Still yet to hear from either of the people I asked or any of the people I didn't how Hiccup is a Poet.

Conclusion: He isn't. This leaves the Poet to be Astrid (primarily uses weapons as weapons) or toothless (has no words to use as weapons. Is literally the King of the Dragons). As both of these are extremely unlikely options, I am left with the conclusion that we have a soldier-poet-king trio without a poet.

Is Dreamworks Hiccup in the habit of using words as his weapons? I have always seen him as someone who tries to lead by example, so his actions would be his primary weapon, not his words, right?
