I think someone put the brain of a mouse or maybe a squirrel inside my head at some point because all winter I was like “I crave nuts and seeds” and now that it’s getting warmer and brighter out my brain keeps going “it’s fruit time”
Like, modern transportation has made it possible to move many fruits all over the world (in theory) all the time! But the primal early plesiadapiform part of my brain is like “you must eat what is available this season”
#I was going to go with euarchonta or plesiadapiform brain but I think the early members of both of those groups were from a tropical#ecosystem. if I’m wrong though and either are from more seasonal environments I could change what I used#actually. wait. plesiadapis is from the late Paleocene. yes. but tropical plants have reproductive cycles too#do they generally vary by season or are they just doing it all at their own pace by species#I am from a very cold seasonal climate that gets hot af in summer but is pretty cold for a good five-ish months#not all equally cold#it’s bad for our environment if it doesn’t get cold as balls for a bit every winter#and we didn’t really get that this winter. but that’s not my point!#I mean to say I can’t remember how it works in tropical environments#if the plants just time their reproduction whenever in the year or if there are seasons for most plants at the same time#does that make sense? I’m using the primate-like-mammal. if it’s wrong then whatever#fuck it we ball#maybe I should have gone with a group further back in time but I couldn’t find climate info easily about things that far back and fuzzier#i am not the most familiar with primate evolution. especially early evolution of the group. 12+ Ways to Make $1000 a Month from Your Garden (Year Round!)
They say when you do what you love, you’ll never work a day in your life.  Well, I love my garden and given a choice I’d be out there amongst my garden beds day and night.  There’s a big difference between gardening and farming though, and while I love my garden I’m not cut out for the life of a farmer. 
While bringing in a full-time gardening income is a bit tricky, making a side income from your garden is easier than you’d think.

Most people see gardening as a seasonal endeavor, that starts in the spring and ends in the fall, coming and going each year.  Up here in Vermont, our summer growing season is only a sad 100 days or so, and if I confined my efforts to those short months it wouldn’t make for much of a side hustle.  I think it’s important to find a way to earn a consistent side income, so I’m providing options for every month of the year (even in a cold climate like ours).
Beyond that, our land is mostly forested, which means the definition of “garden” is a bit loose.  We grow mushrooms in the shady spots and tap maple trees in season.  We also forage the wild bounty that nature’s garden has provided, meaning that we don’t have to limit our “gardening” to a small tilled section of the yard. 
Even if you’re lacking space in a small suburban lot, expanding outside of the traditional garden into local parks, or taking your garden indoors with salad sprouts, closet mushrooms, and seedling trays will allow you to make use of the space you have year-round.
Here are a few options to earn a substantial side income from your garden every season of the year, with ideas for both city and country folk. 
(Be sure to check local laws and restrictions before you start with anything, as those vary widely from place to place.)
Winter Garden Income
While you’d think winter would be the slow season for backyard garden income, believe it or not, it’s actually the best time for making money from your garden.  You’re generally less busy with planting and weeding, but everyone is stuck inside dreaming of the garden bounty to come.  
Indoor Salad Gardening
January is when everyone’s making new years resolutions to live healthier and eat more salads, but it’s a pretty rough time for gardening in most places.  If right around the end of the year you plan ahead with an indoor salad gardening setup, you’ll be in the perfect position to market microgreens and sprouts when they’re in high demand.
Local farms around here sell winter micro greens CSA’s and unlike summer shares where they net less than a dollar on a head of lettuce, winter greens command high prices.  A small bag of specialty microgreens runs $12 to 15 each.  And I really mean a small bag, maybe 3 cups of at most.
The trick is to grow high-quality, specialty greens that get people excited when the grocery store options are minimal.  The book Year Round Indoor Salad Gardening is a great resource to get started, and covers all you’d need to know to grow your own greens.  At that point, the problem is scaling up and marketing.  
Start a Small Backyard Seed Company
You may think you need to be some kind of multi-national to sell seeds, but in reality, customers are looking toward sustainably grown seed for specialty heirloom varieties these days.  It doesn’t get much more sustainable than a backyard garden, and buying seed locally ensures that you’ll get varieties perfectly suited to a particular growing region.
Choosing the right crops is key to generating a good income selling seeds.  Tomato seed, for example, is very easy to save and a single tomato often has enough seed to supply a dozen seed packets.  The flowers are self-contained, and it actually takes work for plant breeders to hybridize a variety, which means they’ll come true to variety even with many different types grown in the same garden. 
Most importantly, people get really excited about tomatoes.  Ever wonder why 1/3 of any seed catalog seems to be tomato seed?  With all that love for tomatoes, customers are liable to drop $5 for a locally grown packet of seeds for a really great variety.
While tomatoes are really easy, there are many varieties that aren’t much harder.  You need to know a bit about seed saving, not only harvesting and cleaning the seed, but about how pollination and selection works by variety.  Some varieties require a minimum population size to avoid inbreeding in the long term, and all that’s important to know before you get started. 
Seed to Seed is generally recognized as the most encyclopedic book on seed saving, covering just about every variety you can imagine.  It has great breadth to get you started, but not a whole lot of depth.
The Seed Garden is hands down my favorite seed saving book.  It’s well written and covers varieties in great depth.  It’s authored by The Seed Savers Exchange which does great work in the field of preserving heirloom varieties.
The Complete Guide to Seed Saving has a lot of stellar reviews, and it’s the next one I’m going to add to my gardening library.
Even in a small town environment here in Rural Vermont, there are about a dozen local seed companies.  High Mowing Seed started out really small just down the road from us, and now they’re a big national brand.  Milkweed Medicinals sells specialty seed that’s hard to find, and they now sell in all the local coops. 
Find your niche and there’s a great income to be made with homegrown seed.
Selling Cuttings
Even easier than saving seed, selling cuttings is an easy way to make a healthy income from your established plants in the winter months.  There are a number of varieties, like grapes for example, that need to be cut back or pruned in the winter.  Those cuttings are perfect for starting new plants and many gardeners are willing to pay good money for tiny pieces of your established crops.
I just bought 30 elderberry cuttings from Norms Farms at $4 each to propagate at home.  Elderberries grow readily from cuttings, and it’s an economical way for me to get a huge bed of them started.  Elderberry plants from a nursery cost about $30 each, so I’m happy with the transaction and the seller just made $120 off a tiny box of trimmings.
There are a number of plants that grow well from hardwood cuttings, some like black currants, are as simple as snipping off a tip and sticking it into the ground.  Others require a bit more attention and prep work to the cuttings, but they’re still beginner level.
Scion wood, or cuttings from apple trees to be grafted onto rootstock, is similarly lucrative.  All you need is a couple of established apple trees of known varieties and you can harvest cuttings for sale. 
Usually, each cutting is only a few inches long, so shipping them isn’t a big issue.  There’s a marketplace on the seed savers exchange website, and a scion wood cutting sells for about $4 each.
Start by learning a thing or two about plant propagation, first so that you can establish your own cutting beds, and then so you can educate customers on how easy it is to grow plants from cuttings.  Try reading Practical Woody Plant Propagation for Nursery Growers to get you started.

