Been thinking all day: Here's something I'd like to know about you. What your favorite go-to easy meal? Something you can just grab or make in a few steps?

I actually struggle with remembering to eat in the first place (combination of ADHD, dietary restrictions, and work schedule), so my usual "go-to"s are ready-to-eat snacks because by the time I remember to eat, I usually have neither time nor energy to cook.
When I have enough time to make a thing, but no proverbial spoons, I commit ramen crimes: cheapo instant ramen with the noodles crushed & cheddar cheese added for protein. No one should eat ramen this way, but this is what my terrible chef mom made instead of chicken noodle soup, so it's in my repertoire of food crimes. If I've feeling particularly evil, I'll add some white vinegar for no reason beyond madness.
I'm actually a good cook (barring the Oregano & Melted Lentils Incident that cost me my oregano privileges), but I need to set aside time to do it and I just usually don't have the time to set aside. My spouse is also an excellent cook; we specialize in different types of dishes.
When I have more time, I'm an excellent maker of latke, matzah ball soup, hearty potato stews, wine-marinated brisket, mashed potatoes, and baked mac-n-cheese. I make more things, obviously, but these are favored classics in my house.
Even though I'm neither vegan nor gluten free, I also like to experiment with some of the ingredients and cooking methods to trick myself into eating more vegetables. My spouse and I often try to introduce new things into our diets via experimentation.

