You mentioned a while back about roses hibernating in the winter. How does that work in society? Does everyone just go to bed and sleep for a few months? What do lapis and George do in the meantime while the rest of the cast take a nap? What about the dragons in the winter? Wouldn’t it be a good opportunity to attack sleeping roses? Or do the bugs somehow prevent that?

Yes! After the end of Knight's seasonal holiday, almost every Rose (both in cities and in wilder communities) go to bed and sleep until spring starts. Anybody who isn't a Rose might be more lethargic and sleepy than normal, but they're awake and basically have the whole world to themselves during the winter season Lapis and George do a lot of things during winter; mostly exploring and hanging out with all the Dragons, Green Roses and others who are still awake in the city. The Spiders make sure they're never bored for longer than a day or two! And ah-HA! You are absolutely right- winter would technically be the perfect time for all the Dragons to attack while the Roses are sleeping deeply. However:

Most Dragons aren't stupid enough to risk getting into a fight with a Necroknight. Let alone a dozen of them at once when they think you're a threat they must obliterate off the face of the earth.

Better just leave the city alone and let them get on with their undead life! Like nature intended!
