Future Focus: Connecting Opportunity Youth to Apprenticeship
Through our connections with local community-based organizations providing workforce readiness and soft skills training, we’re helping young adults not enrolled in school learn their very first job skills to take with them wherever they go. We do this through Restaurant Ready (RR), partnering with-community based organizations to provide justice-involved youth with skills training and job opportunities.
Similar to ProStart, we’re now connecting Restaurant Ready to Line Cook apprenticeship through the US DOL Youth Readiness Apprenticeship Grant, Restaurant Youth Registered Apprenticeship (RYRA). RR participants can now continue their career in restaurants and hospitality upon completing their Restaurant Ready curriculum to earn higher pay right away.
Delaware is one of the four pilot states connected to this work focused on young adults. The Delaware Restaurant Association (DRA) works closely with the Wilmington JobCorps Center to train young adults in Bethany Beach, Delaware. With a huge shortage of properly trained cooks, the program allows the DRA to grow their restaurant workforce directly through the state.
We spoke with Chef Joseph Rocchi, Culinary Director at the Wilmington Job Corps Center, and Raelynn Grogan, Director of Education, Delaware Restaurant Association Educational Foundation, to gain insights on how they think the program is making a positive impact.
How has apprenticeship proven to be a benefit for the workforce and restaurant businesses in Delaware?
Chef Rocchi: One of the major reasons for turnover in the hospitality field is conflict created on the job. Employees don't have defined standards for their job. This creates many issues not the least of which is quality of work and economy of time and supplies. Employees that have a clear expectation of what the job is, how it should be done, by when, and to what standard are happier, better organized, and thus more successful. This leads to a more successful operation in general.
Grogan: We know that the restaurant/foodservice industry in Delaware is hiring—and we need skilled workers to fill these crucial roles. The restaurant industry is an economic force – contributing over $2.5 billion in sales each year and being the single largest small business employer in the state. The Delaware Restaurant Association (DRA), and its philanthropic arm – the DRA Educational Foundation (DRAEF) exists to promote and sustain the industry… to provide training and workforce development for a host of populations, including Delaware’s youth (through our ProStart Program), and those that may be under/unemployed or struggling to gain experience and skills as they reenter society after justice involvement.
We’ve recently partnered with the Delaware Department of Labor (DDOL) on a registered Cook Apprenticeship Program, and soon-to-begin Pre-Apprenticeship & Restaurant Youth Registered Apprenticeship Programs in Delaware. The DRA manages hundreds of association members throughout the state, with active discussion and suggestions from our active Board of Directors on issues such as identifying industry needs, possible training opportunities, and education on employee retention and development. All of our association members (and Board members) are potential employers and possible partners for our continued educational and workforce development efforts, and we’ve demonstrated the successful convening of these employers with recent projects like our pilot Delaware Cook Apprenticeship Program (DECAP) with SoDel Concepts, and our HR Certificate Program with the University of Delaware (and multiple employers/students enrolled throughout the state).
Would you recommend apprenticeship to other businesses/youth-serving organizations, and if so, why?
Chef Rocchi: Absolutely! These certificates of apprenticeship give the successful recipient something tangible to show what skills that they have acquired when speaking to a potential employer or recruiter for higher education. This will set them far above other candidates.
Grogan: In recent years, the DRAEF has built upon the success of its current educational services, workforce development efforts and proven partnerships with other state agencies by expanding apprenticeship programs in Delaware. Apprenticeships are an employer-driven model that combines on-the-job learning with related classroom instruction to increase skill level and economic mobility. Apprenticeships are a proven solution for companies to recruit, train, and retain highly skilled workers, putting employees on a career path resulting in greater success and earning higher wages. Hospitality is a high-growth career industry with much potential for qualified workers, with pathways to move quickly through the ranks to supervisory and management positions. The hospitality industry is expected to grow by nearly 10% in the next 10 years -- adding nearly 5,000 jobs in Delaware alone (National Restaurant Association).
Can you speak specifically to how apprenticeship has changed the lives of young adults in Delaware for the better?
