(Cold) a iced brown sugar cafe mocha/ salted maple mix with Java chips, vanilla foam, a pump of vanilla and hazelnut surup with a double shot expresso con panna. Mozzarella & tomato panini. 🍹
Humphrey: cold foam iced cappuccino with caramel syrup and chocolate sprinkles. 🧋
Mike: either a iced chai tea latte with vanilla cold foam and hazelnut syrup or a mint citrus tea. He also gets a chicken Caesar wrap & a lemon & poppyseed muffin. 🧁
Alison: pumpkin spiced latte with vanilla syrup and or a iced caramel latte with extra caramel syrup and maple cold foam. Sweet potato & pumpkin seed fritter wrap with a white choc/raspberry blondie. 🫔
Julian: grande americano with a sneaky shot of something off-menu. Ham & cheese croissant with almond biscotti. ☕️
Robin: like a big cup of vanilla cold foam underneath 10 pumps chocolate syrup with Java chips and chocolate sprinkles. A bacon sandwich & some ham too. 🥓

what do you put on your crepes?
Ohh… yes that is a good question (There are no wrong questions! Only odd or confusing ones..)
Anyway, I like to put:
Fruit. You know, strawberries or bananas (sometimes both). Perhaps blueberries and raspberries instead.
Heavy cream or whipping cream! Pairs excellently with the fruit!
Ice cream, specifically plain, vanilla, chocolate or double chocolate chip! It’s absolutely divine!
Maple syrup as well, you can never go wrong with syrup. Or honey!
My crepes already have cinnamon in them, however… more cinnamon on top.
Sugar, specifically my favourite sort: demarara sugar. The thicker the better. Unrefined and good with baking!
A spread of some sort. Like jam, hazelnut chocolate spread, biscuit spread, etc.
Chocolate sauce is a favourite as well.
and cookies crumbled on top!
You didn’t ask, however….
Crowley likes simple lemon juice and sugar. My crepes are far more over indulgent in comparison.
As you can see, I do enjoy crepes…

Maple Praliné Chocolates

These Maple Praliné Chocolates make an excellent gift, to others or oneself!, to beguile the hours on Christmas Eve before midnight strikes! Have a merry one, friends!
Ingredients (makes about fifteen chocolates):
170 grams/6 ounces good quality dark chocolate (at least 65% cocoa)
80 grams/2.85 ounces Praliné
1 1/2 tablespoon pure (Grade A) Canadian Maple Syrup
In a medium bowl over simmering water, melt 130 grams/4.5 ounces dark chocolate, until smooth, shiny and silky. Remove from heat, and stir in remaining dark chocolate with a spatula, to help chocolate cool. Then, return over simmering water, until smooth and slack again, to temper. Remove from the heat.
Spoon Praliné into a small bowl. Stir in Maple Syrup and about two tablespoons melted dark chocolate until well-blended. Place in the refrigerator, an hour, to chill.
Using a clean brush (like a small paint brush), coat the bottom of sides of fifteen indentations in a silicon chocolate mold with melted dark chocolate. Chill in the refrigerator, half an hour, then reapeat, to make sure there is no uncoated spaces left. Return to the refrigarator, to chill and harden, another half hour.
Spoon about ¾ teaspoon of chocolate Praliné mixture into each chocolate case, and return once again to the refrigerator to chill, a quarter of an hour.
Finally, spoon about a teaspoon of melted chocolate onto the Maple Praliné of each chocolate, spreading to the edges to form the base. Return to the fridge and chill at least a couple of hours.
Just before serving coffee after lunch or dinner, carefully remove Maple Praliné Chocolates from the mold.

Coffee hacks to reach your weight loss goals
Coffee is a necessity for several people. And it even has health benefits, like it keeps blood pressure in check. Also, it can even increase your metabolism, which helps with your weight loss goals. However, several people become careless with their coffee drinking habits, which gives it a bad name.
If you drink your coffee black or with low-fat milk and without excess sugar, it will not derail your weight loss effect. However, if you drink calories by introducing cream and sugar in your milk, it will undoubtedly increase your weight.
So, the next time you drink pods flavor coffee, remember to make it healthy by not adding any additives. Here are few other coffee hacks to keep in mind to reach your weight goals.
1. Coffee should never be your first meal in the morning
Several people drink coffee first thing in the morning without even eating a bite of toast. It is not ideal. When you drink coffee empty stomach, it destroys your hunger, and you end up skipping meals. That leads to overeating in the day.
The best thing to do is to eat something first and then enjoy your coffee. You can even drink it with your breakfast.
2. Don’t drink coffee late in the day
Around 4-5 pm, we start to feel sluggish, and hence we want to drink a cup of hazelnut flavored coffee pods. However, it can disturb your sleep and even impact the quality of the same. When you don’t get enough or proper sleep, you are annoyed the whole day. Also, it makes you choose unhealthy food, and you end up eating too much or too little.
3. Limit the amount of sugar you add in your coffee
Added sugar, which you can add to your coffee in the form of creamers or syrups, or at the table adds too many calories to your drink. The ideal sugar intake for women daily is 25 grams and for men is 36 grams.
If you want flavor in your coffee, you can add vanilla extract or peppermint, or nutmeg. If you like sugar, add stevia instead or drink only one cup of coffee with sugar.
4. Limit artificial sweeteners as well
Artificial sweeteners like honey or maple syrup need to be used in limits as well. They don’t have many calories, but they don’t even add any value to your diet.
And when you use them continuously, it can stop your weight loss plan. It is best to stick to non-sugar coffee drinks or drink once in a while with sugar.
5. Try flavored coffee
Sometimes, you crave sugar coffee because it undoubtedly enhances the taste of your coffee. So, instead of giving in to your cravings, try flavored coffee like caramel or vanilla, or hazelnut. Look for brands with zero added sugar in their flavored coffee. It will twist things up, which is just perfect for you.
6. Do not pair coffee with unhealthy things
If you pair your coffee with biscuits or cookies, it will be unhealthy. Doing it once a blue moon is fine. However, doing it regularly is never ideal.
With these hacks, you can drink coffee without letting it affect your health or diet plans.

