Bombay Aloo is a flavorful vegan potato dish with aromatic spices. It's a popular Indian recipe that's quick and easy to make.
Ingredients: 500g potatoes, peeled and diced. 2 tablespoons vegetable oil. 1 teaspoon mustard seeds. 1 teaspoon cumin seeds. 1 onion, finely chopped. 2 cloves garlic, minced. 1-inch ginger, grated. 2 green chilies, finely chopped. 1 teaspoon turmeric powder. 1 teaspoon ground coriander. 1 teaspoon ground cumin. 1 teaspoon garam masala. 1 teaspoon salt. 1 tomato, chopped. Handful of fresh coriander leaves, chopped.
Instructions: Heat vegetable oil in a pan over medium heat. Add mustard seeds and cumin seeds. Cook until they start to splutter. Add chopped onion, garlic, ginger, and green chilies. Saut until onions turn golden brown. Stir in turmeric powder, ground coriander, ground cumin, garam masala, and salt. Cook for 2 minutes. Add diced potatoes and chopped tomato. Mix well to coat the potatoes with spices. Cover and cook for 15-20 minutes or until potatoes are tender, stirring occasionally. Once potatoes are cooked, garnish with fresh coriander leaves. Serve hot as a side dish or with roti or rice.
