be combined with 15% methanol to create a substitute for diesel fuel which burns 70% cleaner than petroleum diesel. Hemp stalks are rich in fiber and cellulose, making them conducive for conversion into ethanol and methanol fuels that have a higher octane than gasoline and produce less carbon monoxide. These biomass fuels are also free from sulfur, and do not require the addition of lead and benzene used to boost octane and improve engine performance in fossil fuels. Ethanol holds condensation, eliminating oxidation and corrosion, and is reported to reduce carbon dioxide emissions by more than 30%.
Hemp has been studied in Ireland as a biomass fuel to generate electricity. Hemp has been reported to yield 1000 gallons of methanol per acre year. Hemp stalk can be converted to a charcoal-like fuel through a thermochemical process called pyrolysis. Henry Ford operated a biomass pyrolitic plant at Iron Mountain, Michigan in the mid-20th.
Paints and Varnishes and Binders
Until the 1930's, most paints were made from hemp seed oil and flax seed oil. Hemp oil makes a durable, long lasting paint that renders wood water-resistant. Hemp herds have the potential to make glues for composite construction products that are non-toxic and superior to binders currently used. With this technology, industry can produce composite products where all components are derived from hemp.
Markets for Hemp Pulp
Some paper manufacturers already have the equipment to process decorticated hemp fiber into paper. The leading European supplier of non-wood pulp, Celesa, currently produces about 10,000 tons per year of pulp from hemp. The use of hemp pulp in blends with recycled fiber of other non-wood fibers is growing. Tests by several European pulp and paper producers suggest that hemp pulp may replace cotton cost effectively in several specialty paper applications.
Potential Markets for Medical Application of Low-THC Hemp Cultivars
Many cannabis medicines have been produced using cannabis cultivars high in THC, and there has been medical research into cannabis that is low in THC and high in CBD.  CBD is a cannabinoid that does not have many of the psychoactive effects associated with THC.  CBD has been used to treat the following medical conditions: epilepsy, dystonic movement disorders, inflammatory disorders, pain, chronic insomnia, chorea, cerebral palsy, and Tourette's syndrome. According to a July 1998 report by the National Institute of Health, CBD may hold promise for preventing brain damage in strokes, Alzheimer’s disease, Parkinson’s disease and even heart attacks and has been found to prevent brain cell death in an experimental stroke model.

More than 33 million people in the United States are driving vehicles that contain a potentially deadly threat: Airbag inflators that in rare cases can explode in a collision and spew shrapnel.
Few of them know it.
And because of a dispute between federal safety regulators and an airbag parts manufacturer, they aren’t likely to find out anytime soon.
The National Highway Traffic Safety Administration is demanding that the manufacturer, ARC Automotive of Knoxville, Tennessee, recall 67 million inflators that could explode with such force as to blow apart a metal canister and expel shrapnel. But ARC is refusing to do so, setting up a possible court fight with the agency.
NHTSA argues that the recall is justified because two people have been killed in the United States and Canada and at least seven others have been injured by ARC’s inflators. The explosions, which first occurred in 2009, have continued as recently as this year.
NHTSA tentatively concluded, after an investigation that has lasted for eight years, that the inflators are defective. The agency’s documents show that the inflators date from at least the 2002 model year to January 2018, when ARC installed equipment on its manufacturing lines that could detect potential safety problems.
One of those who died was Marlene Beaudoin, a 40-year-old mother of 10 from Michigan’s Upper Peninsula who was struck by metal fragments when her 2015 Chevrolet Traverse SUV was involved in a minor crash in 2021. She and four of her sons had been on their way to get ice cream. The sons were not hurt.
ARC maintains that no safety defect exists, that NHTSA’s demand is based on a hypothesis rather than technical conclusions and that the agency has no authority to order a parts manufacturer to carry out recalls, which ARC contends are the responsibility of automakers.
In the meantime, owners of vehicles made by at least a dozen automakers — Chevrolet, Buick, GMC, Ford, Toyota, Stellantis, Volkswagen, Audi, BMW, Porsche, Hyundai and Kia — are left to wonder anxiously whether their vehicles contain driver or front passenger inflators made by ARC. (Some vehicles have ARC inflators on both sides.)
Because ARC supplies inflators that are included in other manufacturers’ airbags, there’s no easy way for vehicle owners to determine whether their inflators are made by ARC. Neither NHTSA nor ARC nor the automakers have released a full list of affected models.
Michael Brooks, executive director of the nonprofit Center for Auto Safety, called on NHTSA and the automakers to release a list of affected models.
“Customers, I think, have a right to know if there’s a potential defect in their car, particularly if it’s sitting a few inches from their chest and can explode,” Brooks said.
The situation, he said, is reminiscent of the early stages of the Takata air bag inflator recalls in 2001. It took years for all the affected vehicle models to be announced.
Both ARC and Takata used ammonium nitrate to inflate air bags. Takata’s situation was more dangerous, Brooks said, because in its inflators, the chemical could deteriorate over time when exposed to high heat and humidity. Unlike Takata, ARC uses ammonium nitrate only as a secondary chemical to inflate air bags. ARC’s problem appears to derive instead from a manufacturing defect.
From 2017 to 2022, the ARC problems triggered seven small recalls from automakers. On Friday, the same day NHTSA announced its action against ARC, General Motors announced the recall of nearly 1 million more.

I have found exactly one company that makes high quality thoughtful well designed clothing.
It is a Canadian nightgown/pj manufacturer.
The company is called Nights in White Flannel.
They use only the highest quality cotton fabric, fabric that is produced locally in Canada. They only produce each item after it has been ordered. Meaning, if you, like me, are uncommonly tall, you can ask them to make the items longer. Because they will totally do that for you.
The fabric is cut at a central location, then it is sent to the home of one of their sewers. These are people who work from home and sew every item to the highest standard.
When the item is finished it is packed into a flannel bag, made of the fabric left over from cutting the clothes. The bag is hand stitched shut, taped up and sent to you.
I have been wearing some items of clothing from this company for over 15 years. Like, I still have the first nightgown I bought from them, and I still wear it alllll the time. It’s a huge difference in quality.
Is each item I buy from Nights in White Flannel a lot more expensive than buying pjs at Walmart? Yes it absolutely is. However, the price is well worth it. The pjs are more, comfortable, more stylish, and last 15 to 30 times longer.
Not only that, but I know that every aspect of the creation of these pjs is not produced in a sweatshop. And that, dear friends, helps me sleep easier.
One side effect of my research for this novel being steeped heavily in textile history is my swelling disgust with modern fabrics.
Firstly they're so thin? Like most things you see in Old Navy or even department stores might as well be tissue paper?? Even some branded sports t-shirts I've bought in recent years (that are supposed to be 'official apparel' and allegedly decent quality) are definitely not going to hold up more than a year or two without getting little holes from wear.
This side of even two hundred years ago fabrics were made to be used for YEARS, and that's with wearing them way more often because you only owned like three sets of clothes. They were thick and well made and most importantly made to LAST. And they were gorgeous?? Some of the weaves were so fine and the drape so buttery we still don't entirely know how these people managed to make them BY HAND. Not to mention intricate patterning and details that turned even some simple garments into freaking ART.
I know this is not news, the fast fashion phenomenon is well documented. Reading so much about the amazing fabrics we used to create and how we cherished and valued them, though, is making it hard not to mourn what we lost to mass production and capitalism. Not just the quality of the clothing and fabrics themselves, but the generations of knowledge and techniques that are just gone. It makes me what to cry.
I need to get a sewing machine.
