Love that the Fontaine legal system runs on Ace Attorney logic (trials are ridiculously short and dramatic), and the in-universe justification is
they have a semi-sentient infallible machine that can declare the sentence automatically, so all the lawyer statments are mostly for show
Their ruler (who's also the god of justice and regularly attends trials) is kind of a dumbass and loves drama, so lawyers will deliberately play up their case so it's fun for her to watch.