Growing Mushrooms Indoors
Learning to grow mushrooms is a bit different than most standard garden crops, so this one will take some studying for even seasoned gardeners.  Still, there’s the potential to grow large crops from a small indoor space year-round.
The book Organic Mushroom Farming and Mycoremediation describes in detail how to set up a back closet, extra nook or spare bathroom to grow mushrooms with minimal time investment (2 hours a week). 
He has a great breakdown of costs, inputs, and yields…but in summary, you can make about $100 per week from a small setup that takes up a 4’x4′ footprint.  The system scales easily, with minimal extra time investment, meaning you only need slightly more space to increase that to a grand per month.
The best part, they can grow in recycled 5-gallon buckets picked up from restaurants, and they consume waste products like spent coffee grounds, that you can often pick up for free.
If you have access to outdoor space and hardwood logs, growing shiitake mushrooms is also a great place to start for beginners, but outdoors, harvests would be in the warmer months rather than winter.
I don’t know about you, but when I had an office job my co-workers would have loved to buy fresh mushrooms to take home for a fancy Friday night meal.
  Spring Garden Income
Spring is when everyone’s mind is dead set on their own gardens, and it’s a great time to capitalize on the surge in interest in all things green.
Selling Dandelions (and other wild weeds)
While countless suburbanites are spraying their lawns trying to eradicate the dandelions, more savvy gardeners are realizing that one person’s weed is another’s delicacy.  Dandelions are edible root to shoot, and better yet, they’re also highly medicinal. 
Dandelion root tincture sells for about $12 per ounce, and it only takes a root or two per ounce.  The spring greens are highly sought after by local food coops, where they sell for $4-5 per bundle.  Not bad for a pile of weeds.
Beyond dandelions, there’s all manner of early spring green “weeds” that can command high prices if you know how to identify, harvest and process them.  Chickweed is incredibly invasive, but also delicious, and chickweed tincture has plenty of medicinal uses too.  
There’s nothing like making a bit of side income from weeding your garden early in the spring.  You’ve got to do it anyway, might as well make it pay.

Growing Spring Ephemerals
An ephemeral is a crop that has a very short season, and it may only be around for a few weeks before the plants go dormant (or unharvestable) for a full year.  Ramps, or wild leeks, are a slow-growing ephemeral that’s only around for a few weeks in the spring, but during that time they’re in high demand by both home cooks and fancy chefs.  Knowing where to find a good wild patch is hard, but they’re actually remarkably easy to naturalize in your own backyard.
Growing ramps from seeds just requires the right conditions.  Moist soil, under the shade of deciduous trees.  The more leaf cover the better. 
You’re not growing anything else in that much shade, so growing your own ramps is a great way to earn top dollar from an otherwise unproductive patch of land.  This is a long-term venture though, as leeks are slow-growing, and they’ll require about 5-7 years before your first harvest, but after that, a well-tended and sustainably harvested patch can last indefinitely.
Fiddleheads are another crop that’s generally wild foraged, but it’s remarkably easy to cultivate.  They can actually be pretty invasive, and I spent a long time weeding them out of my garden so I could grow anything else.  I just dug them up and tossed them into a heap, and they kept on growing and spreading from there as if nothing happened. 
Fiddleheads can be really productive, and they sell for about $20 a pound here in Vermont where they’re common.  You might get even better prices somewhere they’re more scarce.
Since they’re productive, fern heads can be pickled to extend their season, so you can market the bumper crop a bit longer.

