My personal interpretation of the whole "Diego used to prefer sweet coffee but now only drinks black coffee" thing is that he's still drowning in the coffee that Dahlia poisoned.

He isnt even stuck in the moment but he can't stop thinking about it. He can't stop thinking about it and he feels like he Has to keep thinking about the what ifs of the situation.

At some point it starts to just remind him of life before death. The last second before he passed out. When he was still Diego Armando.

Other thought (Miego) is that Mia was all the sweetness in his life and now that she's gone, he just has bitterness left..!
