It was the end of a blustery September.
I was standing under an overcast sky in foot-high mud being shown bitter crops. Fields of green, in all its wonderful various shades, rolled out before me. I was in Dorset.
My city eyes were slowly adjusting to being able to look far into the distance.
Organic
Guy Watson, owner and founder of, arguably, the UK's most successful organic farm, Riverford organics, stands knife in one hand, veg in ‘tuther.
As with any person who has a deep love for the work they do, he is fascinating to listen to. Although as a chef I can listen to discussions of all plant-based foods until the tofu comes home.
We had explored fields of artichoke, radicchio, dandelion leaves, and cime di rapa.
The finale was the cardoon field, a setting from Jurassic Park if ever I saw one. The cardoon has a very bitter stalk with a stunning flower similar to a thistle. This is a favorite of Guy's, as it can be grown so easily and in abundance in the UK.
Could cardoon be the new kale?
Cardoon
Cardoon certainly has an impressive nutritional profile. It contains cynarin, also found in globe artichoke.
This creates the bitter taste in both vegetables. But this compound is also said to lower blood cholesterol, aid digestion, stimulate the immune system, reduce risks of cancer, and improve liver and gallbladder function.
Cardoon contains a high amount of folic acid, potassium, iron, B vitamins, and numerous phytonutrients. Sounds impressive, and makes it a possible contender for the new kale but... the bitter tastes makes it challenging for UK palettes.
Bitter
Bitter food is fairly uncommon in the UK.
To reduce the bitterness in cardoon you must blanch it for a fair while. This makes it more time-consuming than our highspeed selves would like.
In my experience, teaching people how to cook healthy vegan food from scratch a lack of time is the most cited barrier - and one of the great qualities of kale is that it is quick to cook.
And so sadly cardoon is not the new kale but radicchio just might be (despite the lack of alliteration).
Radicchio
Radicchio is less bitter than cardoon with an equally impressive nutritional profile. And it is also a whole lot prettier!
Radicchio is now being grown in the UK by a handful of producers including Riverford.
An easy and stunning salad can be made with roughly sliced radicchio, a good balsamic vinegar, extra virgin olive oil, and a sprinkle of sea salt. I opted to make an Italian classic - radicchio risotto with red wine and borlotti beans.
Dish
In this dish, red wine reduces to a sweet, rich flavour, perfectly counterbalancing the slightly bitter radicchio.
Red wine may seem like an odd addition to a British eye that has only ever experienced the pale gold of a white wine risotto.
The milky mauve colour might be unnerving but rest assured this is an Italian classic and a very tasty one at that.
Inexpensive
This meal, for 4 people, cost ÂŁ5.33, showing that good food does not have to come at a great price. I swapped the typical white risotto rice for buckwheat and millet as they have a much higher nutritional content.
A bonus of using these grains is that you cannot overcook them as you can risotto rice. So it will chill and freeze well which is great news if there are any leftovers!
Ingredients
1T stock powder plus 1 litre of water
1T sunflower oil
2 small, or 1 large, onion, finely chopped
2-3 garlic cloves, finely sliced
1T nutritional yeast
100g/1/2 cup millet grain
100g/1/2 cup buckwheat
125ml/1/2 cup red wine
1 can borlotti beans, drained and rinsed well
1 large radicchio roughly chopped
1/2t salt
15g pine nuts, toasted in a dry pan and roughly smashed in a pestle and mortar
Directions
Add the stock powder and hot water to a pan, keep on a low to medium heat with a ladle in the pan.
Using a large frying pan heat the oil on a low to medium heat, add the onion, fry for 10-15 minutes until the onion is starting to soften.
Add the garlic, fry for another 5 minutes.
If the pan gets dry during this time add a splash of water rather than more oil.
Add the nutritional yeast, millet, buckwheat and red wine. Once the red wine is almost completely reduced add a spoonful of the stock.
Once that is almost gone add another and so on.
The grains should take around 20-30 minutes to soften completely. Now add the beans, radicchio and salt. Mix in and leave to warm through for 5 minutes.
Serve with a scattering of the pine nuts.