Selling Spring Seedlings
Selling spring veggie seedlings is an obvious choice.  Tomato seeds cost about a tenth of a cent each, but a healthy started plant can easily sell for $5.  Sure, there’s the cost for potting soil and pots, but the profit margin is still huge on seedling sales. 
The trick is, you’re investing your time and energy into starting plants off right, so others don’t have to.  This is one of the most lucrative ways to make money from your garden if you invest in the right equipment and can master the process. 
A greenhouse, even a small backyard model, is essential for producing seedlings early enough in the season.  As for resources to get you started, The New Seed Starter’s Handbook covers everything in detail, including troubleshooting guides if your plants aren’t performing.
Beyond the income from selling seedlings, you’ll also save a boatload by starting your own seeds instead of purchasing starts.  That’s one of those penny saved is a penny earned propositions, and any seedlings you don’t sell can just go right into your own garden.
Take a look at the local market this spring, and see if there are any gaps.  Do all the tomato seedlings sell out quickly, or is the market flooded?  If there’s plenty of other vendors, consider growing something niche like medicinal herbs.
Start a Backyard Nursery
Similar to growing out your own veggie seedlings, starting your own backyard nursery extends the income beyond the busy spring season.  If you’re growing perennials, you don’t have to worry about any unsold plants at the end of the year.  Just tuck them in for the winter and try to sell them next year.
Propagating plants from cuttings is remarkably easy, and all it takes is a bit of time and patience.  Those elderberry cuttings that sold for $4 each (above) as trimmings will sell for $25 to $30 as full-sized potted bushes in a few years.  Just the patience, time and space required to grow out the plants pays back in dividends later. 
This is actually a big part of our retirement plan, and we’re putting in perennials throughout our land to serve as cutting sources later when we open our nursery.  In the meantime, they’re beautiful, and most are edibles like elderberries, so we’re harvesting the fruit for our table while we patiently bide our time to retirement.
Backyard plant nurseries don’t require that much space, as potted plants can be stored fairly close together.
Summer Garden Income
Summer is peak growing season and it’s a great time to earn income from what you’re growing at home.  The big farms and CSA operations have the lettuce market cornered, but backyard gardeners can break into the market by offering really novel crops.  Start by focusing on high-dollar items and unique crops that get people’s attention.
High Dollar Specialty Crops
You’re never going to compete with the 100 acre organic CSA down the road on most generic crops, but those big operations cant grow everything.  They can grow a lot of the staples most families use every day, but backyard gardeners can grow small amounts of truly specialty crops that demand high prices.  Here are a few good options:
Husk Cherries – Also known as ground cherries, these plants produce huge crops of sweet pineapple/strawberry flavored fruit.  They grow on plants similar to tomatoes, and each bright orange fruit is wrapped in a papery husk.  Just one taste and you’ll want more. 
Before we were growing our own, I’d buy them for $5 a pint…now I know that each plant can produce more than a gallon of fruit even with neglect.  If you hand out samples, these will sell themselves.  It also helps if you give people creative ways to use them.
Cucamelons – Also known as mouse melons, these tiny little grape-sized cucumbers taste like a cross between a cucumber and lime.  They’re really wonderful fresh out of hand, and they make great pickles or mixed drinks.  The cuteness factor means that these sell for about $5 per half-pint.
Berry Pick Your Own
To complement our backyard nursery retirement plans, we’re also planning a pick your own operation.  This requires more space than most of the other ideas on this list, but after the initial setup, labor is pretty minimal. 
A while back I calculated the rate of return on a raspberry pick your own, and you’d need about 250-row feet to produce $1000 worth of raspberries.  For us on 30 acres, that’s a drop in the bucket, but that may be more space than you can devote to any one crop.
Strawberries are similar, in that a plant generally yields about a pound of fruit in a season, and requires 1-row foot.  At $4 per pound, you’d need the same amount of row feet as raspberries.  The benefit there is, strawberry rows are much more closely spaced so this may be more practical for some.

