This is hopefully the beginning of a series of comics about my father. If there’s anything I HAVE been doing since his death five months ago, it’s write lists upon lists/excerpts upon excerpts (in between drinking alone in my room/crying/breathing/whatever). I haven’t made a full comic in over a year, well before he died. Today I woke up horrified. I started drawing & didn’t stop & six or seven hours later, this was done. I really miss my dad.

2016 Recap

Nothing like three big bays, eh?  That sink is in the new community kitchen in the basement of the West Townshend Country Store. Built and managed by the non-profit West River Community Project (WRCP), that sunny kitchen is where Vermont Quince currently develops new products, preps ingredients for large batches co-packed by the fine folks at Fox Meadow Farm, and produces the few seasonal batches of Quince Splash (tm).  We highly recommend anyone in need of affordable kitchen facilities for product testing or catering take advantage of this sweet resource (and enjoy a fine meal upstairs before or afterwards! ;-) The contact email is kitchen@wrcp.org.

Vermont Quince also continues to be very grateful to all the wonderful folks at Harlow Farms who support us in so many ways. In the last six weeks of 2016, we processed about 3500# of quince grown at nearby Alyson’s Orchard in Harlow’s farm kitchen. We also have used it for new recipe scaling and quince-infusing vinegar; we also store puree & sliced quince in their freezers. On that last score, we also are very appreciative of the generosity of Jersey Girls and Alyson’s for help meeting our short-term storage needs. 

We also are grateful for the unbelievable support of the wonderful local Grafton Village Cheese Company who offers affordable dry storage, an excellent sales venue, cheddar to pair with VTQ dulce de membrillo at tastings & events, and a drop-off site for large orders destined elsewhere.I mean, really?  Who are we to complain about anything?!!

Especially because Vermont Quince actually made a profit for the first time in 2016!!!  whootWHOOT!!  Not bad for a five-year-old, self-financed food business run by someone with a public interest background, eh? Anyway, for anyone interested in the details of VTQ’s operations in 2016, read on.

Production:  The intro told the story of what kitchens we used in 2016. On the product development side, we experimented with a Quince-Coconut Simmer Sauce and a Quince Gari. Neither of those is finalized. For seasonals, we only produced small batches of Quince Splash (tm) & Quince-Rhubarb Preserves due to loss of the sour cherry & Dolgo crabapple crops.  In terms of ingredients, we continue to use local fruit, organic cane sugar, organic lemon & lime juice, Vermont maple syrup, local organic habaneros, rhubarb, & ginger. The only ingredient made with genetic engineering is the white vinegar in the quince mustard; we plan to switch that out in 2017. Looking ahead, the highest priorities are acquiring access to equipment to scale the vinegar, lining up a back-up kitchen for busy periods, and developing the paste in various directions.

Sales & Marketing: In accordance with our plan to begin to shift from largely retail to largely wholesale/distributor sales, the only farmers’ markets at which VTQ vended regularly in 2016 were the West River Farmers’ Market (Londonderry VT) in summer/autumn and the Brattleboro Winter Farmers’ Market in November/ December.  We vended once or twice at the Bellows Falls Farmers’ Market and the Putney Holiday Farmers Market (at Green Mountain Orchards).

We also enjoyed vending at the following events: Grafton Food Festival, Hops in the Hills (Okemo), Vermont Harvest Festival (Mount Snow/Dover), Southern Vermont Garlic Festival (Bennington), Newfane Heritage Festival, Cotton Mill Open Studio & Holiday Market (Brattleboro), and the Gilfeather Turnip Festival (Wardsboro). 

Our efforts to grow our wholesale & distributor sales were only partially successful. Reasons include dedicating winter months to scaling recipes and updating scheduled processes then unanticipated delays associated with outreach to new large wholesale and distributor accounts. We very much continue to value our partnerships with Provisions International (WRJ) and Grafton Village Cheese and a handful of small wholesale accounts and were happy to begin partnering with Adventure in Food Trading out of Menands NY. Unfortunately, we lost our Boston retail presence (and second largest wholesale customer) when the Harlow Farmstand in the Boston Public Market closed.  Two steps forward, one step back. Once we were sure of the 2016 harvest, we made a decision to exhibit at our first regional tradeshow with an eye toward expansion throughout New England in 2017. Onward!

One final 2016 sales-related development was the quiet opening of the Vermont Quince Etsy shop. We pretty much only promoted to family & friends during the holidays to work the bugs out of the shipping process.

April 28th 

Whilst checking through samples in the sample folder, i realised that the micro fades had not been applied to the samples and loops and some had pops at the start and end of them. This was specified as unacceptable in the spec sheet so I imported all the files into Logic Pro x where i created a tiny inaudible fade on the beginning and end of every track and exported them again to their respective folders. 

These were then e-mailed to Gino and Peter.

 The separate projects were mixed in booths at pelham as the speakers are the same speakers as the room were the demo would be presented (KRK Rokit 5) this was to hopefully reduce the possibility of any elements of the mix not translating across different systems. 

Whilst waiting for Gino to arrive i made a basic mix of the tracks and then left him to go through and alter any mixes, levels parts as he saw fit, after all i felt he would be more suited too mixing the level of the drums etc. 

After the mixes had been created we bounced the projects as a whole and drum transitions to make the demo track in a new project. 

The construction of this track can be seen in the image above. 

Gino created the fades between the sections and then i mastered the audio as a whole in another Logic project. 

Finally we both went through all the tracks and exported all the elements with a limiter set at the required level (-1.7db) and altered the levels accordingly. we then created the sample folders from these elements and the one shots used in the sampler. 

I came up with the idea of giving each demo section a name and then naming each loop within that section after it. We came up with with idea of naming after points within a day that went chronologically through the demo. Sunrise, Sunset , Moonrise, Midnight & Dawn. These were to give the feeling of listening them at different points of a Summer night out. Really this seemed the most logical way to be able group these elements so they tracks could recreated if wanted. for instance Sunrise guitar would fit definitely with sunrise full kit and percussion etc.