1. Carbohydrates

Carbs such as pasta, rice, fruits, vegetables, bread, and cereals are an ideal source of fuel for any training or games and these will provide the body with about 70% of your daily calories. They will give you enough of the fuel (which is produced by the starch and sugars that are in the carbs) that you need in order to keep your energy levels up and maintain that high power and strength that you will need to endure the rough game that is rugby. How to get the full potential from the carbs you eat All the carbs you eat should be eaten in large amounts before any game or training that will be going on longer than an hour so you can maintain that energy throughout the exercise. They say that your body needs 2-3 litres a day on average but it does vary depending on where you live in the world, your age, gender and of course if you are doing something physical like playing rugby. Heres a few tips on keeping hydrated properly  Don't go knocking back huge amounts of water like you are drinking a yard of ale, instead, drink more often and smaller amounts. Cold water will cool down your body temperature if drank and your body won't sweat as much (the less sweating you do, the less water that your body loses) Ideally, you should drink around 2 to 3 cups of water for every pound you lose during training or games. Always keep a Water Bottle close to you at all times whenever playing rugby or training.
3. Protein

Rachel Roddy’s recipe for arancine al ragù
Comiso’s Alessandro Pace makes arancine that are famous locally. He has built an experimental kitchen in southern Sicily, offering myriad shapes and flavour combinations – but none are so popular as this one, filled with ragù
Alessandro Pace had just turned 11 when he got his first job. His father, in an attempt to keep his wayward son out of trouble, arranged a summer job at a bar in their hometown, Comiso, a city with a handsome baroque heart in southern Sicily. Bar Corallo, in typical Sicilian style, dispensed short espressos, extravagantly sweet pastries, plump savoury snacks, gelati, granita sorbets, beers and amaro the colour of treacle. Its position across the piazza from the town hall meant most of the wares that left the bar were destined for officials and clerks. There was paternal strategy, too. Alessandro’s father was a clerk, so he could keep an eye and ear on his son as he ferried trays of cups and saucers back and forth along the marble-tiled corridors, and see if his plan would work. It did. In three months, the 11-year-old had collected more than enough tips to buy himself a new bike and discovered what he was going to do with his life.
Twenty-three summers later, Alessandro and I sit on the same sun-soaked piazza, watching kids on bikes and hoverboards circling groups of older men in white shirts on benches, who seem to be the eyes of the city. While we talk, several kids cycle past shouting “Ciao Sandro” – as does the owner of almost every car and scooter that passes; the man driving the Ape van full of tomatoes and aubergines; and the woman hoisting down a basket to collect a loaf of bread and a scratch card. He appears to know everyone.
Alessandro’s 23 years of serving these streets started with coffee and luminous aperitivi, then patisserie. Now he serves beautiful arancine, the finest cannoli, and something he calls porchetta dolce that is so luscious I need to write about it another day.
“Rice with a soul” is how Alessandro describes arancine. The Arabs first brought rice to Sicily and arancine were created out of necessity – a way of transporting meat for working lunches by giving it a robust rice coat, which in turn made for true sustenance – this was no time or place for bite-sized. Early arancine were simply meat and herbs, evolving with the arrival of tomatoes and the habits of making ragù and panatura – coating with breadcrumbs. In Palermo, they adopted the feminine form of the name, arancina; and, as the name suggests, they are the size of a small, heavy orange. In Catania, and eastern Sicily they use the masculine, arancino, and the rice is shaped like a cone. Other towns are gender-flexible. In Gela, you can find both balls and cones, arancina and arancino. Alessandro prefers the feminine, but has 16 different shapes for his 16 fillings. The first choice for many is arancina al ragù – a cone of saffron-scented rice filled slow-cooked ragù with peas ... a joyful sight.
Alessandro’s Cantunera began as a small operation on one corner, or cantu, of a junction near the piazza – now it’s dispersed over three corners making it feel like another small piazza.The newest space is an arancine lab into which I am invited. At the centre of the room is a large table for shaping. On one side, shelves run the length of the room. They are stocked with Sicilian riches: rice, local flours, crates of aubergines, tomatoes, wild greens, onions, jars of deep-red tomato concentrate, wisps of saffron, almonds and purple pistachios flashing emerald-green insides. The room smells of saffron and a rich meat ragù. Watching Alessandro work is almost soothing – the wayward kid is now a beautifully steady and precise chef. My first attempts do not look like his – more deformed jelly baby than cone – he assures me that I will get better.
That night, my partner’s cousins and friends arrive from Gela to see what what I’ve been going on about. We push three tables together on the widest part of the pavement, then feast on freshly fried arancine – ragù, pistachio, swordfish and aubergine; sausage and radicchio; aubergine and salted ricotta – while the nocturne of the three corners plays out: a father collecting his trays of a dozen arancine while his son waits in the car, kids on scooters mount the pavement to collect theirs, a couple courting over cones. Sandro is ever-present, sometimes behind the counter, sometimes serving tables, acknowledging everyone, watching as they break rice together.
Alessandro’s arancine al ragù
The arborio rice adds creaminess, the canaroli more distinct texture. You could use one variety. The recipe can be halved, but as it is so much work, make lots and freeze. Serve with beer.
Makes about 15 For the broth 6 tbsp olive oil 2 onions, peeled and roughly chopped 2 sticks of celery roughly chopped 2 carrots, peeled and roughly chopped 600g beef in large chunks 4 litres water

