Classic apple cobbler flavors come together in a delicious way in these Apple Cobbler Cupcakes, which are topped with a rich and creamy Pumpkin Pie Frosting. Wonderful for fall parties or any time you want the cozy taste of apple and pumpkin spices.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1/2 cup unsalted butter, softened. 2 eggs. 1/2 cup milk. 1 tsp vanilla extract. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 cup peeled and diced apples. 1/2 cup chopped walnuts. 1/2 cup rolled oats. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp ground allspice. 1/4 tsp ground ginger. For Pumpkin Pie Frosting:. 1/2 cup canned pumpkin puree. 1/2 cup cream cheese, softened. 1/4 cup powdered sugar. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp ground allspice. 1/4 tsp ground ginger.
Instructions: Preheat your oven to 350F 175C. Line a muffin tin with cupcake liners. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and all the spices cinnamon, nutmeg, cloves, allspice, and ginger. Set aside. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry mixture. Mix until just combined. Fold in the diced apples, chopped walnuts, rolled oats, and any additional spices if desired. Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and allow them to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. While the cupcakes are cooling, prepare the Pumpkin Pie Frosting by beating together the canned pumpkin puree, softened cream cheese, powdered sugar, and spices until smooth and creamy. Once the cupcakes are completely cool, frost them with the Pumpkin Pie Frosting using a piping bag or a spatula. Instructions: Preheat your oven to 350F 175C and grease a mini muffin tin. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. In another bowl, whisk together the pumpkin puree, buttermilk, melted butter, egg, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Spoon the batter into the greased mini muffin tin, filling each cavity about 2/3 full. Bake in the preheated oven for 10-12 minutes or until a toothpick inserted into a muffin comes out clean. While the muffins are still warm, roll them in a mixture of 1/4 cup melted butter and 1/2 cup granulated sugar to coat. Let the coated muffins cool on a wire rack. Instructions: In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla extract, and beat until well combined. Slowly pour in the apple cider while mixing on low speed. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped apple. Cover the dough and refrigerate for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Scoop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
