NCT Dream Is All Grown Up and Ready to Show What They Can Do
On a warm, late summer evening of 2016 in Seoul, South Korea, seven boys hoverboarded right into the most defining experience of their youth. Mark, Renjun, Jeno, Haechan, Jaemin, Chenle, and Jisung, then aged 17 to 14 years old, were making their debut as NCT Dream — a subunit focused on the youngest forces of SM Entertainment’s mega-group NCT. Their first title track, “Chewing Gum,” was as bubbly as its name, with choreography that required nimble maneuvers on the two-wheeled vehicle.
Fast forward nearly five years, and the Dreamies — as they are commonly known — are ready to cross another major threshold in their lives. Their highly-anticipated, 1.7 million-seller first studio album, Hot Sauce, is out today (May 10).
A few days before that, the members huddled together for a conversation with Teen Vogue via Zoom. Clad in black hoodies, face masks, and a few bucket hats, the initial impression is a striking contrast to the vivid atmosphere of their bright, cartoonish teasers for this promo cycle. Rather, this is NCT Dream in the blue hour, right at that moment of transition between the haze of preparations and the awakened reality of their most prominent comeback so far.
“We haven’t even started the actual promotions yet, but just from receiving this much love and support from our fans, we feel very touched, very, very inspired and supported,” says leader and eldest member Mark. Today, he’s wearing a pair of round glasses that complement his laidback, chill nature, while his expressive hands ruffle through his ocean blue hair, settling across his chest in an embrace. “We’re just focusing on how we can return the love that we received from them through our music.”
To say NCT Dream have grown — in all competencies — is not only obvious, but a meager understatement. Through their four EPs, the hoverboards became cardboard cars, then bikes, then motorcycles. Voices deepened, limbs grew longer, jawlines became sharper. And with all that, a number of accolades and records followed. Hot Sauce is currently the best-selling album among all releases from SM Entertainment. And out of all four current NCT units, the Dreamies were the first to receive a music show win, for 2017’s single “My First and Last,” and the first no. 1 on Korea’s largest music chart, Melon, with 2020’s “Ridin.” They received numerous prizes in Korean award shows, collaborated with English singer HRVY, released a single with American boy band Prettymuch, and also became global ambassadors of the World Scout Foundation in 2019 (an experience that culminated in viral mosh pits during the 24th World Scout Jamboree in West Virginia).
“When we debuted as teens, a lot of our music was very bright and cheerful, and that went with our age,” says the lavender-haired Jisung, who is the youngest of the group at 19. Although they are still the same endearing rascals off stage — the most chaotic footvolley game ever comes to mind — they have now “transitioned through all these phases, and with each of them we were able to show a higher level of maturity,” he adds.
In that way, Hot Sauce is their most seasoned effort yet. “We wanted to show NCT Dream’s charms through this ‘hot sauce’ vibe,” says the suave Jaemin, whose attentive eyes remain locked on the screen for most of the interview. “We have a showcase coming up where we plan to show a lot of our b-side tracks for the fans, so we’re very excited for that.” According to Haechan, the resident ray-of-sunshine of the group and owner of one of the most unique vocal colors of K-pop, they prepared a long time for this moment, and want to “show off that spicy side.”
Show off might be the best word choice indeed, as NCT Dream has dabbled with fire plenty of times before in their discography. Think of the rubbery, sticky synths of 2018’s “Drippin’” and its lyrics about a soaking wet love, or the dangerous atmosphere in 2019’s “119,” where they call themselves “twisted” and say “I like it like that.” In Hot Sauce, what was once un condimento is now a full course meal.
The album stimulates the eyes through the psychedelic TV ad-meets-taquería of the “Hot Sauce” music video, the nostalgic ‘90s photography of the teasers, the zany illustrations of the album packaging. For the ears, a 10-track collection of scorching pop with Latin and Afrobeat-inspired sounds (“Hot Sauce,” “Rocket”) and trap and hip hop — “Diggity”, “Countdown (3, 2, 1)”, “ANL” — but also soothing balms like the soft rock of “Dive Into You” and the crystalline vocals of “Rainbow,” a track co-written by Mark, Jeno, Jaemin, and Jisung, where they express “words we want to tell our fans,” according to Shanghai-born star Chenle.
That is because the Dreamies have a special reverence for Dreamzens, their fans. If it wasn’t for their support, the group’s fate could look much different now. Although it might seem counterintuitive in hindsight, the original concept for NCT Dream was to be a rotational unit. Members would “graduate” once they reached 20 years old in Korea (19 internationally), and younger, fresher faces would be added to the ensemble. It can be said that NCT Dream embodied the core concept of NCT as a whole: they held the promise of youth, its shifting nature, and the willingness to dream. But to come of age on screen and experience such foundational moments of life together begets a lingering bond — a transformation that can’t be nullified so easily.
In December 2018, Mark was the first to leave — and the last.
Dreamzens knew how special the original lineup (dubbed 7DREAM until today) was, and stood by his return and the establishment of a fixed unit. In 2020, they rejoiced as SM Entertainment finally decided to scrap the graduation concept altogether and announce Mark’s return. Hot Sauce is their first comeback since this news. “When I heard that I was coming back, I realized how big of an opportunity this could be,” says Mark. “And not only that, but to be able to be part of our first full-length album, I felt like I was lucking [out]. It all comes with the timing and everything, so, from all angles, I felt like the world helped out on this, and that our fans helped out a lot too.”
The members are thankful for his return, too. “I like the members the most!” exclaims Chenle when asked about his favorite part of the comeback. At one point in the conversation, Haechan grabs Mark’s hand and dramatically declares, in English: “Mark, you are very special. NCT Dream means Mark.” He looks at the screen to make sure this moment is being registered. Flustered, Mark quickly pulls away and laughs it off as Jisung chimes in. “All the members have their own uniqueness, their own specialties, that’s the charm of NCT Dream.”
Soft-spoken Renjun, whose half-platinum, half-black locks are hidden underneath a beige cap, explains that he and his bandmates didn’t think much about the impending graduation when they debuted. “Especially because it was the [original] system for NCT groups, we just accepted that fact,” Renjun says. “But now that NCT Dream is fixed, there’s a lot of enthusiasm to come up with new concepts and ideas, and we’re very excited to show them.”
Jeno, whose sweet-eyed smile contrasts with his commanding rap and dance skills, says that they went through a lot of lessons and experiences since debut, but that the greatest one was “learning what we’re able to do and show in our stages, and through that, finding ways to connect with our fans and make sure they enjoy it.” After all, as Chenle adds, NCT Dream means “being able to dream the same dreams with our members and our fans.”
For now, they are ready to bask in the flavorful glory of this era, and all the outcomes it will bring. “One of our goals when we debuted was to bring happiness and healing to people’s lives, and we do feel like we were able to achieve that,” says Renjun.
“Our fans witnessed it all from the start. We grew together, so now it’s time to show what it is like with NCT Dream being adults,” adds Mark. “We can be a perfect example of what growth and development look like.”