For the ragĂš 200g mixture of chopped onion, celery, carrot, parsley and basil (plus any herbs of your choice) 6 tbsp olive oil, for frying 500g minced veal or beef A glass of red wine 500ml passata Salt and pepper, to taste 200g peas
For the rice balls 2 packets (around 0.8g) of saffron Salt and black pepper 500g carnaroli rice 500g arborio rice 100g butter 100g grated cheese – caciocavallo, pecorino or parmesan are ideal Flour and water paste, or 2 beaten eggs, for dipping 2 handfuls of fine breadcrumbs Peanut or sunflower oil, for deep frying
1 Make the broth in a large (5- or 6-litre capacity) pan. Warm the oil, then fry the onion, celery and carrot for a few minutes. Then add the meat and brown it all over. Add the water, then bring to the boil. Skim, then reduce to a simmer for 2 hours, by which time it will have reduced by almost half. Strain.
2 Meanwhile, make the ragu. Fry the chopped vegetables and herbs gently until soft and translucent. Add the meat and fry until browned. Add the wine, increase the heat. When bubbling, add the passata, salt and pepper. Turn the heat down, then simmer for at least 1 hour. Add the peas in the last 30 minutes. Once the mixture is thick and rich, pull it from the heat, taste and adjust seasoning and allow it to cool.
3 Now, cook the rice. Strain 2 litres of broth, add the saffron and bring to the boil. Add the rice and cook until all the stock has been absorbed and the rice is cooked – you want it sticky and al dente, not stodgy. Beat in the butter and cheese. Let it rest until cool enough to handle. Meanwhile, have ready your pan of ragu, and a large tablespoon or serving spoon to measure out 50g or so of the mixture.
4 Take a big handful of rice (more or less 180g) then shape into an elongated ball. Use your finger to make a thumb-width indent, and fill will ragu. Then close by moulding the rice around the filling, into a cone shape if you can.
5 Dip each cone into the beaten egg or paste, then into the breadcrumbs. Leave to rest for 30 minutes.
6 Bring your oil to 180C/350F. Deep fry the arancine for 5–10 minutes, depending on size of the arancine, or until deep golden brown, then serve.

