Embracing the Journey

Gnudi A dish of Tuscan genius. I actually learned to make this dish from a misogynist hell raiser style chef from Sicily. He hated having me I. The kitchen and would remind me every day. But I learned a lot from him. I learned every job he thought was below him such as making the pasta, cleaning the fish, baking the bread, etc. I learned those skills over and over and over again. Including the regional specialties- country food. Gnudi is so wonderful and born from bits of leftover ingredients: some flour, an egg, ground ends of the Parmesan, a handful of field Greens (here spinach) and a few leaves of basil. I make it fancier sometimes with a piping bag to extrude the dough. Here it is hand formed into dumplings and served with an oven roasted tomato concase. Good morning good food fans!