A tangled tale of men who grew flowers.
J. H. Harvey, florist, of 5 West Broad street, has his greenhouses at Barton Heights, a suburb of the city. They cover three or four acres of ground there. He has 60,000 square feet under glass. The greenhouses are heated with hot water. There is a bored well for the water supply of the place, two steam pumps and a wind-mill, hydrants and water-plugs throughout, and the equipment of the place is unquestionably as fine as anything of the kind in the South, and certainly the most extensive here.

The specialty of this establishment is the trade in cut flowers and ornamental plants. These are shipped by it to all parts of the State. The gardens were established in 1870, and three generations of the Harvey family were interested in them. They were founded by the grandfather of the present proprietor. [CHRV]
A little confusing that, since J. H. Harvey’s grandfather was James Harvey, and he died in 1857 (Find A Grave). Perhaps he was responsible for the family’s interest in the flower business, but what became known as Magnolia Nursery was the province of James’s son, Levenous James Harvey.

He had been in the same line in New Jersey before he came to this city. Mr. J. H. Harvey, the present proprietor, is a young man, but one of enterprise and sterling business character. He is a member of the Chamber of Commerce, and as such is a participant in all the projects set on foot by it to further the interests of the city.
His down-town office and sales-rooms, on Broad street, are in the heart of the city and on the principal business street, easily accessible from all quarters of Richmond. [CHRV]

Sadly, the original 5 West Broad Street store no longer exists, having been replaced in 1924 with the present building, architected by Hunt and Amrhein. [AOR] It was also the Harvey family’s 2nd store on Broad Street, after moving a few doors east from 11 West Broad Street when the company was run by J. H.’s brother, Jacob Jones Harvey.