Garden Tours, Tea Times & Classes
Though it’s not my cup of tea, garden tours and country tea times are a good option for flower gardeners.  A local nurseryman around here makes a good side income hosting tea time in his home garden, and runs an annual tour of his extensive plantings, along with specialty days for big blooms (like daffodils).  Our gardens are more down-to-earth and “homestead” than they are attractive, but many people’s are just the opposite.
All it takes is a few tables, a decent scone recipe, and a few good teapots, and you’re ready to run a weekly afternoon tea time in the garden.  Add in tours and maybe a few gardening classes and you’ve got yourself a ready source of income from your own beautiful backyard.
Medicinal Herbs
With the increasing demand for more alternative remedies, there’s never been a better time to grow medicine in your backyard.  Locally grown herbs are still hard to find in most areas, but plenty of people are looking for them.
Many medicinal herbs are perennials, which means you plant them once and you can harvest them for years.  And the same compounds that make the plants medicinal also make them resistant to deer and insects, which means less maintenance than garden veggies.  For the most part, they’re perennial, persistent and more importantly…profitable.
There’s a high demand for medicinal tinctures since they’re ready to use, and our local coop has half an aisle dedicated to them.  Tinctures sell for $8 to $12 an ounce, but they only cost about $1 to $2 an ounce, even if you’re buying in the herbs rather than growing them. 
Add in another $1 for the tincture bottle, and you’re still making a pretty sizable profit per bottle.  Choosing crops that are common and in high demand, like echinacea tincture can help you break into the market.
As you’re just getting started, I’d recommend Backyard Medicine as a way to dip your toe into harvesting and making your own herbal remedies, especially from wild crops.  If you’re considering growing herbs for profit I’d highly recommend The Organic Medicinal Herb Farmer: The Ultimate Guide to Producing High-Quality Herbs on a Market Scale.  It’s written by farmers that grow just a few towns over from us, and they’ve inspired a lot of people to take up growing medicine for the market.
The Herbal Academy of New England also has a course designed specifically for herbal entrepreneurs.  The course walks you through the basics of creating your own brand identity, marketing, sourcing herbal ingredients, manufacturing herbal remedies and creating a business plan around herbs and herbal remedies.
Fall Garden Income
The end of the garden season, fall is generally when the crops come in.  In my mind though, it’s one of the more challenging times to make income as a small producer. 
There are a lot of products on the market,  and it’s hard to stand out.  With the holidays right around the corner though, marketing yourself as a niche producer of really unique homegrown gifts can work to your advantage.
Honey & Bee Products
Gardeners need bees and bees need gardeners!  Raising honey bees is a great way to support pollinator communities, but with all the challenges that face hives these days, it’s best to be educated before you start.  There’s a really great book called Natural Beekeeping: Organic Approaches to Modern Apiculture that covers just about everything you need to know to keep your bees healthy naturally.
In a good year, with our short Vermont growing seasons, bees can produce as much as 100lbs of honey for harvest.  The current bulk price at our coop, meaning bring your own container nothing fancy…is $7 per pound.  Pre-packaged just in mason jars, honey goes for $10-12 per pound, and considerably more in specialty gift packaging.
Add in things like bee pollen or propolis for medicinal use, or comb honey, and you have yet more high-dollar items to market.
Honey, especially locally sustainably raised honey is in high demand just about everywhere.  People are realizing that bees are important to our environment, and many will be happy to pay for local honey just knowing that it means supporting someone who is stewarding such an important resource in their neighborhood.
Apples, Cider and Cider Press Rentals
My doctor has a small apple share side hustle that she runs with her sister, selling harvest shares to neighbors in her spare time.  They have a few full-sized apple trees, and each one produces around 100 to 120 pounds of apples per year.  These days, conventionally grown supermarket apples are about $3 per pound…and locally grown apples fetch a premium above that.
She sells shares ahead of time and then divides the harvest as each tree comes to bear.  Distributing them to shareholders every week or two as each variety ripens over the season.
We have other neighbors who sell fresh cider that they press from their trees, at $12 per gallon.  Last year we pressed nearly 80 gallons from our trees, most of which went into hard cider and homemade cider syrup (like maple syrup), but we easily could have sold it instead.  Instead of selling our cider, we have a different strategy for earning our income during apple season. 
We invested in an efficient double-barrel cider press, with the thought that we can rent it out to other small apple producers.  People with one or two trees in their backyard love the novelty of pressing their own cider, and around these parts a press rents for about $50 for the afternoon.  Over the course of the season that can really add up…
Year-Round Garden Income
Beyond different things you can do seasonally to earn a few thousand a couple of months a year, there are things you can do year-round to earn a steady income related to your garden.  
Garden Blogging
I know, making income from blogging seems too good to be true, but writing about diy, gardening, and self-sufficiency is now my full-time job. Within 6 months of starting this blog, I started making an extra $1000 a month.  After 9 months of writing, I was able to quit my day job, and now at 18 months in I bring in more each month than any job I’ve ever had.
The best part?  All I do is write about what we’re already doing here in our daily lives, and I spend my days playing in the garden and out foraging in the woods with my kids.
I was inspired to take the leap into blogging when I read the book Make Money Blogging at Any Level by my blogger friend, Victoria at A Modern Homestead.  She outlines in detail how to earn a substantial income, even from a very small blog.  
She was able to retire her husband and supports her family exclusively with her blog.  If you’re considering blogging as a source of income it’s worth the investment.  It’s $27 for the book, and I made that back in my first week with my blog following her tips.
She also has a much more comprehensive blogging e-course that takes you through everything you need to know to launch your own profitable blog.  It’s a bit more of an investment, but it’s the perfect way for a beginner to learn everything they need to know to launch their blog fast and start earning money.
Garden Micro-Influencer
Making money on Instagram is all the rage these days, and you’d be surprised how many companies are willing to send you free products just for a promise that you’ll post at least 1 picture of it to Instagram with honest feedback.  Once you have even a small following, companies will pay you for your time reviewing it (and you still get to keep it for free…)

Keith works on his leadership skills, and mends his relationship with one of the respected members of castle staff.