Spicy chicken noodle soup

Among the many food-related things I miss from China, being able to get delicious noodle soup at every street corner is definitely in the top 5. There are a few good Chinese restaurants in Berlin, however most of them will focus on actual dishes and give noodles a miss. That’s why I’ve been experimenting so much with noodles lately, because nothing is as comforting to me as a steaming bowl of noodles with a spicy broth and tons of toppings. 
The recipe below is partly inspired by this one over at Omnivore Cookbook (a recent find with tons of great Chinese recipes). 
The toppings are optional, but I have to admit I love a bit of spring onion and pickled mustard greens on pretty much anything. The star of the soup is definitely the doubanjiang (spicy bean paste) that gives the broth its wonderful spicy flavour. I know it’s a pain to purchase items that you feel will rot forever in your fridge after one single use, but I promise once you’ve tried doubanjiang, you’ll want to put it on basically everything.
Serves 2
Prep time: 30min
FOR THE CHICKEN
2 chicken breasts
1 clove garlic, finely chopped
1 small piece of ginger, finely chopped (it should be the same amount as the garlic)
1 tablespoon soy sauce
1 tablespoon Chinese rice wine (optional if you can’t find it) 
1 to 3 tablespoons doubanjiang (depending on how spicy you want it to be)
1 star anise
Some grated nutmeg
 White parts of 2 scallions, finely chopped
OTHER INGREDIENTS
1 tablespoon cooking oil (rapeseed, peanut, sunflower or similar)
2 baby pak choy, cut into quarters OR a handful spinach leaves
A handful frozen edamame beans, out of their pods
1 litre chicken stock
400g Chinese wheat noodles (I used dried Lanzhou hand-pulled noodles, but any kind will do really)
A handful chopped coriander leaves
Green parts of 2 scallions, sliced
2 teaspoons pickled mustard greens or pickled Chinese cabbage 
1. Place the chicken breasts in a shallow bowl with the soy sauce, wine, ginger, garlic and a bit of black pepper. Marinate in the fridge for at least half an hour.
2. In a wok, heat up the oil over high heat. Once the oil is hot, add the doubanjiang, star anise, grated nutmeg and chopped scallions  and stir/fry for 1 to 2 minutes. Add the chicken breasts and cook on both sides until golden. Add a small glass of water, turn the heat down to medium low and let simmer for another 10minutes. When done, take the chicken breasts out of the wok and cut into bite-size strips. Keep the sauce.
3. In a pot, bring water to a boil and blanch the pak choy or spinach quickly for 1 minute. Take the vegetables out with chopsticks and set aside, then add the edamame to the boiling water and cook for 5 minutes. Drain and set aside. 
4. Cook the noodles as per instructions on the packaging. Drain them and divide them into into 2 separate bowls.
5. Put everything else on top of the noodles: first the veggies, then the chicken broth, then as much of the spicy chicken sauce as you want, and finally the chicken strips. Top with chopped scallions, pickled mustard greens and coriander.