Hazelnut Cream Bars
A biscuit base, smooth hazelnut centre all topped with dark chocolate – these hazelnut cream bars are so delicious and dreamy!
I made these copycat Kinder Bueno Bars a few weeks ago and they were a massive hit! What I love most about them is that the hazelnut cream centre is literally made up of 2 ingredients only – white chocolate and hazelnut butter! I just love recipes with few ingredients. I wanted to use that 2 ingredient hazelnut cream and incorporate it into another one of my popular recipes – these Biscoff Squares.
These hazelnut cream bars are made using healthier ingredients like oats, ground almonds and hazelnut butter. I always try to use less sugar/sweetener in my treats for 2 reasons:
To make them healthier than other treats (just because you’re having a treat, doesn’t mean it has to be all bad!).
I prefer my desserts not to be sickly sweet! (that’s why I prefer dark chocolate – the bitterness cuts through and balances out the sweetness).
Having said that, these bars are still a treat and they do contain sugar (whether that be refined or not – sugar is still sugar!), and so should be enjoyed in moderation.

Hazelnut Cream Bars
Makes – 8 bars
Ingredients
For the base 70g ground oats 50g ground almonds 1/4 tsp salt 1 tbsp maple syrup 3 tbsp coconut oil, melted
For the filling 100g hazelnut butter 60g white chocolate (regular or vegan)
For the chocolate topping 100g dark chocolate 1 tbsp coconut oil
Method
Mix all the base ingredients in a bowl, then transfer into a loaf tin lined with baking paper (I used a 22×12 cm loaf tin). Press down using a spatula and freeze for 15 minutes. Break the white chocolate into a heat-proof bowl, then microwave for a couple of minutes to melt. Give it a stir every 30 seconds or so to make sure it doesn’t burn! Fold in the hazelnut butter, then spread over the chilled base. Freeze again for 30 minutes. Melt the dark chocolate and the coconut oil in a bowl in the microwave, then pour over the hazelnut layer. leave to chill in the fridge until the chocolate is set, then remove from the tin and slice into squares. Enjoy! Store in an air-tight container at room temperature for up to 4 days. It’s best stored in the fridge if you live in a hot climate.

I’m unwinding for the day and think writing is a wonderful way to do so. I love a notebook and pen but my thoughts manifest to words in front of me much faster when I type them. I woke up this morning and walked Chevi. I only snoozed my alarm a couple of times which was nice. A cardinal crossed my path today and when I stopped to search for him and really take a look, he was gone. I headed to get coffee because I’d been thinking about it and the hazelnut cream gloriness. It really isn’t nutritious or benefitting me in anyway but as a treat occasionally before the gym and work, and at work when it’s free, is ok. The hazelnut almond cream is delicious and the girl in the drive thru told me where to get it. I also like the locally roasted coffee. I used to have it at mom’s with maple syrup and almond or soy milk. I did a quick workout at the gym of various things keeping busy. I noticed a girl and her boyfriend training and she followed him around the gym like a puppy. I also couldn’t help but notice that while it would be adorable to have someone train with you, I also like seeing the girl in the mirror kicking her own butt with medicine balls, dumbbells and squats. I did some glute clentching and rowing too then headed to work. Turns out I was a bit early so I was able to relax for a few minutes and read. When the clock became time for my shift to start I noticed the floor was a complete mess, the tables were not wiped and the ice cream scoops had been left in the pitcher. I understand that maybe the mind is a million miles away but it’s important to be conscious enough to not leave a place in shambles. I hoped Mitchell would notice, which he did, and I decided to let him talk to her about it instead of me. Picking and choosing my battles has really been on my mind lately but sometimes enough is enough and I wanted to leave a note. I didn’t. Mitchell made the day stimulating like usual and I realize that the job would be pretty boring if he wasn't around or so talkative. He has a passion for knowledge and his enthusiasm about various things especially culinary shows through just like my interview with Randi at the gym I haven’t decided if Ill take yet. Mitchell also reminded me it’s possible to bring in stimulation to whatever task you’re completing. I made pistachio chocolate cookies which we didn't bake off, learned to properly make soft boiled eggs, correctly steep earl grey tea (around 5-7 minutes) and enjoyed a bit of his black bean and corn soup and a kale salad. I was able to sneak a stimulating conversation with a german man who told me, thanks to my curiosity of putting water with a splash of orange juice. He called his daughter my princess and told me a lot of the fruit and vegetables in Germany are from Spain. During my break I continued reading Jaycee’s story. Once work was done I went to visit the sheep and gather some thyme. The sheep were panting and it’s no wonder they get sheared in the summer. These ones however did not and I’m not sure if it was the heat, but they were extra curious and I even pet them. I found out they don’t particularly like chips but the salt intrigues them. Unlike the squirrel I saw running up the tree with a biscuit in his mouth. Kristina a worker told me the sheep like to huddle in the heat so less sun hits them overall as a group. It’s very considerate of them and they are always on the lookout for eachother. Daddy was fairly preoccupied today with his own things so I painted and read instead of too much chit chat. I’ve been getting stronger and not taking things so seriously when people don’t want to spend time with me. He did take me to the barn and we walked to the park together. Tex was really good and we had a fun canter. We rode in the grass ring without a halter which Cam came over and discouraged but I’ve been lucky Tex hasn’t gotten away with me. Cam’s dad chatted with us about his goat consumption. He informed me dairy goats, just like dairy cows, are still ate. Right now Daddy is scratching me and has decided he feels like cuddling. That along with watermelons is a nice way to end the day.

