Left: Marrow bones are often sold as “dog bones” as evidence that people have forgotten how to cook things.
Right: Stock making isn’t pretty. I love making stock, but honestly it’s a gruesome process.

I didn’t have a meaty ham bone, so I’m substituting Ox Tails which are meaty and provide a similar amount of gelatin to the soup.

My mom never used a bone. She just threw in whatever meat was on sale that week.
Yes, that’s probably more authentic. I make bigos that way. But I haven’t ever made borscht on my own, so I wanted to start with a recipe.