By 1877 Magnolia Nursery was a well-developed enterprise, consuming a considerable piece of land in North Side along Brook Avenue. This of course was back inna day before Lewis Ginter gobbled up the dirt that would eventually become Bellevue, Sherwood and Ginter Parks, and before Brook Avenue would be demoted to the rank of Road. Chamberlayne Avenue would be the new front porch to the north, at least until 95 was built.
J. J Harvey had at this point taken over the family business from L. J. Harvey, who seems to have been stricken with wanderlust in his autumn years. He died a considerable distance from Richmond in 1880 in Fond du Lac, Wisconsin. (Find A Grave)

Today, the former greenhouse grounds is Hovey Field, home to the Virginia Union University Panthers.
The funny thing is that A City on the James describes J. H. Harvey & Co. as having greenhouses in Barton Heights, which is not quite where Magnolia Nursery was located.

James H. Barton was a real estate speculator, who in 1890 found success crossing a small residential community with a new streetcar line that connected the area north of Richmond with the city. The allure of suburban living found an audience, among them the J. H. and J. J. Harvey families, and it became the Town of Barton Heights in 1896.
The 1894 Barton Heights Directory lists the Harvey’s were living at 301 North Barton Avenue. It would have been their second at that location. [BHD]

Just two years prior, disaster had struck.
The handsome residence at Barton Heights of Mr. J. H. Harvey, the florist, was totally destroyed by fire last night.
Mr. Harvey was at his brother-in-law’s, across the street, engaged in a game of dominos, and happening to glance at one of the windows he discovered flames bursting from the front of his house. When he reached it the hall was a roaring furnace, and it was with difficulty he rescued his children, one of whom was asleep, from the building. There was a large tank of water on the premises, but this proved practically of no use.
When news of the fire reached Chief Puller he sent over Truck No. 3, and would have sent a steamer also, but could not learn whether there was an available water supply. The truck men did splendid service, and it is due to them that the flames did not communicate to Mr. Harvey’s stables and green-houses. [RD11061892]

Apparently the Harvey’s need for greenhouse space was such that they were needed on-hand at their home. However, this was smack in the middle of a residential neighborhood, so it’s hard to imagine it as substantial as the operation off Brook Avenue, itself far removed from Barton Heights. Google Maps calls the distance between the house and main nursery at 1.3 miles—not exactly in the neighborhood.

Like any good success story, Barton Heights ignited the acquisitive fires of its larger neighbor to the south, and it was annexed by the City of RVA in 1914. (”Manchester today! Tomorrow... Barton Heights!)
Changes followed. The former Kersting Street was renamed to Graham, and the houses were renumbered to fit the city’s scheme. Today, the former 301 North Barton Avenue is now 2401 Barton Avenue, and the residence that used to sit on the corner is gone.

As for Magnolia Nursery, by 1896 J. H. Harvey & Co. company was winding down. The Richmond Dispatch reported its dissolution by mutual consent, and later a Deed of Assignment for all of the Harvey properties. [RD04091896] [RD04181896] The former nursery was eventually acquired by Virginia Union University in 1907 for their athletic grounds.

The location of Harvey’s other principal property, Reservoir Branch, is more difficult to pin down. It was it was identified as being “west of the reservoir beyond Richmond's suburbs”, which places it in the general vicinity where two cemeteries exist today. [HCO]

The reservoir in question was Marshall Reservoir, constructed in the early 1800′s, and which was located just southwest of Hollywood Cemetery. It stood near the intersection of two streets, Ashland and Reservoir, since renamed Colorado and Harrison respectively.

The 1877 Beers map shows the area west of Reservoir to be undeveloped, with no sign of any property assigned to J. H. Harvey. Twelve years later, the 1889 Baist map shows the addition of Riverview (1887) and Mt. Calvary (1885) Cemeteries, along with a burgeoning neighborhood to the west, yet still no trace of Harvey’s farm.