There’s a knock at the library doors before they open. Keith sets his datapad and tablet aside, managing a smile that’s more polite than anything else. Lance smiles back, far more genuine. “Hey.”
“Hey.”
“Wanna get out of here?”
“What, like out of the library?”
“Out of the castle.” Lance dances into the room, gossamer cloak sweeping the floor. Keith notices that his lips are painted, his eyes lined with a gold kohl. He’s wearing more ornaments in his ears than normal. So long as he himself doesn’t have to put that kind of effort into anything, he’d be delighted to get out of the castle for a bit. “What are you reading?”
“Atra Yelverton’s ‘The Natural Art of Leadership’. It’s… dense. I don’t like what he says, either.”
“Which bit, specifically?” Lance peers over at the tablet.
“Yelverton says that ‘a true leader possesses charisma, an inherent trait that can neither be learned nor taught. Additionally, many of the qualities which an effective leader possesses are inborn as opposed to learned.’ In other words, he says that leaders are born, not made.”
Keith’s ears droop. He’s aware he’s not a leader. He’s quiet and stunted and knows more about roughing it in the wild than he does leading anything.
“Well, you'll be pleased to know that while there is some truth to his teachings, he’s also been proven largely discredited. Skills that make someone a leader can be learned and applied, though certain people are more effective leaders than others and some are not effective at all.” Lance gently takes Keith’s hand, guides him to his feet. He gathers his spouse’s datapad, leaving the tablet at his desk.
"So what makes the difference?"
“See, everyone is born with a base quintessence, right? Blue, yellow, green, red, purple, or black. Some, usually people who are exceptionally complex or who are transitioning, have a blend of two or even more.”
“I don’t understand.”
“Certain-” The Altean squeaks as he bumps into the seamsmaster turning a corner. “Hello, Ventroneius. So sorry!”
“Your Majesties! Good morning!” The turquoise-scaled Altean smiles, pushing their powder-blue hair out of their eyes.
“How are Anahal and Orzal?” Lance asks, carrying himself and his spouse through formal pleasantries. Keith tries to learn his tricks.
“Anahal is as beautiful as ever and Orzal is teething and thus eating the furniture whenever our eyes aren’t on him. So, wonderful, really! How about yourselves?” So Anahal is their spouse and Orzal must be their son.
“We’re doing well, thank you. Today we’re going into town. I think it might do some good for Keith to be seen amongst the commonwealth. They have quite a negative idea of him, since they’ve not yet actually seen him.”
“They do indeed. I've heard the courtiers laughing about it. The commonwealth fancies him quite the monster, I can tell you. I think they imagine him more Zarkon’s size, to be honest.”
Keith sighs. He’s standing right here, and Vetroneius won’t even acknowledge him. It rather hurts his feelings, if he’s honest with himself. Although he did hurt Vetroneius’ feelings when they first met… Did he ever apologize?

By 2050 there will be an estimated 10 billion humans living on this planet. That's not just a lot of mouths to feed, those folks will be, on average, wealthier than today's population with a taste for the foods found in regions like the US and Western Europe. We simply don't have the capability, the land or production resources to ensure that many people can eat a cheeseburger whenever the mood strikes. Luckily, researchers from around the globe are working on alternative protein sources to supplement our existing beef, pork and chicken.
Of course, there's tofu, which has been used as a meat replacement for thousands of years. But today's consumers expect their protein substitutes to closely resemble the meats they're replacing, which is why Impossible Meats and Beyond Meat have arrived to such public fanfare. These plant-based burger alternatives offer the same bloody sizzle that beef does. In Impossible's case, that comes from heme derived from soy roots that have been fermented in genetically engineered yeast. Beyond Meat, on the other hoof, relies on a processing method that "aligns plant-proteins in the same fibrous structures you'd find in animal proteins". But as much as they look, smell and taste like a real beef patty, these products are still extruded plant matter -- and highly processed products at that.
Dr. Julie Lesnik, a biological anthropologist at Wayne State University, advocates that we look to get our meat from smaller, more resource-efficient animals than cattle -- specifically, crickets. She points out that, per kilogram, crickets offer roughly the same amount of protein as beef as well as significantly more micronutrients since you're consuming the exoskeleton as well.
She also notes that given their diminutive stature and affinity for cramped dark places, crickets require far less arable land than cattle do, citing a 2013 report by the UN's Food and Agriculture Organization. Whereas it takes around 200 square meters of space to grow a kilogram of beef, the same amount of cricket needs only about 15 square meters and they can even be vertically farmed. Their water requirements are equally reduced compared to the 22,000 liters required to produce that kilo of beef.
The same yield of crickets "use less than one liter of water... based on the fact that crickets get all their water needs from their food," Lesnick said during a recent Sciline webcast. You still use water to clean your facilities and all the different processing, so one liter is an incredibly idealistic number, so I generally present this more like 100 liters just to be less sensational."
Switching our diets from cow to cricket could help slow climate change as well. The FAO estimates that grazing animals are responsible for as much as 40 percent of the methane released into the atmosphere every year. Crickets, however, don't generally eat grasses and hay and therefore produce a fraction of the greenhouse gasses. Coincidentally, termites, thanks to their fiber-based diet, are a significant source of methane as well which is why we won't likely be raising them as a food source in the foreseeable future. According to a 2019 white paper by the World Economic Forum, replacing beef with alternative proteins could reduce methane emissions anywhere from seven to 26 percent, depending on the region.
Despite all the nutritional and environmental upsides, getting people to eat crickets -- especially when the finished product still looks like a cricket -- has proven challenging. "When we're thinking about why we don't eat insects, it's really a story of Europe, and that Europe being in high latitudes, insects aren't available year-round," Lesnick continued. "Eating insects in the summer can give a reprieve from hunting, but it's nutritionally redundant, so it's not an important resource." And as European nations colonized throughout Africa and Asia, where insects are generally available year-round, they spread their notions on bugs' relative edibility with them.
So, instead of replacing cows and other farmyard animals wholesale with insect protein, why not just grow only the parts that we're interested in eating? That's the promise of cellular agriculture. "The idea is rather that we would take the whole cell of a chicken and convert that to a chicken breast instead of using the whole chicken organism to make a blade or a steak," Dr. Kate Krueger, research director at New Harvest, explained during the same webcast.
"What we're talking about is taking cells out of an organism like a cow or a chicken, growing them up on to a material called a scaffold which organizes the scale cells and helps them grow in thick quantities," she continued, "and then feeding them with a variety of different nutrients and minerals in a bioreactor to make a full steak type product." At least that's the theory. Krueger estimates that we're still at least a decade away from being able to produce steaks or sashimi in appreciable quantities, though the process should be able to deliver less readily identifiable products like meatballs and chicken nuggets in as little as five years.