With delectable flavours and fragrant spices, Indian cuisine is certainly popular around the world. In addition to its wide variety of rich flavours, a traditional Indian diet also boasts of a wide variety of nutrients in a balanced quantity. However, on the flip side, obesity and diabetes still continue to be a significant public health concern for India.
According to the medical journal Lancet, the burden of diabetes is rapidly increasing in India and there is an estimated 72.96 million cases of diabetes in the adult population of the country as of now. Infact, India has been deemed as the world’s capital of diabetes. So, for a nation that boasts of lentils, fresh and fruits and vegetables as an integral part of its diet, where exactly did we go wrong?
Is our growing inclination towards western food (pizza, burger, fries etc.) to be blamed or is there more to the Indian diet? We connected with a renowned cardiologist and famous author Dr Aseem Malhotra and asked him to shed light on the same. In this riveting conversation, Dr Aseem touched upon several eye-opening facts and misconceptions about the Indian diet that continue to plague our minds even today. Here is an excerpt from the conversation:
The role of comorbidity and death from COVID-19 Dr Aseem emphasized on the fact that even as the novel coronavirus continues to wreak havoc across the globe, it is the people with underlying chronic metabolic diseases including high blood pressure, obesity and type 2 diabetes which are affected the most. India has the highest prevalence of type 2 diabetes in the world, which on an average reduced the life expectancy by up to 10 years.
The relationship between Indians and chronic metabolic syndrome In India, 43 per cent of people with normal BMI (Body Mass Index) are metabolically unhealthy. This means that a huge proportion of people are living in this illusion of protection thinking that they are not overweight or unhealthy.
Dr Aseem spoke at length about metabolic syndrome and how 1 in 3 adults in India are suffering from this syndrome. He defined metabolic health using these 5 parameters:
Your blood pressure should be ideally less than 120 over 80 mm Hg
You should not have pre-diabetes or type 2 diabetes
Your triglyceride levels should be less than 1.7 millimoles per litre
Your good cholesterol (HDL) should be greater than 1 millimoles per litre.
If you are a man your waist circumference should be less than 90 cms and for a woman, it should be less than 85 cms.
This essentially means that even if your BMI is ideal, if you have excess fat around your body or any of the above-mentioned parameters, you are probably not as healthy as you may think.
Extra sugar, fried snacks and refined carbohydrates: Everything wrong with the Indian diet Quite appropriately, when talking about the word ”diet”, Dr Aseem linked it to its greek origin ‘diaita’, which essentially means ‘lifestyle’. Surprisingly, 70 per cent of Indian diet calories come from consuming carbohydrates and most of them are not necessarily from the best quality of carbohydrates. These poor quality carbohydrates include a lot of sugar, flour-based products, snacks loaded with starch, loaves of bread, and white rice. Another shocking finding shared by Dr Aseem is that an average Indian consumes at least 15 teaspoons sugar in the form fruit juices, sweets, sugar-laden drinks and snacks. He underlined the fact that while one does not need any amount of sugar to stay healthy, the World Health Organization has drawn the upper limit on five teaspoons of sugar per day. This essentially means, Indians are probably consuming 3-4 times of sugar then they should.
Your diet can reverse type-2 diabetes Contrary to popular beliefs, Dr Aseem explained that it is never too late to change your dietary habits as it can help you reverse type 2 habits within weeks. This can be done by carefully monitoring your diet and changing the needful. For the uninitiated, Dr Aseem has been working with type 2 diabetes patients and empowering them to reverse the same with the help of lifestyle and dietary changes.
While he did not advise the patients to instantly stop taking the medications, he did recommend dietary changes for type-2 diabetes patients. He stated that medications and insulin for type-2 diabetes do not work on increasing the lifespan or reducing the chances of a heart attack and they also come with their side-effects.
When you work on reversing type-2 diabetes, you not only take away the immeasurable suffering of the patients and the impact this disease has on their nerves, eyes, kidneys etc but it also adds years to their lives, he added. Since the patients of type 2 diabetes tend to have a particular sensitivity to the sugars and refined carbohydrates, when they begin to cut down the sugar, rice, bread, potatoes etc, their blood glucose level may start to go down in a span of few weeks.
As a result, they may end up reducing the medication dosage when advised by their doctor. It was the end of a blustery September.
I was standing under an overcast sky in foot-high mud being shown bitter crops. Fields of green, in all its wonderful various shades, rolled out before me. I was in Dorset.
My city eyes were slowly adjusting to being able to look far into the distance.
Organic
Guy Watson, owner and founder of, arguably, the UK's most successful organic farm, Riverford organics, stands knife in one hand, veg in ‘tuther.
As with any person who has a deep love for the work they do, he is fascinating to listen to. Although as a chef I can listen to discussions of all plant-based foods until the tofu comes home.
We had explored fields of artichoke, radicchio, dandelion leaves, and cime di rapa.
The finale was the cardoon field, a setting from Jurassic Park if ever I saw one. The cardoon has a very bitter stalk with a stunning flower similar to a thistle. This is a favorite of Guy's, as it can be grown so easily and in abundance in the UK.
Could cardoon be the new kale?
Cardoon
Cardoon certainly has an impressive nutritional profile. It contains cynarin, also found in globe artichoke.
This creates the bitter taste in both vegetables. But this compound is also said to lower blood cholesterol, aid digestion, stimulate the immune system, reduce risks of cancer, and improve liver and gallbladder function.
Cardoon contains a high amount of folic acid, potassium, iron, B vitamins, and numerous phytonutrients. Sounds impressive, and makes it a possible contender for the new kale but... the bitter tastes makes it challenging for UK palettes.
Bitter
Bitter food is fairly uncommon in the UK.
To reduce the bitterness in cardoon you must blanch it for a fair while. This makes it more time-consuming than our highspeed selves would like.
In my experience, teaching people how to cook healthy vegan food from scratch a lack of time is the most cited barrier - and one of the great qualities of kale is that it is quick to cook.
And so sadly cardoon is not the new kale but radicchio just might be (despite the lack of alliteration).
Radicchio
Radicchio is less bitter than cardoon with an equally impressive nutritional profile. And it is also a whole lot prettier!
Radicchio is now being grown in the UK by a handful of producers including Riverford.
An easy and stunning salad can be made with roughly sliced radicchio, a good balsamic vinegar, extra virgin olive oil, and a sprinkle of sea salt. I opted to make an Italian classic - radicchio risotto with red wine and borlotti beans.
Dish
In this dish, red wine reduces to a sweet, rich flavour, perfectly counterbalancing the slightly bitter radicchio.
Red wine may seem like an odd addition to a British eye that has only ever experienced the pale gold of a white wine risotto.
The milky mauve colour might be unnerving but rest assured this is an Italian classic and a very tasty one at that.
Inexpensive
This meal, for 4 people, cost ÂŁ5.33, showing that good food does not have to come at a great price. I swapped the typical white risotto rice for buckwheat and millet as they have a much higher nutritional content.
A bonus of using these grains is that you cannot overcook them as you can risotto rice. So it will chill and freeze well which is great news if there are any leftovers!
Ingredients
1T stock powder plus 1 litre of water
1T sunflower oil
2 small, or 1 large, onion, finely chopped
2-3 garlic cloves, finely sliced
1T nutritional yeast
100g/1/2 cup millet grain
100g/1/2 cup buckwheat
125ml/1/2 cup red wine
1 can borlotti beans, drained and rinsed well
1 large radicchio roughly chopped
1/2t salt
15g pine nuts, toasted in a dry pan and roughly smashed in a pestle and mortar
Directions
Add the stock powder and hot water to a pan, keep on a low to medium heat with a ladle in the pan.
Using a large frying pan heat the oil on a low to medium heat, add the onion, fry for 10-15 minutes until the onion is starting to soften.
Add the garlic, fry for another 5 minutes.
If the pan gets dry during this time add a splash of water rather than more oil.
Add the nutritional yeast, millet, buckwheat and red wine. Once the red wine is almost completely reduced add a spoonful of the stock.
Once that is almost gone add another and so on.
The grains should take around 20-30 minutes to soften completely. Now add the beans, radicchio and salt. Mix in and leave to warm through for 5 minutes.
Serve with a scattering of the pine nuts.