On face, it seems reasonable to think that the farm existed on or near the present-day cemeteries, since it was named for a nearby landmark capable of providing the necessary water for a nurseryman, and accessible by a city road of the same name.
Unfortunately, while available maps depict the Harvie name, the Harvey name is absent. Add to that the fact that those cemeteries predate the publication of A City on the James, which depicted the photograph of said farm, makes it hard to place a pin down.

Correction
The first version of this post speculated that J. H. Harvey’s competitor W. A. Hammond, who had his own greenhouse operation east of Brook Avenue at Sherwood, may have had a connection to the Harvey properties. This misguided notion was corrected by the discovery of the Barton Heights Directory and Barton Heights pamphlet. It seems more probable that North Side had great land for growing flowers, just ask Lewis Ginter.

NYC Beer Week's biggest event gets bigger

A little less than three years ago, the NYC Brewers Guild hosted a party to kick off NYC Beer Week that pulled out all the stops: a sold-out event where a bevy of New York City breweries, New York State breweries, and their out-of-state friends all joined together to pour a plethora of amazing beer. For the third year, the Opening Bash returns -- this time, with a second session to quench the thirsty masses.
This year’s Opening Bash will be held Saturday, February 23rd, returning to the Brooklyn Expo Center in Greenpoint. In addition to featuring nearly every brewery from across the city, a whole bunch of brewers from outside the city and state will be there to pour beer. There’s also a food court, music, games, and more things to keep you entertained between sips. The two sessions will run 12:30-3:30pm and 6:30-9:30pm, with VIP hours starting an hour earlier. VIP tickets also include a four-pack of cans of the annual NYC Beer Week collaboration beer.

Up for your collecting pleasure is a very lovely vintage 7.78 inch clear glass 24 oz Colonial Pheasant Martini or Cocktail Pitcher with no handle, especially made for Princess House Glass in the 1970s by West Virginia Glass Specialty. This piece has a nice 22k gold ring with a pheasant game bird decal. The pattern was called Colonial Pheasant and now has been discontinued.
CONDITION: This piece comes to you in excellent vintage condition with a pheasant game birds decal. It also has a nice 22k gold band around the top portion of the pitcher in also great condition. Approx 45 years old or older. This piece was hardly used.

Next, feel the card to determine how simply you'll be able to bend it, since a real I.D.

Several trucking and logistics companies are collectively owed hundreds of thousands of dollars after a 101-year-old specialty glass fabricator and its subsidiaries ceased operations and filed Chapter 7 bankruptcy in mid-July.
The managing entity, Consolidated Glass Holdings Inc., lists the assets for all of the companies as between $100,000 and $500,000 and its liabilities as between $50 million and $100 million. After administrative fees are paid, no funds will be available for unsecured creditors of CGH and its subsidiaries, Neil Minihane, chief restructuring officer for CGH, stated in bankruptcy filings.
CGH and its affiliates were acquired by CGH CAM Holdings, which included members of CGH’s senior management team, and investment firm Czech Asset Management LP and its affiliates, in June 2020.
According to the bankruptcy filings for CGH and its subsidiaries, SJC Onshore Direct Lending Fund III-4, managed by Czech Asset Management, is listed as the only secured creditor and claims it is owed more than $85 million.

In its petition, Pennsylvania-based J.E Berkowitz (JEB) has up to 999 creditors. The former family-owned company, which was founded in 1920, sold its shares to CGH, the investment arm of private equity firm Grey Mountain Partners, in 2016, prior to the 2020 acquisition by CGH senior management and Czech Asset Management.
Among the glass fabricator’s top 20 unsecured creditors are several trucking and logistics companies, including R & R Express Inc. of Cleveland, owed more than $62,000; Epes Logistics Services of Greensboro, North Carolina, owed nearly $25,000; and Xpedite Services of Sapulpa, Ohio, owed nearly $11,000.
Other unsecured creditors include three leasing companies: Miller Truck Leasing of Lumberton, New Jersey, owed nearly $750,200; Penske Truck Leasing of Philadelphia, owed nearly $23,000; and Nets Trailer Leasing of NJ, headquartered in Burlington, New Jersey, owed about $9,500.