Chef Rocchi: For many years, there have only been a few Culinary certifications that hold any weight in the industry. And those certificates are not mandatory for most sectors of the industry in general… Of those available, they were only for the upper echelons of the industry, which, depending on your sector, can take anywhere from 5 to 15 years to achieve or more. These newly created apprenticeship certificates would fill a great void for the entry-level and beginning supervisory positions that are held by the vast majority of the workforce. Never again would you have to decipher through applications, ask numerous basic questions in an interview, and bring people in for numerous "trailing" shifts to gauge what skills an applicant has. You will now be able to see a tangible certificate of training and know 100% what skill set the applicant should have. This will save the business much needed time, energy, and money. This will also save the applicant the same as well as give them the opportunity to apply for higher positions because they can prove what skills, knowledge, and abilities they have been trained and tested on. This will give them a great advantage to further their career.
Grogan: Two of our four DECAP Pilot Apprentices have already been promoted to Sous Chef within the DECAP Program. 65% of all jobs now require a postsecondary credential or specialized training. In a Society of Human Resources Management poll, more than half of employers reported they were unable to recruit workers for open positions. According to the Bureau of Labor Statistics, middle skill jobs account for 51% of Delaware's labor market, but only 44% of the state's workforce are trained at a middle-skill level. Our best chance of preparing students for the jobs of the future is by addressing the skills gap and putting more underserved students on the pathway to career success and sustained economic mobility.

The 7 Things To Lose 220 Pounds Without Dieting
Back in 2001 I weighed more than 400 pounds. I tried every diet I could think of to lose weight. I even worked face to face with the late Dr. Atkins for two months, and after charging me thousands of dollars, the best he could do was yell at me for being so fat.
Every diet I tried ended up the same way. There would be a whole list of foods I wasn’t allowed to eat. I’d follow the diet to the letter. I’d lose a little weight through sheer brute force and willpower. Then there would come an inevitable point when I couldn’t take it anymore and I’d have a huge binge. Whatever weight I had lost on the diet would come back in a matter of days, and a week later I’d be 5 pounds heavier than when I started the diet. This pattern of losing 10 pounds and gaining 15 pounds started in 1990, until by September 2001 I reached my peak of 409 pounds.
Then I had turning point. On September 11, I narrowly missed being on UAL flight 93. That experience left me feeling like I was living on borrowed time. Here I was, killing myself working in a high-stress Wall Street job that I hated, and the universe had just given me a second chance.
So I decided to get off of the dieting roller coaster once and for all, and I resolved never to diet again. Instead I was going to try to figure out why my body seemed to be forcing me to gain so much weight. I decided to find out what I could do to get it to want to be thin again. Armed with a solid background in biochemistry from the University of Pennsylvania, I spent 12 hours a day researching everything I could about the hormones, enzymes, neurotransmitters and chemical massagers that cause weight gain.
I learned that losing weight sustainably isn’t about counting calories, but about creating the proper hormonal environment in your body that’s conducive to weight loss. Since stress and emotional issues can cause an unfavorable hormonal environment, the issue needs to be addressed from a mind-body perspective. We need to take a holistic approach that looks at our psychological and emotional life, as much as what and when we eat.
Over a two-and-half-year period I lost 220 pounds, without dieting. I’ve been the same weight now for over 10 years and I still don’t diet. I eat whatever I want, whenever I want.
These were the keys to my transformation:
1. I stopped dieting and started nourishing my body.
I learned through my research that my body was chronically starved for certain key nutrients, such as omega-3 fatty acids, live foods and high-quality proteins. I made sure I gave myself as much really high-quality nutrients as possible. If I wanted junk foods like candy, chips or pizza, I would eat them whenever I wanted, without hesitation. Eventually I lost my taste for all junk food as my body learned to prefer high-quality, nutrient-dense foods.
2. I healed my digestion.
I discovered that one of the reasons why I was so badly starving for nutrients is that my digestive processes were compromised, so I was unable to effectively extract the nutrients from the foods I was eating. Digestion problems can also cause inflammation and the inflammatory hormones put our bodies into fat storage mode. I started eating lots of fermented and cultured foods, and taking probiotics and digestive enzymes in order to normalize my digestion.
