Just realized the conversation between Nandor and hypnotized Guillermo was the show’s way of getting around a flashback.

It wouldn’t be possible to show us how they first met since the film crew wasn’t there. So, now thanks to the hypnosis we got to see a glimpse of how their first meeting may have gone.
