· 1 cup mint leaves
· 1 Tbsp honey
· 1 Tbsp ginger chopped
· 1 gm salt
· 2 gm black pepper powder
· 3 Tbsp canola oil
· 2 Tbsp lemon juice
· 3 Tbsp pine nuts
Method of Preparation:
· Toss all the melons together in a bowl, and keep aside.
· Blend mix mint leaves, ginger, honey, salt, pepper, lemon juice, and half of pine nuts, in a blender.
· Add canola oil and mix well.
· Now drizzle this pesto over the melons.
· Garnish with the remaining pine nuts.
· Keep the salad in the fridge for some time, and serve cold.
Mango Curry
Mango is the king of fruits, so how can the summer recipe ideas not include mango? As India is known for its curry, let's delve into the tasty recipe for mango curry.
Ingredients:
· 450 ml mango pulp
· 3 tbsp gram flour
· 150 ml water
· 4 tbsp whipped curd
· 1/2 tsp ginger powder
· 2 green chillies
· 2 tsp ginger paste
· 1 tbsp oil
· 1 tsp cumin seeds
· 10-12 curry leaves
· 2 tsp grated jaggery
Method of Preparation:
· Start by straining the mango pulp.
· Then make a smooth paste of gram flour by adding water, gradually until you have no lumps left.
· Pour mango, curd, and flour paste into a pan.
· Pour in 300 ml water and add ginger powder.
· Grind chillies with ginger, and add to the mixture, in the pan.
· Cook the mixture until thick, for about fifteen minutes.
· In another pan, heat oil, and toss in cumin and curry leaves. Stir and fry for 6-7 seconds.
· Add the cooked oil paste to the mango mixture.
· Simmer for a good 10-15 minutes.
· Stir in the sugar and serve.
Mango Kulfi

· 1 can (400 gm) sweetened condensed milk
· 1/2 cup mango pulp

· Mix the condensed milk, cream, and mango pulp, in a bowl.
· Beat the mixture to blend it well.
· Add almonds and any other dry fruits and nuts of your choice to the mixture.
· Mix well and pour into molds.
· Freeze at the lowest possible temperature.
· Use a knife to let the frozen dessert out of the mold.
· Garnish with some nuts and vark leaves.
· Serve and enjoy.

Today’s world is making great strides to reduce or eliminate the stigma that is associated with mental illness, including depression. According to the National Sleep Foundation, feeling sad every now and then is a fundamental part of the human experience, especially during difficult or trying times. Solitary lifestyle – feelings of isolation are common among truck drivers. Long hours spent in your truck with little contact with other people can be depressing. Human contact is a basic need and you must make sure you are fulfilling it. One of the best things about the modern world is our ability to connect with those that matter most to us. Ways to help with this are having pets along for the ride, using messaging services, phone calls, facetime, skype, and social media. Eating habits – physical and mental health go hand in hand with food choices. The good news is that the people who ate a diet rich in fruits, vegetables and fish were less likely to report being depressed. So, cut back on less nutritious options and eat your way to mental well-being!
Family Issues – missing family time is one of the hardest things to deal with as a truck driver, and time at home can often seem short and rushed. There can be feelings of guilt from not being there, especially for big-life events. There can also be a strain on family relationships due to absences. The best way to help this is to be checking in with your partner regularly, to make sure you are agreeing on major family decisions and try to celebrate the big family events when you know you will be home.

That Favourite Kerala Style Vegetable Stew - Done . I made a smooth paste out of fresh coconut, roasted cumin powder, salt and green chillies. I pressure cooked all the cleaned & cut vegetables together in salted water along with asafoetida & turmeric powder. Once done, I removed the cooker's lid & added in the coconut paste & simmered. I tempered coconut oil with mustard seeds, curry leaves & dried red chillies and poured over the simmering vegetable stew & mixed well. I took it off the flame & once a bit cool, I folded in whipped yogurt. In my humble opinion, this dish is best eaten at room temperature with rice. I'm off rice, so I kept it a bit soupy. Usually Avial paste is much thicker. I ate it as is. Mangala on the other hand, smacked it up with freshly made rice. AVIAL Hi friends , this is a dish of vegetable sauteed in grated coconut. It is a very popular dish from the state of Kerala. Hope you like it ! Region - KERALA, India INGREDIENTS:- 0.2 KG Carrot 0.2 KG Runner beans 0.2 KG Raw banana 0.2 KG Drumstick 0.2 KG White pumpkin 0.15 KG Snake guard 0.03 KG Curry leaves 0.05 KG Turmeric powder 0.01 KG Salt 0.1 KG Coconut grated 0.05 KG Cumin 0.3 LT coconut oil 0.02 KG Green chillies 0.03 KG Garlic 0.1 KG Shallots 0.2 KG Curd METHOD:- 1.Cut all the vegetables in batons. 2.Boil the vegetables in the minimum quantity of water with turmeric powder, salt and curry leaves. 3.While boiling the vegetables, cover the pan with banana leaves. 4.Make a coarse paste of cumin, garlic, green chillies, shallots and grated coconut. 5.Add the paste to the boiled vegetables and cook well. 6.Finish the vegetables with coconut oil and curd.
