One thing I completely forgot to mention. For anyone who eats meat: A GOOD BUTCHER! Too many people really need to find a good butcher, because more than half the "bland" meat based dishes will remedy themselves if you find a good butcher. Especially if you manage to build a line of communication to get cuts of meat as fresh as possible, you'll get fresh and well tasting meat. There's a world of difference between a good butcher's cut piece of meat, and most of what you might find in a supermarket. You know how chicken is considered some of the driest and least flavourful meat? If you get a good butcher who knows some chicken farmers, you might actually be able to get some actual fat and flavourful chicken that gets to eat grass and whatever it can find outside, instead of the mass production farm chicken that get feed with pellets. So much can impact the flavour of meat. You'll also feel much more satisfied eating meat only a few times a week if those cuts actually taste good and filling, which can cut down on your meat consumption, obviously also paired with fresh and flavourful veggies and other sides. And so we don't forget it, same goes for a seafood market. Especially seafood honestly. Some seafood really only tastes good "out of the water, into the pan, onto your plate." If it takes too long, you'll end up with less than stellar tasting meat. You also get fish and seafood that way that hasn't been processed with chemicals and other additives to keep it fresh longer. Flash frozen is also a valid form to get fresh unprocessed fish, so don't be afraid if you hear the fish you're buying was flash frozen. And for vegetables and fruit: A good farmer's market, or at least a list of in-season veggies and fruits. Veggies and fruit will always taste best within their harvesting season. A farmer's market will often have more focus on flavour and actual aroma, rather than how supermarkets some times mostly focus on the looks of the produce. Some vegetables and fruits that you get at the supermarket might be watery and bland, or even dry/woody and stringy, while the farmer's market, mainly/especially for local produce will be a lot more flavourful and aromatic. Having the option to use veggies that actually taste like something really does a world of difference for your diet!

There's a place in the Bay Area where you can go select your chicken or duck and wait for them to slaughter it. Depressing, maybe, to have to look your dinner in the face before it's killed, but one meets an interesting cross-section of Chinese immigrants, people who want halal food, etc. Last time I was there, a little old lady told me I needed to make chicken soup immediately on returning home and not refrigerate the chicken, wait, or try to do dishes like roast chicken that require more fat because these particular chickens are too lean.
She said most people have never tasted a proper dish made from freshly killed chicken, at least around here.

I gotta start getting really efficient with my meals I think. Hella bang for my buck. Rice, potatoes, ramen, eggs, canned tuna, all fortified with Aldi cheese and frozen veggies. My job is 12 hour shifts and I can't be buying a day's worth of food from the highway robbery rates of Wallace & Wallace.
Does anyone have suggestions? Really filling stuff that will find a fridge agreeable for at most 3 days (well; stored for 2, eaten on 3).
I'm already thinking abt croquettes, different kinds and manners of fortified ramen, Hella dense macking cheese bakes (thank you MF Doom).
The only thing would be no pork and ideally no land meat bc it's gotta be halal and ideally inexpensive (so halal meats are gonna be off the table for the most part).

Imported chicken products recalled for Listeria

Al-Safa US LLC, the importer of record located in Mississauga, Ontario, Canada, has recalled approximately 2,010 pounds of imported frozen ready-to-eat chicken products that may be adulterated with Listeria monocytogenes, according to USDA’s Food Safety and Inspection Service (FSIS).
The frozen ready-to-eat chicken products were produced in Canada on June 5, 2024, and imported to the U.S. on June 13, 2024, and June 21, 2024. The following products are subject to recall:
12.1-oz. cardboard box package containing “Al Safa Halal Charcoal Grilled Chicken Seekh Kebab Grilled, Minced, Chicken Patty Kebab” with “NOV 30 25” and “0605404” printed on a sticker on the outside of the package.
14.11-oz. cardboard box package containing “Al Safa Halal Fully Cooked Chicken Chapli Kebab Seasoned Chicken Patty” with “NOV 30 25” and “0605416” printed on a sticker on the outside of the package.
The products subject to recall bear establishment number “866” inside the Canadian mark of inspection. These items were shipped to retail locations nationwide.
The problem was discovered after FSIS performed routine product testing, which indicated that the product may be contaminated with Listeria monocytogenes.
There have been no confirmed reports of adverse reactions due to consumption of these products. Anyone concerned about an illness should contact a healthcare provider.
FSIS is concerned that some products may be in consumers’ freezers. Consumers who have purchased these products are urged not to consume them. They should be thrown away or returned to the place of purchase.
Consumption of food contaminated with L. monocytogenes can cause listeriosis, a severe infection primarily affecting older adults, persons with weakened immune systems, and pregnant women and their newborns. Less commonly, persons outside these risk groups are affected.
Listeriosis can cause fever, muscle aches, headache, stiff neck, confusion, loss of balance, and convulsions, sometimes preceded by diarrhea or other gastrointestinal symptoms. An invasive infection spreads beyond the gastrointestinal tract. In pregnant women, the disease can cause miscarriages, stillbirths, premature delivery, or life-threatening infection of the newborn—in addition to serious and sometimes fatal infections in older adults and persons with weakened immune systems. Listeriosis is treated with antibiotics. Persons in the higher-risk categories who experience flu-like symptoms within two months after eating contaminated food should seek medical care and tell the healthcare provider about eating the contaminated food.