Eight months after CGH changed ownership, the company announced it was furloughing approximately 200 employees at JEB, headquartered in Pedricktown, New Jersey, in February.
In a statement, CGH officials stated that delays and disruptions to its workforce due to the COVID-19 global pandemic took a significant toll, forcing the company “to suspend manufacturing operations at JEB.”

Also in February, CGH announced it was “winding down operations” at its subsidiary, Columbia Commercial Building Products, in Rockwall, Texas.

Among its list of 83 unsecured creditors are Bedrock Logistics of Dallas, owed nearly $54,000; Wright Express Fleet Services of Carol Stream, Illinois, owed more than $16,000; and Estes Freight Lines of Richmond, Virginia, owed nearly $7,400.
Shaw Glass Holdings
In its Chapter 7 petition, Shaw Glass Holdings, doing business as Solar Seal Massachusetts, states that it has more than 850 unsecured creditors. Among the top 20 are several trucking and logistics firms, including Nationwide Logistics of Cincinnati, owed more than $13,150; Combined Transport of Central Point, Oregon, owed nearly $13,000; and Epes Logistics Service of Greensboro, owed nearly $5,800.
The company also lists such large carriers as ABF Freight Systems of West Bridgewater, Massachusetts, FedEx Freight of Pittsburgh and UPS Supply Chain Solutions of Chicago among its unsecured creditors. However, the amounts were not included in its bankruptcy filings.
Former employees file suit, alleging WARN Act violations
In late March, former employees filed a proposed class-action lawsuit against JEB, Consolidated Glass Holdings and Czech Asset Management. The complaint states that the companies failed to provide workers at their Pedricktown glassmaking facility with its more than 100 full-time employees with at least 60 days’ notice of a pending closure as required proper by the federal Worker Adjustment and Retraining Notification (WARN) Act and New Jersey’s Millville Dallas Airmotive Plant Job Loss Notification Act.
Former JEB employees stated they were at first furloughed in early February and permanently lost their jobs a little over a month later.
A creditors’ meeting for CGH and its subsidiaries is scheduled for Thursday in Wilmington, Delaware.

One of the largest makers of handmade glass ware in the United States, The Fostoria Glass Company dates back to December 15, 1887 in Fostoria, Ohio. Four years later they moved their pressed glass factory to Moundsville, West Virginia. By 1925 the company expanded to five furnaces and a number of specialty shops. Fostoria remained in Moundsville until closing nearly a century later in l986.
Fostoria is best known for high quality tableware and stemware including clear, colored, etched, gilded, lustered, and pressed items. In 1915, the company began producing their American Pattern tableware -- probably the most popular pattern ever produced. In 1924, they were the first glass manufacturer to start a national advertising campaign. In addition to producing fine lamps and blown, etched and pressed glassware, Fostoria also produced a wide variety of fine glass animals and figurines.
In the years between World War I and World War II, Fostoria, along with other glass manufacturers (Heisey, Cambridge and New Martinsville) created a number of glass animals and bookends for the decorative accessories market, in response to the growing craze for glass animals.

International Sake Producers Face Challenges and Opportunities
Of all the great things that are available to drink nowadays, few are limited by geography. Craft IPAs and breakfast stouts currently appear in just about every corner of the globe, while surprisingly successful new wine regions keep sprouting up in places like India, China, and England. However, you can’t say the same thing for at least one beverage: Outside of Japan, rice-based sake faces real challenges, both in terms of production and consumer acceptance — though sometimes those challenges offer unexpected upsides.
“What I tell people when I try to explain what sake is all about, I tell them that it is the worst of all worlds,” says Tim Klatt, a co-founder of Texas Saké in Austin. “In the U.S., I think sake has a bit of an identity crisis. At the federal level we’re licensed like a brewery, at the state level we’re licensed as a winery, and people think that we’re some kind of distilled spirit. No one knows what to do with sake.”
And yet around the globe, a new generation of sake brewers — and drinkers — is enjoying a small resurgence of the traditional Japanese rice drink. In the U.K., Dojima Sake Brewery started production at historic Fordham Abbey near Cambridge in 2018. In France, sake production at Les Larmes du Levant began in mid-2017. In Berlin, Go Sake started importing its own sake from Japan in 2017. At just six years of age, San Francisco’s Sequoia Sake ranks as an elder statesman in the new-school sake crowd.
Despite growing interest, sake’s challenges start with a lack of awareness among consumers about what sake is, a fermented rice beverage that traditionally contains about 15 percent alcohol.