SALTA & SPICE

It happened over dinner in Agozar! on Manhattan’s Lower East Side. Just like any good Film Noir. 
We were out with my Argentine cousin Steffi and her husband and had just tucked into a platter of spicy chicken empanadas, along with an array of other lip-tingling starters. I don’t know what made me say it – two cocktails down with an on-trend jalapeno spike, or the simple human urge to confide – but I blurted: “These empanadas are tastier than the ones I have eaten in Buenos Aires.”
Time did an emergency break stop. Steffi’s habitually sunny face snapped shut, and the atmosphere switched from fiesta to fucked-off faster than you could say ‘Mojito.’ “ I don’t think so,” she whispered curtly, eyes narrowed. Conversation shifted to more neutral ground for the rest of the meal. My comments soon went viral on our family Whatsapp group, and three months later I am still waiting for them to drop the subject.
The moral to this story is: never tell an Argentine that someone else does it better. A few blogs back I may have mentioned that Italian gelato is the best in the world. Fairly safe territory you would think but my husband told me I was taking a big risk putting Argentina in second place. In this instance, I was actually comparing a chicken empanada (not the traditional beef variety) with the Buenos Aires equivalent, and to be fair once any empanada takeaways stray from the original recipe, things can get a little shall we say, bland. In fact,  few can do empanada fast food in a country you thought would have nailed it.
What I didn’t realise, so little had I travelled around Argentina, was that I was judging this spicy Cuban delicacy against just one style of empanada. Let’s call it the Pasty of the Porteno. Beef, olives, egg and a smattering of herbs and cumin.
But my perspective broadened when I visited Salta this Autumn. Salta and neighbouring Jujuy are the Northern most provinces of Argentina. The air is thinner there, and the altitude higher. Step outside the city walls, and walk straight onto the set of a spaghetti western. Desert, cactus and dust. A world away from the 1930’s elan of the capital: more grounded, spiritual, visually stunning  - and most certainly poorer.