Tempat makan (warung makan) halal yang mudah ditemukan, penjual makanan halal Indonesia yang dekat, atau minimal frozen food halal (timur tengah, Arab) dengan beberapa pilihan tak bisa aku lihat di dekat tempat tinggalku. Ada namun cukup jauh. Harus ditempuh dengan kereta sekitar 17 menit dan sebelum itu ke stasiun dengan sepeda 10 menit, belum dengan menunggu kereta dan berjalan kakinya menuju toko. Agaknya hal ini membuatku bersiap akan benar-benar memasak setiap hari dan akan jarang sekali makan di luar karena lebih nyaman di rumah dan tentunya lebih hemat waktu dan ongkos.
Keterampilan memasak yang belum begitu panjang jam terbang tentunya membuatku khawatir. Khawatir masakan kurang enak (kelebihan atau kekurangan bumbu), salah proses (kontaminasi silang, gizi berkurang atau hilang) atau salah resep <alhamdulillah yang satu ini belum pernah terjadi>. Namun, kecemasan itu hanya sejenak aku rasakan karena benak dan pikiran terfokuskan dengan, "akan masak apa aku besok dengan bahan yang ada?". Bahan makanan halal yang terbatas alhamdulillah cukup mudah diatasi karena ada satu Supermarket yang menyediakan bahan makanan dan kudapan dari berbagai negara (termasuk Indonesia) walaupun tidak banyak pilihan dan cukup berbeda rasanya, contoh saja tempe dan tahu. Tentunya di lidah lebih cocok yang biasa dijual di kampung halaman. Pesan antar makanan seperti Go Food tentu tidak ada, hanya saja ada orang Indonesia yang menjual lauk pauk masakan Padang atau masakan Nusantara lain yang tentu ada ongkos kirim dengan jarak tempuh yang tidak dekat.
Menikmati proses level-up memasak dalam keadaan terbatas seperti ini mengingatkan ku materi kajian dari Ust KH Syatori Abdurrauf, Beliau menyampaikan "Kesulitan yang kita hadapi adalah tanda bahwa Rahmat Allah akan turun jika kita ikhlas, sabar dan tetap ikhtiar". Bahwa ketidaknyamanan, kekurangan, kesulitan dalam hal apapun (termasuk finansial, ujian menghadapi orang tua, anak dan lainnya) bisa mendatangkan Rahmat Allah selama kita sabar, ikhlas dan ikhtiar. Jadi, keterbatasan pilihan makanan halal di sini semoga menjadi sebab datangnya salah satu Rahmat Allah kepada kita umat Muslim disini.

