Mango Discourse
It’s one am - time to rage about mangos. (Stay tuned for the exciting sequel, Avocado Aficionado)
To preface this essay, every vegetable and fruit we find in supermarkets is just one of a wide variety of cultivars. My US people probably know all the different kinds of apples and how different they can taste (Well. Not me personally. I’m not an apple fan.) Each different kind of apple is a cultivar, and each cultivar has a specific taste, appearance and growing needs.

Tommy Atikins is the cultivar that I consider the US’s ‘default’ mango. It’s the large, honey-fleshed red and green one prominent in commercials. It’s the aesthetic mango. You see it on mango-flavored candy, tropical fruit juice blends, etc. 
These things are nasty. I hate them. They’re boringly off-sweet with an unpleasant soft, slimy texture. I lived my life convinced that something was wrong with me. Everyone loves mangos, but I’m sitting there with my disappointing fruit personification of La Croix like ???
In high school, my roommate introduced me to what she called “Indian mangos.” Every time her mother went to visit family in India, she’d have a crate of them shipped over to our dorm. These are what I expected from the mango hype. These are the ultimate mango, and they are the Ataulfo cultivar. 
Ataulfo mangos are smaller, bright yellow-orange when ripe, tart and firm. They have a satisfying ‘buttery’ texture, in Wikipedia’s words, and a thick skin that’s easy to peel. When they’re in season I buy 7 or so at a time, leave two on the counter and freeze the rest. They make delicious popsicles just as whole fruit. Imagine an angry strawberry or kiwi. It’s that kind of tart. The flesh is very fragrant and has a filling, satisfying flavor. While there might be a lot less Ataulfo flesh, it’s easily two or three times as flavorful as the Tommy Atkins cultivar. The flesh gets more fibrous the closer you get to the seed and I personally enjoy the texture. They’re also a Mexican cultivar, not Indian, but I’m sure they’re common where my roommate’s family lives. 
Anyway Tommy Atkins is trash, Ataulfo all the way. Please give my yellow mangos some love so more stores start stocking them instead of the sad, watery kind.