At the specialty shop Sake Kontor in Berlin, owner Susanne Rost-Aoki says she has been working on consumer education since she started importing sake from Japan back in 2004. “The majority in Germany does not know much about sake. The average [person] thinks it is a [distilled] spirit and that it has to be drunk hot from a small glass,” Rost-Aoki says. “And many people in Germany do not know that it is from Japan — they just think it is somehow ‘from Asia.’” Knowledge about the drink seems to have increased substantially in the last five years or so, she notes.
While consumer awareness has limited the appreciation for sake in the West, production outside Japan faces its own set of hardships. Not just any rice is suitable for sake brewing. Sake rice is generally much larger in size than regular rice, with less protein and fewer lipids than the common cooking cultivars. Additionally, it is usually polished to a very high degree. For many new-school sake producers, that might mean shipping their main ingredient from thousands of miles away.
“Sake producers in Europe need to import sake rice from Japan,” Rost-Aoki says. “There is no adequate quality rice in Europe for sake purposes. And rice that is imported from Japan is very expensive.”
In addition to the proper rice, sake producers in the West can’t easily find the vats and presses they need. “In terms of production challenges, we don’t have really great access to all the professional sake brewing equipment,” says Texas Saké’s Klatt. “All of that is produced in Japan, with zero English-language brochures or information. It’s very expensive. There’s a pretty significant barrier to sourcing sake equipment.”
While the lack of a sake tradition in the U.S. and Europe can make production difficult, that reality can free up brewers to experiment, allowing them to create drinks of atypical strength and flavor. In 2018, Oregon’s Saké One starting offering Moonstone, a junmai (or “pure rice”) sake infused with natural flavors, including cucumber-mint, Asian pear, and coconut-lemongrass versions. In Virginia, North American Sake Brewery is producing jalapeño-mango and lemon-mint sakes.

At Texas Saké, oak-aged sake of 14 percent alcohol shares the stage with carbonated, fruit-flavored sakes, which have the strength of a typical craft beer. “People would come into our taproom and just kinda get wasted,” Klatt explains. “It’s high-grade stuff and you don’t realize how quickly it’s going down. So I went to our brewmaster and asked him to get me something that’s 6 percent and fruit-infused, so people aren’t just going to get sloshed on it. It comes right off the draft wall. It’s sparkling. People love it.”
A bubbly, blood-orange-infused junmai might sound like a horror story to drinkers who prefer the elegant, even austere flavors of a traditional sake. However, those unorthodox combinations seem to be working. This month, Texas Saké is opening a large new taproom in Austin, with Klatt noting that the brewery hopes to quadruple its production from its current level of around 4,000 cases per year.
“When we took over the sake company in 2014, I told my brother and my business partner, ‘Someday sake is going to have its day, and we’re going to be in a great position,’” Klatt says. “I think 2020 is going to be awesome.”

In particular, fans of noodles should seek out the satisfying cheap eats at King Noodle, the lunch-, weekday-, cash-only favorite Thai Curry Simple, or the obscure ramen deal at Tsukushinbo, only available Fridays for lunch. Dip dumplings in soup at Mike's Noodle House, try spicy wontons at Gourmet Noodle Bowl, or admire the unusually-long pan-fried potstickers at Szechuan Noodle Bowl. Ballard:
Once a rough-and-tumble fishing village, Ballard has changed a lot since it was annexed into Seattle city limits in 1907. The neighborhood — mapped out for your dining convenience here — straddles the line between modern development and the preservation of its early history, a sort of lens into what's playing out across the city as a whole. There's plenty worth eating here, including upscale newcomer Copine, which focuses on elegant French preparations of Northwest ingredients; seafood-focused oyster bar the Walrus and the Carpenter; wood-fired pizza perfectionist Delancey; and Caribbean sandwich restaurant Un Bien. Not hungry yet? Work up an appetite while watching the salmon run in the fish ladder at the Ballard Locks. Ballard's year-round Sunday farmers market is a treat, too.