Given how young the technology is (the first lab-grown burger was introduced in 2013 and cost $325,000), cellular agriculture's environmental impact has yet to be fully understood. A 2011 study published in Environmental Science and Technology figured that growing meat in a lab rather than a feed yard would reduce greenhouse gas emissions by 78 to 96 percent, require seven to 45 percent less energy and 82 to 96 percent less water. Those estimates may have been a bit overzealous, though, according to a number of subsequent studies that also took the energy costs of developing the infrastructure needed to grow these meats.
A 2019 study published in the journal Frontiers in Sustainable Food Systems notes that "Under continuous high global consumption, cultured meat results in less warming than cattle initially, but this gap narrows in the long term and in some cases cattle production causes far less warming." While cows produce methane, cellular agriculture generates a lot of carbon dioxide. This is because you're growing meat in what is essentially a sterile lab environment with high energy demand.
While the price of a lab-grown burger dropped to around $11 by 2015, growing meat at scale is still a very expensive proposition. "Traditionally, a lot of the media sources [that cells live and feed on] tend to be really expensive for a few different reasons," Krueger explained. "They usually either contain a fraction of fetal cow blood, which would make products not vegan and is also fairly expensive, or they would contain recombinant proteins: proteins that you would make in different cell lines in a largely expensive process."
That hasn't dampened interest in the technology, however. "If we start small and stay small, we can essentially dramatically reduce the cost, and the capital burden drops by an order of magnitude or more," Yaakov Nahmias, founder and chief scientist of Future Meat Technologies told Fast Company in 2018. "With these two plays – a more efficient bioreactor and a distributed manufacturing model – we can essentially drop the cost down to about $5 a kilogram [$2.27 a pound]. This is where it starts getting interesting because the distributed model also allows you to use the current economics."
"These distributive models allow us to grow organically and essentially replace chicken coops with these bioreactors," he continued. "This, I think, is a reasonable way of actually taking over and replacing this industry sustainably."
Until bioreactor technology fully matures, we can always eat algae -- A.K.A seaweed. "Seaweeds don't require fertilizers, don't require feed, they don't require fresh water and they don't require land," Dr. Denise Skonberg, associate professor of food science in the School of Food and Agriculture at the University of Maine, explained during the same webcast. "So those are a lot of benefits there." What's more, seaweeds are phenomenal at sequestering carbon and nitrogen, can be grown and harvested in as little as two to three months, depending on the variety, and "are extremely nutrient-dense," Skonberg continued. They're primarily noted for their really high content of dietary fiber."
Seaweed farming is already a big business, a $6 billion industry according to recent FAO estimates, however, most of those operations are located in East Asia. Skonberg points to America's Northerly shores -- Washington, Maine and New England as promising areas for aquaculture industries. "There's a lot of clean water and a lot of potential for growing seaweed," she said. "We're starting off by looking at species that do well in temperate waters, and that includes things like sugar kelp, bull kelp, I mean there's a lot of kelps!"
However, much more research is needed before you'll start to see fresh seaweed in the produce aisle. For example, we're not entirely clear on what the shelflife of fresh seaweed even is, Skonberg noted. It's a question that was "answered for cauliflower and broccoli hundreds of years ago but [for seaweed] we have no idea."
Food safety and regulation concerns must also be addressed. "Research is underway looking at how well different types of species can concentrate heavy metals in their tissue," Skonberg said. "Some that are of interest include arsenic, research has shown that some of the brown macroalgae tend to concentrate it at a much higher rate than the green or the red macroalgae... where it's harvested plays a huge, huge role."
So whether it comes from a cricket or a lab or off the coast of Indonesia, tomorrow's protein alternatives will be a win for both consumers and the environment, though likely neither are as excited about those prospects as the cows.

