A healthy and tasty baked bean recipe that is motivated by the goodness of the natural world. The flavors of molasses, maple syrup, and Dijon mustard come together in this hearty dish that is made possible by the slow-cooked, perfectly cooked beans.
Ingredients: 4 cups dried navy beans. 1 onion, finely chopped. 1/2 cup molasses. 1/2 cup pure maple syrup. 1/4 cup Dijon mustard. 1/4 cup apple cider vinegar. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon smoked paprika. 4 cups water. 1 bay leaf.
Instructions: Rinse the navy beans and soak them overnight in water. Preheat the oven to 325F 163C. In a large pot, combine the soaked beans, chopped onion, molasses, maple syrup, Dijon mustard, apple cider vinegar, salt, black pepper, smoked paprika, water, and bay leaf. Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer for 10 minutes. Transfer the bean mixture to a baking dish and cover it with a lid or aluminum foil. Bake in the preheated oven for 4-5 hours or until the beans are tender, stirring occasionally. Remove the bay leaf and serve the baked beans hot.
