A little about me...

My name is Peter Fong and most of you will not have heard of me before, but sometime over the past 20 years, you may have tried some of my desserts, cakes or croissants.   Prior to enrolling into the PIDP program at VCC, I was the proud owner and pastry chef of Ganache Patisserie in Yaletown.  Opening the shop was my vision to “bring a little bit of Paris to Vancouver” and becoming established as one of Vancouver’s premier pastry and wedding cake shops was a dream come true.  However, with my lease expiring at the end of October 2023 and the total upheaval in our business due to the Covid-19 pandemic, I decided to close the business and pursue a career in teaching.  

As part of the curriculum of PIDP 3100, this blog will chronicle my journey through the program as we explore andragogy and what it means to be an adult learner.  On a more personal level, I will look at my experience in returning to academic studies, differentiating my time as a student at UBC over 30 years ago from my time at culinary school and then my career working as a pastry chef and business owner.   And having recently been hired by the Vancouver School Board as a Baker supporting the instructors in secondary school culinary programs, I hope to gain more insight from the beginning of my new career in teaching and education.

Katie had always been a well-behaved girl, with a normal life. But one day, little did she know that it was all about to change.

On that day, she was shopping with her friends when a handsome, young male Police Officer came over to them.

"You lot better hadn't get any funny ideas” he said “you do know what happens to disobedient teens, don’t you?” The girls seemed confused, but he’d walked away by know, so they just carried on shopping.

But as they were leaving, someone shouted “Catch those teenagers! I just saw them stealing”. The girls were horrified, but before they could protest the Police Officer and his colleagues swooped in, handcuffing them all and leading them to cages in the back of awaiting police vehicles.

After a while, the vehicle stopped and the back doors were opened by the handsome, young male Police Officer. He grabbed Katie by her handcuffs and led her inside what looked to be a grand, old country house.

As they approached the building, the two grand double doors were opened by a boy, who looked not a day over eighteen, dressed head to toe in a Royal Marines dress uniform; polished shoes, white gloves, the lot. His head and face were shaven, his expression was non-existent, he had no distinguishing features apart from a credit-card sized ID badge that dangled from his trousers, with a picture of what could’ve easily been mistaken for a soldier.

Katie was led upstairs, into a small dressing room with clothes hanging on the wall. “I expect you to be wearing those by the time I re-enter this room, Recruit. Do you understand?” He questioned, gesturing to the uniform hanging on the wall. Katie felt compelled to respond with “Yes, sir”. He left the room.

She began to put on her new uniform, starting with a navy blue t-shirt, then a navy blue jumpsuit. But rather strangely, there was already a tag on her uniform with her surname on: “Wilson”. She didn’t have time to contemplate it though, so she quickly slit on and laced up her heavy and restrictive leather black boots and put her Sailors cap on. Katie noticed some polish in the corner of the room, so she put some on her boots just for good measure.

That was three years ago. Today, LH Cdt Wilson won the Duke of Edinburgh’s Award for most obedient cadet. How things change!

Week 6 - Experiential Learning

From personal experience, I can speak to the merits of learner empowerment. As a child growing up in Greece, learning was based on memorizing facts and taking tests. One of my relatives joked that to get into university after post-secondary school, depending on which Greek university you were hoping to get into, you must memorize the textbooks and the periods, commas, and semi-columns. Learning by doing was not within the intention of designing the Greek education system. The instructors' knowledge was also questioned based on their lesson preparedness. In my experience, instructors often read from the book while teaching class and encouraged learners to memorize the material word for word. This type of teaching was not engaging. The learning mostly took place outside the classroom, raising the question about the usefulness of learners attending class. In summary, this was the least engaging experience and did not empower learners to seek their learning outside of memorizing the textbooks.

            Kolb & Kolb (2017) speak to the instructor’s ability to direct attention away from themselves. These approaches to learning move the learner away from memorization and enhance the need to explore resources in search of answers. By searching for those answers, learners expand their source base and learn more than needed for their courses. They develop a level of expertise that can then be shared with their colleagues in the classroom and the instructor. As a result, while the instructor is technically still the subject matter expert, learners in the classroom also become subject matter experts because they have been empowered to search for sources that will expand their learning horizons. I feel that empowering learners in and out of the classroom helps expand their knowledge base, enhancing their expertise in subjects of interest to them.