3. I got a CPAP machine for my sleep apnea.
Sleep apnea is a condition that affects many overweight people. It creates a hormonal environment in the body that encourages weight gain by causing elevated cortisol levels, which leads to junk food cravings and insulin resistance. Sleep apnea is easily treated with a CPAP machine. The machine blows air into your nose and mouth to keep your windpipe open, so you can sleep through the night without problems.
Most people who have sleep apnea don’t even know that they have it, although the people they live with would know, because people with sleep apnea snore very loudly. It turns out I had one of the worst cases of sleep apnea that my sleep study technicians had ever seen. From the moment I got the CPAP machine I started having more energy and less junk food cravings. And the weight started to melt away for good.
4. I started using mind-body practices to reduce stress.
Just like sleep apnea, stress causes elevated levels of cortisol and inflammatory hormones. These hormones lead to constant cravings and put your body into chronic fat storage mode. Many people don’t realize how important it is to learn how to reduce stress. I began meditating and visualizing every morning, which I found to be extremely effective for reducing stress.
5. I created a much more sustainable life.
I also lowered my expenses, moved to a more affordable house and started growing some of my own foods. My life felt much more sustainable and I felt calmer and more supported. I loved knowing that anytime I was hungry I could go into the back yard and eat something fresh and full of vitality. The stress hormones where no longer coursing through my system, wreaking havoc and turning my body into a fat storage machine.
6. I worked through some important emotional issues.
Some people feel safer with extra weight on their body. It’s as if the body actually uses weight as a buffer from the world. I was in that situation and I knew I had to address the emotional issues that were making my body feel unsafe. I started doing visualization practices that helped to resolve past traumas and to get my body to feel safer in letting go of the weight.
Over the years I’ve found that 65-70% of the clients I work with are using weight as a form of protection. I call this “emotional obesity”. When you work through the issues that are causing emotional obesity and break the association that fat equals safe, the body is much more willing to let go of the weight. After I broke this association and the weight no longer served its purpose – that is, the armor of fat no longer made me feel any safer – the weight all but went away.
7. I detoxified my body.
After I had lost about 180 pounds I started doing a lot of research about toxins and how the body processes and deals with toxic chemicals. It turns out the body uses fat cells to store excess toxins. I realized that the last 40 excess pounds that my body was holding onto was because it was a storehouse for accumulated toxins. I started living what I call a “detoxifying lifestyle”. Basically, I started flushing my body with lots of alkaline liquids, like water with lemon juice or apple cider vinegar, green juices, super greens and lots of salads and sprouts. That did the trick, because I lost the last 40 pounds much more quickly than I lost the first 40 pounds, so the rate of my weight loss continued to accelerate to the very end.
Taking a mind body approach that nourishes the body and reduces the physical, mental and emotional stresses that cause weight gain is the most sensible and sustainable way to lose weight. I’ve now worked with tens of thousands of people in 60 countries teaching this approach and we’re getting amazing results.

Whether it be in her work or in personal life, Hyeji will never give up until she has done all that she can. Even if you tell her she can’t, she will insist that she can and prove you wrong. Though this has sometimes gotten her in a bit of trouble with the senior stylists, her perseverance has always resulted in some of her best work.
Weaknesses: (-) Indecisiveness. It is easy for Hyeji to make decisions when it comes to her career as a stylist for idols. However, the same quality does not seem to quite transfer over to Hyeji’s personal life. It is difficult for her to make her own decisions on some of the simplest things, resulting in her close friends being quite frustrated with her when she texts them randomly for help choosing between this or that. (-) Perfectionist. Hyeji always wants to help people as much as possible, and with this comes her desire to give the best to her clients. Because she spends so much time trying to perfect her ideas for her clients’ looks, this sometimes results in too much work piled up for her. PERSONAL HISTORY
Age 1. To celebrate Hyeji’s first birthday, her parents set up the table for Doljabi. In this Korean tradition, parents put various objects on a table that reflect the child’s life in the future. Her parents put up the traditional items of string, calligraphy brush, money, and more. However, when the time came, Hyeji did not choose any of the objects on the table. She took a tuft of her father’s hair with her left hand, and a loose strand of her mother’s hair with her right hand. Before the two could understand what was going on– Yank. With her two small hands, she pulled down on her parents’ hair. There was a moment of silence, before her grandma laughed heartily. “Looks like she’s destined to take over the family salon,” she said with a smile.