Agua Miel: From Pollutant to Organic Fertiliser
Washed processing may result in a cleaner tasting  coffee, but it dirties more water than any other processing method, using up to 20 cubic metres of water per tonne of cherry in some instances. When this happens, the acidic and sweet agua miel that it creates enters waterways, where the resulting pollution load can be several times greater than that of urban sewage.
However, just like dried coffee fruit husks can be repurposed into cascara tea, agua miel can be transformed from a damaging pollutant into a variety of valuable products. 
While some businesses use it to create honey or biogas, producers can easily use it by transforming it into an organic fertiliser. I spoke to several Colombian smallholders about how they do it – and why coffee exporters and roasters should be supporting this process.

What is Agua Miel? 
In a fresh coffee cherry, the seed or bean makes up less than half of its total weight. During washed processing, the cherries are de-pulped, fermented, and then have their mucilage removed with turbulent water, before being dried. During wet processing, over 80% of the harvest’s volume is left behind as organic waste. 
The resulting wastewater consists of fermenting sugars from the cherry pulp, mucilage, and pectins. Its gel texture comes from the undigested mucilage and pectic substances in the water. 
The primary environmental effect of this wastewater entering other water sources is that high amounts of oxygen will be needed to break down the organic waste present, creating anaerobic conditions that kill off animal and plant life. 
While no long-term studies have been conducted on the impact of coffee wastewater on human health, studies indicate that when it contaminates potable water sources, it can cause problems. A 2008 study assessing the effect of wastewater from a coffee processing plant in Ethiopia’s Zimma zone found that people living near the plant who consumed the polluted water experienced nausea, eye and skin irritation, breathing problems, and stomach pain.
While disposing of wastewater on land is cheap and easy, it still creates waste and contaminants that can reach ground and surface water through percolation and runoff. The process will also emit greenhouse gases, making it less environmentally friendly.
For this reason, anaerobic digestion is an eco-friendly alternative for treating coffee processing wastewater, as it can remove the bulk of its organic load and suspended solids. With this process, the wastewater is fed into an oxygen-free machine built for this purpose. It’s then heated and as time passes, bacteria decompose its mass into sugars and organic acids. These organic acids are then converted to biogas. 
This system requires less land, reduces bad odours and pathogens, and results in organic fertiliser being produced as an end product.

Cleaner Water, Healthier Soil 
Coffee that is grown using long term monoculture (which is when a single crop is grown without rotation) and with full sun exposure, often experiences poor growth and low yields. The sun exposure and direct heat also dries the soil, reduces its density, and encourages erosion. 
Continuous coffee cropping obstacles can often be attributed to poor quality soil, as it can cause toxic substances to accumulate, soil properties to deteriorate, pathogens to build up, and native microbiota to be disturbed. Without providing additional nutrients to compromised soil using fertiliser, coffee yields will remain low. 
Research indicates that large amounts of organic fertiliser that can be recovered using anaerobic digestion. This can be used to replenish soil requiring fertilisation while reducing pollution at the same time.
To see what it looks like when farmers adopt this process, I spoke to Andrés Perdomo Centeno, who is the Producer and Head of Asociación La Victoria, a collective of specialty coffee growers in Santa Maria, Huila, Colombia. His farm has partnered with exporter The Coffee Quest US, and local environmental organisation Fusamdes to neutralise the environmental impact of their farms. 
Coffee Quest US Owner Stephen Levene explains that as local farmers share a watershed with a nearby national park, residual water often ends up in its rivers. They’ve provided farmers with ecowashers to convert wastewater into a paste that can be processed. Andrés believes that creating fertiliser from subproducts of washed processing tackles more than one environmental challenge at a time, by eliminating water pollution and recovering soil conditions. 
Research shows that using organic fertiliser to improve soil properties can both increase yields and reduce the need for inorganic fertiliser, saving farmers money. As cascara and agua miel are rich in nutrients like nitrogen, phosphorus, potassium, and calcium, here’s how farmers transform it into fertiliser.

How it Works 
As most producers don’t have access to large-scale equipment for anaerobic digestion, they rely on processes that use less technology. According to Gabriel Vélez, Technical Director of Coffee at Café de Santa Bárbara in Medellín, Colombia, many of these lower-tech processes work in the same way. 
He explains that the agua miel from the first few washes is placed in a plastic or cement tank, where the more concentrated sugars float to the top, and solids sink to the bottom. Both are captured and mixed with cascara for composting. At this stage, some producers take the concentrated sugars and mix them with lime or ash to adjust the pH, creating foliar fertilisers. 
The process can look different from one producer to the next. For Carlos Andrés Ossa, an Organic Producer and Coordinator of the Bosque Colibri Natural Reserve, there are two stages. First is a dehydration process, where he leaves a cascara mixture to dry for two weeks in a drainage pit. 
As the mixture decomposes, he collects the agua miel that leaches out. Once evaporation has left only solids behind, he reincorporates the cascara, adding rock flour to create a richer, more powerful mixture. The cleaner water left behind can then be further purified in a variety of ways, using anaerobic filtration, biodigesters, or plant-based biofilters.
“After three months, you’ll have a potent compost of black soil that you can reincorporate into the production cycle,” explains Carlos. “It’s the simplest way to add value to the subproducts traditionally thrown out.”