Seattle Hot Dog:
It's a hot dog or sausage slathered in — wait for it — cream cheese and grilled onions. No one knows quite why. Verdict: surprisingly good. Sorry, Philadelphia, you missed out big time on this innovation. Want to try the most extravagant version in the city? It's Renee Erickson's salmon roe-coated homage at dramatic bar Deep Diveunderneath the Amazon Spheres.
Geoduck:
Pronounced "gooey duck," this is an enormous, coveted clam that shocks newcomers with its phallic appearance. Take a deep dive on this bizarre, beloved Pacific Northwest native, and look out for it at places like Lark, How to Cook a Wolf, and Sushi Kashiba.
Teriyaki:
This sticky-sweet Japanese-American dish is a Seattle specialty, popularized by Toshihiro Kasahara at Toshi's Teriyaki Restaurant in the 1970s. You can still find Kasahara north of the city at Toshi's Teriyaki Grill (16212 Bothell Everett Hwy, Mill Creek); you can do your laundry while pairing doughnuts and teriyaki at King Donuts and Teriyaki and Laundromat, which closed briefly before being reopened by new owners; or you can devour a teriyaki chicken burger at one of Katsu Burger's growing number of fusion joints.
Starbucks:
Just kidding — sorta. Sure, you know the mega-chain got its start in Seattle, and you probably don't need to check out Starbucks' faux-riginal location in Pike Place Market (the true original was nearby at the corner of Western and Virginia). But do check out the company's sexy, modern, copper-plated Reserve Roastery and Tasting Room on Capitol Hill (1124 Pike Street), where fresh specialty beans are piped directly to baristas serving a variety of intriguing concoctions, with or without syrups and whipped creams. The space is even home to a full bar, and a high-end Italian bakery called Princi has taken up residence to ply customers with flaky cornetti and other breads and pastries baked fresh all day, every day. It's certainly impressive.
Canlis:

Old-school yet relevant, Canlis is Seattle's classic white-tablecloth, fine-dining, dress-code restaurant. It's still owned and operated by the Canlis family, and it's still setting the benchmark for quality and service in the city. One of the only permanent menu fixtures, the Canlis salad, is an icon; the rest of the menu rotates, showcasing local ingredients tinged with Asian flavors, a mark of the powerful influence that immigrants have had on the region's cuisine.
Renee Erickson:
A recent James Beard Award-winner, this chef channels rustic European country cooking by way of seasonal Pacific Northwest ingredients in her bright, airy, elegant spaces. She runs some of the city's most adored restaurants, including mobbed oyster bar the Walrus and the Carpenter, wood-fired Whale Wins, innovative steakhouse Bateau, and even a darling doughnut shop called General Porpoise.
Shiro Kashiba:
A legend in his own right, this beloved chef trained with Jiro Ono (of Jiro Dreams of Sushi) before defining sushi culture in Seattle over the past 50 years and counting. He spent early days at Maneki (still an unbeatable dining experience more than 100 years after its inception) and other spots, pioneering the use of local seafood, then two decades at namesake Shiro's. Finally, after the world's shortest retirement, Kashiba returned to the counter in late 2015 at Pike Place Market's Sushi Kashiba, an incredible ode to fresh fish.