Age 14. Starting from middle school, Hyeji had begun to help out at her family’s salon whenever she had free time. She wasn’t forced to do it at all—in fact, she really enjoyed her work. She was able to balance this “part-time work” with her schoolwork, maintaining her place in the top 15 students in her class. Though she was young, she often had long conversations with the customers as she did her thing—the elders loved her the most. “Hyeji-ah, you really have a talent. When you’re older, you can catapult this small family business into a salon chain!” many customers have said. Her parents were extremely proud of her, and thus began their goal of having Hyeji take over the family business.
Age 16. Hyeji was just working as usual in the salon when her customer gave her a card. Before she could ask what it was for, the customer had already paid and left. She looked down at it—“XXX COMPANY, Talent Agency Scout.” At the bottom of the card was a scribbled note, “We are planning to debut a girl group within the next few years. Please attend our audition.” She was utterly confused, but mostly in disbelief. Her? An idol? She wasn’t sure if she could do it, but in that moment she thought that she really wanted to do this. She was young and had no idea what she was doing. But her parents still accepted this, not wanting to restrict her. After all, what were the odds that their Hyeji would really make it as an idol?
Age 18. After that one fateful day 2 years ago, Hyeji was now about to debut in the girl group XXX after 2 years of training. She was excited, but scared at the same time. Was this all worth it? Would her hard work pay off? She took a deep breath as she, along with the 5 other girls, stood backstage on stand-by. It was their time to shine.
Age 19. Hyeji opened what seemed to be her third bag of potato chips as she sat on the beat-down couch that stood at the center of the small dorm’s living room. If she had become so famous, why would she have enough free time to binge eat junk food? Well, the truth is, she wasn’t famous at all. In their debut year of 2012, almost 40 girl groups made their debut. Of this large number, only a handful managed to make it out alive and succeed. Hyeji’s group was not one of them. She was now out of work and had no recognition. She resorted to eating her troubles away.
After the company finally got enough money, Hyeji’s group made their comeback to an unwelcoming audience. The comeback was low-budget, and they were unable to get their name up there. The only publicity they ever got was when they were ridiculed by netizens on the Internet for their lack of success. Even so, they were at such an epitome of “nugu” status that they didn’t even have that many antis. He still remembers holding the young turtle in his arms as he wept for the loss of his parents that night when they returned home to Republic City.
It was only a handful of months before Splinter found himself with yet another son; another turtle to his amusement. Michelangelo may not have been the Shredder’s target but he was still a victim of his nonetheless as Shredder’s attack on Republic City, in an effort to lure Splinter to his doom, led to much destruction that brought about the car accident that claimed the lives of Mikey’s parents. The fight ended quickly as Splinter used his own Bending to counter and offered to instead buy him a meal that they could talk over instead of fighting. Raphael told him about how in light of his mutation his father had attacked him and cast him from their home. Splinter felt sorry for the young Firebender and offered him a home. Though hesitant to trust him, Raphael agreed and was greeted by his three new brothers when they arrived at the Avatar’s Temple.

His form and technique were both sloppy to say the least. Two years into his training and still no improvement.
“Again,” Splinter said with a sigh as Raphael failed in performing a basic Firebending technique once more.
Raph took a deep breath.
“Just relax and remember why you’re doing this,” the turtle whispered to himself as he drew in another breath only for his focus to be completely disrupted by Mikey bursting in with loud enthusiasm.
“MIKEY!”
The Airbender just ignored him and flew past on an air scooter before coming to a stop.
“Guys, guys, guys! Check this out!” Mikey exclaimed as he pulled out a poster for a Pro-Bending match that was being held downtown.
“It’s Pro-Bending. So? What’s so great about it?” Raph questioned with irritation at Mikey’s exuberance as they were joined by Leo and Donnie.

“I don’t know Mikey, I’ve still got a lot of work I need to do on my latest inven-” Donnie said before being interrupted by the sound of an explosion coming from his lab.

“Pass,” Raph said before turning to leave.