Using Ecomills & Ecowashers 
Carlos says that with the use of certain technologies, you can extract even more value from mucilage, and make the process more efficient. He is referring to ecomills and ecowashers, which can reduce water use from 40 litres per kilo to as little as half a litre.
The ecomill and ecowasher use the same washing technology, but the ecowasher is sold as a separate, portable unit, whereas the ecomill consists of several machines that de-pulp, ferment, and wash coffee in one integrated system. 
With both machines, the beans are fermented and then transported through a rotating cylinder that scrapes off the mucilage. It then cleans the coffee using a small amount of water. Less water goes in and a smaller amount of concentrated wastewater comes out, which can then be dehydrated into a paste or a cake. 
This dehydrated paste can then be dried and made into compost or substrate for growing orchids. The fertiliser produced can be applied to coffee plants, as well as indigenous shade and fruit trees as part of reforestation efforts.
That’s a lot of added value – and reduced waste. So why aren’t more producers doing it?

Covering The Costs of Eco-friendly Processes
Even basic, low-technology ways to process agua miel come at a cost in terms of equipment and labour. With coffee prices remaining at just over a dollar a pound, many producers are struggling to break even and feed their families – let alone invest in what’s necessary for processing agua miel on their farms.
This is where exporters and roasters can step in. It’s important for both parties to realise that there is a relationship between coffee quality and environmental sustainability and that by preserving good environmental conditions, favourable conditions can be created for high-quality coffee to be grown. It’s therefore in their best interests to support producers in their waste management endeavours.
This can be facilitated in many ways, but the simplest may be to ensure that producers are paid a fair price for their coffee. As Stephen says, “The first and most important thing for us is to pay the farmer as high a price as we can, based on quality. He adds that “we work with them to increase the value of their coffee, and once we’ve built a long-term relationship, then we try to work together on creating systems that are more ecologically sustainable.”
With climate change a current reality, and coffee production under threat, it’s not only producers who’ll have to deal with the consequences of reduced yields and quality.

For members of the coffee supply chain, supporting producers in their waste processing efforts can be the first step in ensuring that coffee quality and integrity remains high – and that producers and the planet can afford to keep producing it for years to come.

But why do this when the range of seed available commercially is so good? Promoters of seed swaps like to portray themselves as keepers of genetic diversity, safeguarding old varieties from extinction and keeping that diversity going for the next generation. Commercial seed producers are generally cast as agents of wicked corporations which are trying to limit the range of what we grow, so they can monopolies it. Seed companies of course maintain considerable seed diversity, but that isn't much help to anyone with a small plant breeding business . There is a very valid criticism of the seed business - that they have a monopoly, and is probably one of the reasons that we (in Europe or North America) see very little small-scale or independent vegetable seed selection and breeding. The exceptions are tomatoes and chills, where there seems to be a very healthy market in amateur or small-scale breeder varieties. See Simpsons Seeds. The accusation is sometimes made that all commercial veg seed breeding is for the big growers, and the amateur grower has to do with the crumbs from the table. Well, actually the demands of all growers are pretty similar: strong-growing, reliably producing crops tolerant of a wide range of conditions and pest and disease resistant. It is the latter factor which makes modern breeding so superior to 'heritage' or 'heirloom' varieties – so much breeding effort now goes into producing varieties that will stay healthy without using pesticides. This is why the statement on one seed swapping site that “It keeps seed making in the garden and out of the laboratory” is so daft. If you want to live in the Middle Ages, that's fine, but most of us would like to move on. F1 seeds are presumably one of the 'laboratory' crops. For many of these, there is probably little point in us growing them, as their advantages are mostly for commercial growers. BUT for the latest in disease-resistant varieties, or sweet corn or courgettes for cooler climates, then there is little option – F1 s maybe more expensive, but their advantages can be well worth the extra cost. The prejudice against F1 s is little short of ridiculous, a sort of spill-over from the rather hysterical opposition to GM breeding, a technology which by the way has yet to show any of the ill-effects that were predicted.  Much of the discourse around the seed swap movement reflects a kind of 'small is beautiful' romanticism. There seems to be a widespread belief that evil multinational corporations are hell-bent on forcing governments to ban varieties, forcing us into a kind of vegetable totalitarianism. In reality, the range of varieties has risen dramatically over the last twenty years, partly because more mainstream commercial varieties are available to the amateur, the expansion in the range of heritage varieties available, and the increasing interest in trying varieties from other countries. Above all, we are more adventurous and are demanding and fussier consumers, so the trade in vegetable seed has inevitably reflected this.