Salta isn’t parrilla country. You are more likely to be offered llama than steak. Not surprising given it’s proximity to Bolivia and Peru, the classic local dishes are tamales and humitas, not morcilla and provoleta. But the biggest difference here is their use of spices. They actually have a spice market in Salta where Buenos Aires society recoils in fear at the mention of a red pepper.
We ate our first Saltena empanadas in Quebrada de Humahuaca, a town of dusty beauty in a dramatic desert setting three and a half thousand feet above sea level. This was day two of our trip, and the night before we had eaten our first ever disappointing Argentine steak. A restaurant where they were disinfecting the glass door as we entered and mopping the floor as we were sitting down. The state of the bread rolls should have had us guessing how it would end. But that was yesterday and today we were full of hope and high on little oxygen.
The steps up to the restaurant had left me bewilderingly short of breath and light headed, thanks to what I was reliably informed later was mild altitude sickness. They served empanadas to start, which were pleasingly spicier than the norm, but nothing to write home about (and only written about here to keep the narrative thread going). This was followed by llama stew (sometimes you just eat stuff for the experience), and then a dessert that tasted better than it looked – cayote jam and goat’s cheese. The cayote plant is native to the region so don’t expect to see it in Sainsbury’s or Walmart any time soon. It tasted pleasant and sweet but the fruit flavour was non-specific.

By day three in the North, we finally started to get our food choices right. First up  - and you will gasp at this in the land of the cow on a spit -  we found perhaps one of the world’s best vegan rstaurants. The guidebook write up said we should be prepared to wait ages for our food in Chirimoya, but as it turned out, we didn’t wait that long, and it didn’t matter anyway. The atmosphere was like a day spa but with seductive food aromas instead of aromatherapy oils. We whiled away a stress-free couple of hours drinking freshly blended fruit juices and working our way through a platter of Pico lo Macho – their vegan interpretation of the classic Bolivian stew.

And second and most significant, we ate the best Saltena empanadas, and (I am happy to stake my reputation on it), the best empanadas I have ever tasted. They are served in La Criollita, a restaurant straight out of the 1940s, with caricatures of famous Argentine crooners and comedians on the walls and a proprietor straight out of ‘Allo ‘Allo. The empanadas were hot little parcels of yum and left a pleasing chilli hum on our lips, while the humidas and tamales we were then emboldened to order were simple yet moreish. Ambrosia in a cornhusk.

I liked the idea of the jam and cheese dessert in Humahuaca, so have finished here with a dish that replaces the elusive cayote jam with home made membrillo, (the classic Argentine quince ‘cheese’) and goat’s curd whipped with crème fraiche. As my Auntie Grace would say, if you don’t like it then Hasta Luego!
 Saltenas Empanadas

Worth doubling this recipe, (my version of Enrique Zanoni’s recipe from Argentinian Street Food) if you are having a party. Easy to hold in one hand with a glass of wine in the other, though they do benefit from a dip in the accompanying tomato salsa, which could make a small plate necessary. Makes 8-10 empanadas.
Ingredients For the dough:
500g plain flour
2 tsp salt
80-100 ml sunflower oil
For the filling:
1 tblspn sunflower oil
250g rump steak, chopped into very small cubes
1 sliced red onion
2 tsp ground cumin
1 tsp ground coriander
1 tblspn Mexican ancho paste
1 tsp paprika
3 hard boiled eggs, chopped
1 potato, peeled and chopped into small cubes
Grated zest of ½ a lemon
 For the tomato Salsa:
3 medium tomatoes
1 onion, finely chopped
1 small red finger chilli, diced
1 clove garlic, crushed
1 tbsp dried chilli flakes
1 tbsp cayenne pepper
60ml extra virgin olive oil
 How to make:
Pop the potatoes into some boiling salted water and cook for about 10 minutes. Remove the potato and put to ones side, then add the rump steak to the boiling water and cook for 3 mins. Drain and set aside.  Saute the chopped onion in the oil on a low heat until softened and slightly caramelized, around 10 mins, then add the meat, the spices and the potato. Take off the heat, season with sea salt and freshly ground pepper and set aside while you make the dough. If you wish you can cover this and keep it in the fridge for several hours to develop the flavours.