How a 1947 Chevy Panel Truck Went from Rotten To Right On
Fifty years ago, Ervin Wagner operated a two-bay service station on Highway 632 in the town of Phelps, Kentucky, maybe 3 miles from the West Virginia border. After fixing customers’ cars all day, he built engines for local drag racers. Ervin’s wife, Cora, ran the restaurant at the station and their family of five lived in the house built above the business.
For their son, Brent, the station was a playground. He grew up with screwdrivers and crescent wrenches in his hands and learned how to use them unfastening taillight bezels and other easily removable parts from the cars parked around the shop. He learned how to drive early, driving the shop truck around and moving customers’ cars in and out of the work bays. By the time he got his driver’s license, he’d probably driven every car in Phelps. Those years left Brent with a passion for classic cars and trucks. Today, his personal collection of finished and unfinished vehicles numbers somewhere between 20 or 25. Some are high-dollar rides, some are patina’d. More than half are panel trucks or Suburbans—all GM Advance Design. This 1947 Chevy panel truck, built by Will Hudson at Hudson’s Rod Shop, is one of Brent’s finished rides.
Brent heard about the truck through a friend who told him it was just a roller but would make a great beater/driver. Brent gave him permission to buy it for him without seeing it himself. When he saw what he’d bought, he was shocked. Virtually every panel on the car was rotten. It looked like somebody had flipped it upside-down, poured salt all over it, and left it for 20 years, he told us. With replacement sheetmetal from Classic Parts of America and his own collection, Brent and his friend Jimmy Beasley were able to finish the body enough to get it into primer. As often happens, the project was stalled for a year or so until Brent called Will and Homer Hudson in Strawberry Plains, Tennessee. Brent is a hands-on enthusiast but decided to give Will free rein on this project, with the exception of three requests: a pancaked hood, a 1954 panel dash, and a 1954 one-piece windshield.
The Hudson’s Rod Shop team stripped and shaved the exterior sheetmetal down to the fundamental panel truck shape, doing away with door handles, parking lights, and mirrors. The stock taillights were removed in favor of custom lights installed beneath the rear barn doors. The license plate was frenched into the passenger-side door. All glass was replaced, with one-piece windows added to the doors, and a 1954 Chevy one-piece windshield transplanted in place of the two-piece stock piece. Pancaking the stock hood accentuates the truck’s chomping-at-the-bit rake. The aggressive profile is further emphasized by the street-scuffing hot rod posture.
Practically every project goes through a long process when it comes to deciding on paint. Brent said he considered red before thinking about brown. The final shade, a custom mix called Copper Illusion, was suggested by Will and sprayed by Keith Botta in Knoxville. Headlight bezels, grille, smoothed stock bumpers, and wheels went to Advanced Plating for black powdercoating. Every piece of the completed truck is finished in either copper or black.
The massive body needed some massive rolling stock to keep things proportional and these 18×8 and 20×10 Vista wheels from Intro do the job. The tires are Continental ExtremeContact DWS radials, measuring 245/40R18 and 295/40R20.
Imaginative and unique interiors are a signature of Will Hudson–built vehicles, and the all-black insides of Brent’s panel truck serve as a perfect example. The custom bench from Krist Kustoms is upholstered in heat-resistant black leather and hand-punched with large perforations. The floor is covered with a combination of flush-mounted pyramid rubber matting and Bruce hardwood flooring from a home supply store, CNC cut for a perfect fit and finished with a high gloss. The factory dash was replaced with a 1954 dash, completely smoothed except for the stock location dual gauge housings filled with Classic Instruments gauges with a copper finish. Vintage Air A/C controls and vents in the lower dash are blacked out and controls for the Pioneer audio system are hidden under the seat. Perforated leather door pockets were added for looks and function, and a whiskey flask was mounted on the driver side kick panel, just for kicks.
Every panel truck project comes with the challenge of how to fill a cavernous cargo section. Hudson’s added more perforated leather, hardwood, and rubber for an industrial look. The inner fenderwell structures hide the C-notched ’rails; perforated panels with straps open to access electronics and speakers and provide storage for cleaning supplies. In between, a large flat drawer pulls out for additional storage.
Underneath, Hudson’s C-notched and boxed stock framerails drop the truck. The frontend was upgraded with a Heidts Mustang II–style clip with 2-inch drop spindles to make sure that nose sits nice and low. In the back, a four-link locates the GM 12-bolt limited slip rearend. RideTech monotube shocks and air springs are mounted at all corners to smooth out the terrain. Master Power Brakes in the rear and Mustang II discs in front provide dependable stops.
A carbureted Chevy 350 crate engine provides power for the truck. Hudson’s kept the modifications simple, adding a few dressup parts (and some clean sheetmetal work in the engine bay) to create an impressive engine compartment. The Billet Specialties valve covers look great with matte and glossy black paint, separated by copper pinstriping. The same paint combination was applied to the one-of-a-kind fabricated air cleaner. Gearstar built the high-performance highway-friendly 700-R4 transmission.
The old service station on Highway 632 is a tire store now. The restaurant is long gone and the Wagner family no longer lives upstairs. Brent lives in Pikeville, 35 miles from Phelps, but still drives by there every so often. When he does, it’s not in a shop truck or a customer’s car but in this sweet 1947 panel truck, or one of his other custom Advance Design classics.