Fries with chili cheese sauce are the only thing that will work sometimes. You know? Fortunately, this equally comforting vegan version is now available to satiate that craving! Though it comes together quickly using healthy pantry staples (like fiber-rich lentils!), it feels opulent and special. Friends, all you need to nourish your body and soul are ten ingredients. Allow us to demonstrate how to do it! Given that they are dubbed chili cheese fries, let us talk about the chili first, the cheese second, and the fries third. For the vegan chili, we went with a wholesome base of lentils and seasoned them with chili powder, smoked paprika, apple cider vinegar, ketchup, and coconut aminos. It’s a smoky-savory mix that cooks until thick and flavorful. It’s not too saucy because soggy fries are not a winning move! Now, on to the cheese! We opted for our cashew + carrot vegan cheddar, which is also good on grilled cheese sandwiches and in mac ‘n’ cheese. It has a neutral, cheesy flavor and is super creamy and delicious! For the oven-baked fries, we kept it simple with potatoes, avocado oil, and salt. Cooking at a high temperature (425 F / 218 C) ensures they get golden brown with crispy edges (a.k.a., fry perfection!). Put the three parts together, and you’ve got CHILI CHEESE FRIES! Cue the face stuffing. Keep it simple or make them beautiful and extra special by topping with quick pickled onions or pickled jalapeños, vegan sour cream, green onions, and/or cilantro. We can’t wait for you to try these vegan chili cheese fries! They’re: Savory Spicy “Cheesy” Satisfying Comforting & SO delicious! This dish is the perfect meal for satisfying your comfort food craving and getting your fiber in at the same time. It would also be perfect for enjoying when the “big game” is on (or whatever the sporting folks say). Prep Time: 15 minutes minutes Cook Time: 30 minutes minutes Total Time: 45 minutes minutes Servings 3 (Servings) Course Entrée Cuisine: Gluten-Free, Vegan Freezer Friendly: 1 month (stored separately) Does it keep? 2-3 Days Cook ModePrevent your screen from going dark FRIES 2 large (~1/3 lb each) potatoes, scrubbed clean but NOT peeled, cut into 1/2-inch “fries” (Yukon gold or russet work well) 1 Tbsp. avocado oil 1/4 tsp. sea salt CHILI 1 (15-oz.) can lentils, drained and rinsed 4 tsp. chili powder (or store-bought; if salted, start with less coconut aminos) 1 Tbsp. smoked paprika 1 Tbsp apple cider vinegar 1 Tbsp. ketchup 2 Tbsp. coconut aminos 1/8 tsp. cayenne pepper (optional) 1 tablespoon avocado oil, for cooking Cheese: If serving with homemade vegan cheddar cheese, begin soaking your cashews and carrots now. 2/3 cup (80 g) cashews + 1/2 cup (64 g) thinly sliced peeled carrots covered with boiling water. Set aside. FRIES: Preheat the oven to 425 degrees F (218 degrees C). For easier cleanup (but slightly less crispy fries), line a baking sheet with parchment paper (we didn’t). Add sliced potatoes to the baking sheet and toss with oil and salt. Spread the fries out so they are all on a flat side with the peel facing up, and ensure that no fries are overlapping. Bake for 20–25 minutes or until beginning to brown on the bottom, then carefully toss and bake for another 8–10 minutes until tender but crispy.PRO TIP: If your fries are sticking, use a metal (or other thin/hard) spatula, flip it upside down, and push it under the fries to lift and flip, keeping all the crispy goodness (think scraping rather than scooping). CHILI: While the fries bake, add your lentils to a mixing bowl along with the chili powder, smoked paprika, apple cider vinegar, ketchup, coconut aminos, and cayenne (optional). Toss until evenly coated. Heat a 10-inch or larger nonstick or well-seasoned cast iron skillet over medium heat. Add avocado oil and place your lentil mixture into the skillet. Distribute the mixture into the pan, ensuring an even layer. Cook for 4-5 minutes, undisturbed. It should be sizzling and bubbling nicely; if it���s not, turn up the heat a bit.
Once some of the liquid has cooked off and the mixture is slightly browned on the bottom, use a spatula to flip sections as evenly as possible to brown the other side for another 3 minutes. Once the mixture is darkened in color and looks thick and chili-like, turn off the heat and set aside. Cheese: Finish making the vegan cheddar cheese at this time. Stop cooking when the “cheese” looks creamy and thick like queso, but before it firms up too much. Time to assemble! Plate your fries and top with lentil chili and vegan cheese sauce (there will be extra cheese sauce). Garnish with pickled onions (and/or pickled jalapeños), vegan sour cream, green onions, and cilantro (all optional). Leftover chili and vegan cheddar keep (stored separately) in the refrigerator for 2-3 days or in the freezer for up to 1 month. Its similar to mac and cheese, but instead you put in the meat, pasta/macaron/whatever, add in the egg mixed with milk, spices and put it in the oven for 45+ min., You can either put the cheese gratin/grates? Grated cheese? On top before cooking or 15 min. Before its done.
Its really good when done right, i recommend grinded black pepper, little! Amount of chili mixed REALLY well, salt, a little bit of dried red pepper, dried garlic and... Is it lemon pepper? Anyways, a pepper that has somehow been named lemonpepper.
The best thing? You can change it into vegan. Or milk free, or gluten free, you can use chicken, pepperon or any meat though i haven't tried it with fish since that shit can go wrong too easily and is too pricy for me to wanna experiment-

‘lemon pepper’ as a spice is dried lemon bits mixed with pepper, unless you’re talking about an actual plant named ‘lemonpepper’ in which case i’m confused too
also, that does sound good! i’m not a fan of mac n cheese nor casseroles at all (texture of casseroles <<<) but that seems like it’s something really tasty and probably simple after a bit of repetition. thanks for sharing!

vegan/gluten free restaurant opened in my town today. i'm happy to be the second order placed there! i contacted the owner to ask if they'll be looking to hire and he said not initially, but he'd keep me in mind. there's no storefront it's only pickup and delivery. it really would be the ideal place for me to work, getting to cook vegan food all day and not be interacting with people face to face all day. so i really hope they do well and want to hire. the food is great too, i got mac n cheese and my fiancee got a garbage plate. they make everything in house including cheese!