 For the dough: Add the sunflower oil and 180g water to the flour and salt in a bowl. Mix until it has come together and then turn out onto a floured surface and knead for about 10 minutes until smooth and elastic (this is not flaky pastry you are making but a robust casing). Wrap in clingfilm or foil and rest for two hours.
While the dough is resting, make the salsa. Grate the tomatoes into a bowl, discarding the skin. Mix in the remaining ingredients and season with sea salt and freshly ground black pepper.
Roll out the dough onto a floured surface and, using a 14cm round pastry cutter, cut the dough into rounds. Spoon a tbpn of the steak and potato mixture into the middle and top with a little boiled egg. Moisten the edges with a little water, then fold into a half moon shape and seal the edges. Then fold the edge of the empanada into a series of little pleats (see photo) to give it the classic decorative edge. Repeat with the remaining empanadas.

Fill a wok with a litre of sunflower oil and heat to 180C or until a cube of bread turns brown and crisp in the oil. Carefully add a few empanadas at a time to the oil and fry for about 5 minutes, turning if necessary, until they are browned. If they are starting to brown too quickly, turn the heat down a little.

Drain on kitchen paper and serve warm with the salsa for dipping.

Vegan Pico lo Macho

This dish is a simple process of cooking, chopping and layering.
If you stick to the overall rule of mixing cooked, ambient and raw vegetables together, then you can pretty much make up your own combinations here. The real wow factor of this dish are the fried quinoa patties. If you are not vegan, you can substitute the tahini paste for a whisked large egg as a binding agent. Serves 4.
Ingredients
300g padron peppers
500g small new potatoes
1 large red pepper
1 large or 2 mall ripe avocadoes
Juice of 1 lime
1 large red onion,
raspberry vinegar
200g quinoa
tahini paste or 1 whisked egg
4 tomatoes, and 10 cherry tomatoes
250g chestnut mushrooms
25g olive oil
300ml olive or sunflower oil
 How to make:
Boil the new potatoes in plenty of water and some sea salt until they hold their shape but you can easily pass a knife through them. Toss in a little olive oil and set aside.
Cook the quinoa according to the instructions on the packet, then cool. Mix with the tahini paste and form into small flattened discs.
Char the red pepper and pardon peppers on a griddle until the skin blackens. Chop up and de-seed the pepper and toss the padron peppers in sea salt.

Cut a large red onion into rings and soak in enough raspberry vinegar to cover. Chop the tomatoes. Chop the mushrooms and fry in the olive oil until the juices start to run, then set aside (don’t discard the juice). Chop the avocadoes and toss in the lime juice.
Heat the olive or sunflower oil and fry the quinoa patties on both sides until golden. Drain on kitchen paper.
To assemble: Layer the vegetables, contrasting colours and textures and pouring the mushroom juices all over, on a platter, then dot the quinoa patties all around. If you wish, garnish with chopped parsley and serve immediately.

One of my abiding childhood memories was of my Auntie Joan bringing over tins of membrillo when she visited us in London. Quinces are only in season for about a month here – mid October to mid November –but if you can find them, and work with them (they are unsympathetic to peel and chop as this picture shows) then this paste-like jam is easy, if not quick, to make.

Makes enough for 18-20 slices. 
Ingredients:
For the membrillo:
3 Quinces, peeled, cored and cut into large chunks
1 large bay leaf
1 vanilla pod, split
Caster sugar (amount to be determined by quanitity of cooked quince).
To serve 4: 100g goat’s curd (you can buy this at Wholefood Stores or use cream cheese as a substitute); 2 tbpn crème fraiche.
How to make:
For the membrillo. Pop the quince chunks into a saucepan and cover with water. Add the split vanilla pod and the bay leaf. Bring to the boil then cover and simmer for around 40 minutes or until the quinces are soft enough to slide a knife through easily.

 Drain the liquid from the quinces, discard the vanilla pod and bay lead and liquidise in a food processor. Measure the quince puree back into a saucepan (should yield about 3 cups) then add the same quantity of caster sugar as you have quince puree. Cook over a low heat, stirring constantly until the sugar dissolves, then continue to cook, stirring occasionally for about 11/2 hours, until the pale yellow puree has gone a dark pink.

 Heat the oven to 100C. Pour the cooked paste into an 8in pie tin which has been greased and lined with baking parchment. Continue to cook in the oven for an hour. Remove from the oven and cool. At this point you can cover and refrigerate if you wish.

 To serve: whip the goats curd with the crème fraiche and smooth a generous tsp onto each plate. Add a slice of membrillo and enjoy.