So I still haven’t eaten breakfast today because of the horrible “nothing I want to eat in the house” + “making and eating food is too much work and I’m too tired to do any of that because I haven’t eaten yet today” THING so instead I ate three chocolates from the giant Valentines box and made a list of what I would have on the menu if I ran a cute local cafe.

My sister and I are usually the ones in the kitchen. The other day, we tried a really nice pasta: it was super easy. I used butter as the base, some garlic, some chilli flakes, hazelnuts (you can use any nuts you have at home). I also used fresh sage, but if you don’t have any fresh herbs, you can use any dried herbs, or basil. We just tossed them all together in a pan and added the pre-cooked pasta, and just a sprinkle of Parmesan on top. It all came together in 10 minutes.
We have also been trying a number of Goan dishes, mainly from my grandmother’s traditional recipes. I had made a chicken cafreal from her recipes, and also a vindaloo – it’s too hot for a vindaloo now. The dish is very spicy, and we are trying to eat as light as possible because it is so hot even with all the ACs on.
I also made a mango parfait recently; it is another very easy recipe. It took five minutes to make. It is like a cheese dessert, you know: you can use crushed Marie biscuits or digestive biscuits as the base. For the filling, we just used some cream cheese, heavy cream, vanilla and sugar. I whipped it all together, put it on top of the crust, and put some fresh mangoes on top; you can put whatever fruit you have lying around.
No-bake peanut butter banana chocolate chip granola bars
Ingredients: 1 cup pitted whole dates; 1 cup ripe banana; 1/2 cup oats; 2 tsp flaxseeds; 1/2 cup sliced almonds; 1/2 cup peanut butter; 4 tablespoons honey; 2 tablespoons maple syrup; 1 teaspoon vanilla essence; 1 cup rice krispies; 1/3 cup mini chocolate chips; 1/2 teaspoon cinnamon (more if desired); pinch of salt
Method: Line an 8×8 dish with parchment paper and set aside. In a food processor add dates and banana. Blend until the mixture is broken up and looks mealy. Add in the rolled oats, almonds and flaxseeds and process for a few seconds just to help break up the oats. In a large bowl stir together peanut butter, honey, maple syrup and vanilla essence. Add the date/oat mixture to the bowl along with the puffed rice cereal, mini chocolate chips, cinnamon and salt. Stir to combine. Once the mixture is stirred together it should be sticky enough to stick together when pressed. If the mixture is not sticky enough, add a little more honey. Add the mixture to the prepared dish and firmly press down into the pan. Let the mixture sit in the fridge for about an hour before cutting, just to help firm up the granola bars. They can be eaten right away but will be a bit soft.

We make granola at home, too – I like homemade granola. My sister and I make some every three or four days, because it gets over very fast. I also made a strawberry parfait earlier, with yoghurt, honey and the granola. One day, we also made some Brazilian cheesy bread.
Usually, I eat only three meals a day: breakfast, lunch and dinner. I don’t normally snack in between. But nowadays, I usually end up having something during tea-time. It is mainly traditional stuff, like poha or sheera, or semaiya (vermicelli) sheera. I have been making quite a few tea cakes as well.
And we have been doing a lot of work calls lately, during which I have been drinking a lot more tea or coffee than I usually do. Most of my day goes into work: when my husband and I wake up, we spend about an hour with our son, and then we are on call with the team till about lunchtime. Then after lunch, we are back on the phone.
Right now, everyone is in strategy mode: trying to figure out how to maximise deliveries, what we need to open up, what needs to stay closed, especially in Pune. Pune is a lot stricter in terms of rules, so we are trying to figure that out. Everyone is struggling, try to figure out salaries and other things. So there are a lot of calls, not just with our team but other people in the industry as well.