Spaghetti Bolognese. You can kinda fuck with it a lot, but I do have mainstay ingredients that I chop and change on the fly. (Sorry Italians, this is largely based on British style Bolognese with some Chinese/Japanese influence. This is not even slightly traditional!)
Beef mince, medium fat (not high cause it'll just float to the top.)
(Vegan mince will work, but I suggest the rehydratable soy flake style with a bunch of yeast extract/Maggi added.)
Chopped tomatoes (tinned or fresh, but if you're going fresh, go vine. Use tinned if you don't like skin and can't be arsed blanching and peeling.)
Finely chopped onion (I really don't care what type)
Beef stock cube (a GOOD one, and NOT liquid, sometimes the vegetarian beef ones can be so much better than regular beef, regardless if you're veggie or no.)
Tomato paste (a lot, just go crazy with it.)
Cumin (again, go crazy, don't skimp on the spices yo.)
Fresh chili (even if you don't like spicy, you can deseed and take out the pith for the chilli flavour without the spice.)
Red wine (use an entire one of the little bottles. Cooking wine is not an option. Vegetarians be careful! Not all wines are veggie as some clarifying agents can use fish by-products. If you're non-alco/halal/etc, you caaan use balsamic or red wine vinegar, just don't use a whole ass bottle. Like maybe... a quarter cup? You'll be burning it off anyway)
A neutral oil (for the initial frying, something like vegetable/sunflower/peanut/rapeseed. you don't need a lot and DON'T use olive oil for frying, it burns so easily. Use virgin olive oil at the end to add some additional somethin' somethin')
Garlic (all of it. Loads of it. Frozen or fresh. Powdered in a pinch. Come on now don't be a wuss here.)
My maybes:
Some sugar (cause sometimes it CAN be sweeter.)
Baking powder (added in at the end if you feel like you need to kill the sharpness of it, it'll react with the acids in it and neutralise it, generally resulting in a more 'savoury' Bolognese.
Grated carrot (You don't have to add this, I'm generally 50/50 on it, it's very much a British thing and adds to the sweetness so if you use one skip the sugar.)
White pepper. (Cause black pepper can get a little lost in it all, and I like the heat of white pepper.)
Szechuan pepper (sometimes? I just like Szechuan pepper.)
Sesame oil (for the same reason as Szechuan pepper.)
Yeast extract (maggi liquid seasoning/Winiary przyprawa) or MSG. (I don't like MSG as much in this style of food, but it's really up to you. If it's already quite savoury don't bother at all)
Finely chopped dried sliced mushrooms. (They work to thicken the sauce, and adds some additional texture and savoury taste. I don't generally add them if I'm cooking for others cause mushrooms can be a bit of a love-em-or-hate-em thing. If you're looking for dried mushrooms, most Asian supermarkets will have them.)
Steps:
Start it in the morning. This'll take a while. It's pretty low maintenance once it's cooking. YMMV depending on your stove style.
The veggies first. All chopped and in a BIG pot with some oil. You can do them low and slow with a lid on so they sweat it out a little. Once the onions are starting to look light brown move them to the side of the pan.
Turn the heat up and add the mince and crumbled stock cube. let that brown along with it all. It's not a disaster if it doesn't brown or other things start to over cook, as long as it's all cooked. Ideally there should be minimal liquid when you move on.
add the spices, all of them. add a little extra oil or like a tablespoon of water if it's very dry. Stir it all around to separate and incorporate the spices for a couple of minutes. Like, no longer than 3 minutes.
ADD THAT DAMN BOTTLE OF WINE. Yes it'll look like a lot. Yes it'll smell like an alcoholic nightmare. Trust me on this one. Keep stirring and separating and the alcohol smell will eventually disappear. Scrape the bottom if the food is sticking, that's adding MORE flavour and some of the reason you add the wine. Deglazing, yo!
Add your chopped tomatoes and tomato paste. Mix it around. If it seems a little watery, that's cool. You'll be leaving it for a while at the lowest temperature anyway. Put the lid on a little crooked. And stir it every like half hour or so until you're ready to plate up. This should take at LEAST 4 hours, but the longer the better. If it starts to stick, add a little water and continue.
Put on your pasta (honestly, any wholemeal, or whatever you have) in boiling water with some salt. Cook it how you want really. At the END though, pour a little of its water into the pasta sauce, cause it's probably a bit dry at this stage. Drain the pasta completely, add a little olive oil to it and toss it around. It'll stop it sticking together if you need to let it sit for a sec, plus it tastes better. (I also like to add torn basil leaves in with the pasta. I think it's better than just throwing it on the top of the entire dish. Same with Parmesan)
That's pretty much it. Taste the sauce before you plate up. If it's too sour/vinegary, then add a little baking powder. If it's not salty enough, add salt. Past that's it's kinda self explanatory. There's usually LOADS leftover, and honestly you can add some garam masala or kidney beans and use rice instead of pasta when you're reheating to turn it into a curry or chilli. There is a SHITTON you can do with a tomato and beef base yo.