There is a creamy cashew-based sauce and healthy vegetables in this vegan gluten-free mac 'n' cheese that makes it taste great.
Ingredients: 2 cups cooked gluten-free macaroni. 1 cup peeled and diced potatoes. 1/4 cup peeled and diced carrots. 1/3 cup chopped onion. 3/4 cup water. 1/2 cup raw cashews. 1/4 cup coconut milk. 2 tablespoons nutritional yeast. 1 tablespoon lemon juice. 1 teaspoon salt. 1/4 teaspoon garlic powder. 1/4 teaspoon turmeric optional, for color.
Instructions: Follow the directions on the package to cook the macaroni. Then, drain it and set it aside. Put water, potatoes, carrots, and onion in a saucepan. Bring to a boil, then lower the heat and let it cook for 10 to 15 minutes, until the vegetables are soft. Add water and cooked vegetables to a blender. Put in the nutritional yeast, lemon juice, salt, garlic powder, turmeric, cashews, and any other spices you want to use. Mix until it's creamy and smooth. Put the cooked macaroni and cheese sauce in a large bowl. Make sure it's well covered. Enjoy while still warm!

Dairy/egg free mac n cheese! (easy vegan optional version!)
allergy warning: contains coconut, almond, gluten
1 cup unsweetened original almond milk
1 8oz bag of violife cheddar
1 tsp chicken bullion (omit for vegan, add a pinch of salt instead)
1 cup macaroni pasta (ensure your pasta is allergy safe!)
Pour almond milk into pan. Bring to boil and add chicken bullion. Add pasta and cook until al dente (about 6 minutes). Add violife cheddar and mix until melted. Add spices such as garlic, salt, pepper, etc to taste!

There are more than a dozen things that are off the table (or should be kept off the table) when it comes to what to bring to Thanksgiving. Or rather...a Black Thanksgiving.

I don’t know what the white folks do over there but over here? We eat sweet potato pies, not pumpkin pies. We eat mac n’ cheese without breadcrumbs. We’d also rather you make one item in its classic recipe versus making it into a casserole.
Black folks stick to the same menu every year and it hasn’t budged for decades now.

CAN CONFIRM they have now expanded the Ballard food bank into a full service center. they have an administrative area where volunteers will help with signing up for section 8, they have a program to help you dump your RV grey water and sewage, and a full cafe where you can get one free meal every day, plus a hot drink like tea or coffee, and I think they have cold drink options too like milk and juice. yesterday when I went the meals available were Mac n cheese or a green salad so I think they're trying to provide options for vegans, kosher, halal, and gluten sensitive people. they also have skill classes at the BFB and individual conference rooms they can set you up with if you like need to do a zoom meeting or something. they have computers and phones to use.
they HAVE EGGS at the food bank! I was given an entire dozen. supplies change every day but about half the place is fresh produce. they also distribute narcan, toilet paper, first aid kits, menstrual products, baby food, formula and diapers in different sizes, dog and cat food, individual servings of OTC painkillers like Tylenol and ibuprofen, cough drops, masks, and they have an entire window counter JUST for food kits for people who have nowhere to cook and need prepared food. they had fresh basil and salads (a little wilty but you have to pick out the dead leaves in grocery store fresh leafy packages anyway). they had exotic cheeses! they had yogurt! they had frozen meat and fish! they had little packages of cut up and washed fruit and veg. when you're done picking your food you give your ticket to the checkout clerk and they can help you put your food into packages to carry home. they will also give you boxes and bags and tote bags to help carry stuff if you want them. I recommend bringing something with WHEELS. wheeled suitcase, granny cart, dolly with bungee cords and boxes, whatever. I almost died yesterday carrying 40+lbs of groceries home on my back. you can go to the food bank once a week so you need to plan to carry home your entire weekly grocery shop. food bank is weekly, but you can go to the cafe every day and get one meal and one drink every day and eat them indoors. they have a soft directive to please leave the cafe after about 30 minutes because other people also need space to eat indoors.
the place was crowded but everyone was polite and helpful and there were no problems with any of the clientele or staff while I was there. I only saw people behaving civilly and the staff treating everyone with respect. I'm sure problems occur like they do in every crowded service location but even on a busy day I didn't see any problems.
the D Line is less than a block away. you can buy a ticket on your phone, and you can buy a disabled/senior bus ticket on your phone without having to send any verification that you're disabled. $4 for all day unlimited fare, just show your phone screen to the driver.
