Drying, ACV and then feed the leftovers to the critters...3 uses, that's got to be pretty good! So here's the ultra complicated way to make your own ACV. Put your bits in a jar and cover them with water. Put something on them to keep them below the surface of the water I'm using a scrunched up bit of clingwrap (washed and reused, of course). You can remove that after a couple of days. Cover the whole thing with some cheesecloth or net to keep the bugs out. Put t somewhere warm and out of full sunlight. It'll ferment, and bubble and a rubbery layer will form over the surface. That's the Mother and is a colony of #microbes and yeasty things that convert Apple juice to vinegar. When you see that, leave the jar for a few more days and taste until the taste is gloriously vinegary! Keep the Mother aside in a little of the vinegar. When you get some apple juice next, add the Mother to some and viola! You're making your own vinegar! Day 12: Barossa

Before heading to the Barossa we checked out the town of Gawler. It’s actually the first regional settlement in the state after Adelaide. Think lovey historical bluestone buildings, and lots of history.

The Barossa has been amazing. It’s towns of Nuriootpa, Tanunda, Lyndoch and Angaston full of so much history and beautiful architecture. This is nothing like the Hunter Valley. Much more established and older and grown up.

Highlights included:

- chats with with the Cooper at the Cooperage at Seppeltsfield.

- Carl taking the stage at Maggie beers kitchen cooking up storm of verjuice mushrooms, pumpkin and apricots.

- Skipping lunch to feast on Maggie Beers pates, oils, dukka , relishes, quince pastes and jams

- The 2000 date palms that line the roads all around Seppeltsfield - propagated from a single male and female palm plant from the canary islands - seedlings then raised in a an on farm nursery and the plants then planted by staff during the depression cause they had nothing to do.

- Visiting 170 year old Chateau Tanunda - the first winery in the region.

- Visiting the 22 acre rose garden at Chateau Barossa

- Lovely chats and buying gifts at the lavendar farm

- Running out of skin to try out the incredible scrubs at the Vasse Virgin store - an olive products company.

- A few drinkies by the hotel pool as the sun set over the vines

We had another home on the river which we lived in while we did up the cottage and that took six months and then we spent another eight years before we could move into the homestead.

Mrs Pedder said the couple quickly learnt to become Jacks of all trades, rolling up their sleeves and pouring their hearts and souls and a lot of money into restoring the historic property. We had some stonemasons come up and stay with us for three weeks and when they came up and saw it the first thing they said was youve got to learn to be stonemasons you cant afford us and we cant be here that long, Mrs Pedder said.

When we bought it the kitchen had no ceiling, no roof, no windows and no doors and the long wall had completely fallen over and had to be rebuilt. We did a lot of research and it now looks exactly like how it would have back in 1850. Weve restored it back to as close as it would have been in the 1850s but with all the creature comforts of the 2020s, so weve got ducted heating and cooling, and walk-in cool rooms, but it appears like we live in the 1850s.

Mrs Pedder said the couple are proud to have played a part in keeping the homes rich history alive for future generations and are reminded of its past in every detail of the sprawling property. There are worn doorsteps leading from one room to another and I often stand on those steps and marvel that Charles Campbell, who they named Campbelltown after, was the first person to live here, Mrs Pedder said.

Governor Gawler came through Nor West Bend with Charles Sturt to look for the Inland Sea which they never found and Alexander Hay of the Hay Plain notoriety he owned it for a while and stepped in after a previous owner had gone through a drought and literally walked off the property with one sheep. Hay took over the property and from one years wool clip built Mount Bracken in Victor Harbor, so its been a property of rich and poor in the olden days. Mrs Pedder said the clifftop home was well-known in the area, and although it wasnt necessarily visible from the river, it was still acknowledged by local boat operators. All of the paddleboats on the river acknowledge Nor West Bend and every skipper has their own individual way of honking to acknowledge it, its just something the river people do, she said.

In keeping with the rest of the propertys restoration, the couple paid particular attention to returning the waterfront to how it would have looked in the days of paddle-steamers. The town of Morgan basically wasnt there in 1850, so Nor West Bend Station was the town, Mrs Pedder says. There was a governesss school there for any surrounding workers children, and there was a general store there so the stage coach could come through from Overland Corner to Morgan and then down to Adelaide.

Weve also got a great big wool store which held 2000 bales of wool while it waited for the river level to be high enough for the paddleboats to be able to come down and deliver the wool to Port Adelaide. Mrs Pedder said, being set in the heart of the Riverland, close to the Murraylands, an hour from the Barossa Valley and two hours from Clare and the Flinders Ranges, the property was ideally located and could make a wonderful tourism venture. I think the property will pick the buyer its like with us, we turned up not thinking we would buy it and it took hold of us, she said. The only reason were leaving is because my husband recently had a knee operation and its too much for him now, and its just time to move on, otherwise wed be there forever. Were both going to leave a very big chunk of ourselves stashed away in Nor West Bend, but having said that, it will be interesting to see what the next persons journey with the property will be.

Stiles turned his phone on once he'd reached his shoebox apartment later that night. It was a personal form of Hell to not have his phone to distract him on public transport, but he couldn't bring himself to turn it on. Now that Stiles was finally home, he turned the phone on. He immediately felt sick, even though the chime was only to tell him the phone was actually turning on. Stiles turned the phone to silent, set it on the bedside table face-down, and willed it not to vibrate.

The phone stopped and Stiles breathed. He could handle five messages. He picked up the phone when he was certain no more messages would come through, turned the volume back on and unlocked the screen without looking. Stiles took three deep breaths, counted his fingers to ten, and then opened his eyes.

The Sheriff: Hey kiddo. Just texting to see if everything's going okay. Hoped I'd get you in your lunch break, but I must've missed you. Talk tonight.

Bro: I couldn't do it. I got to the border of Beacon County. I'll try again tomorrow. UC Davis doesn't start for another two months anyway.

Red-headed goddess: I want a full report of everything you did and everyone you met; until I go to Harvard, I'm living vicariously through you, understood?

Malia: Flight was delayed. Didn't go to France. Next time.

Wolf: What murder? Who's framing me? What's going on, Stiles?

Stiles gnawed at his nail, looking at the last text. He suddenly felt exhausted. No one would have to know if he just ignored their messages and went to bed instead, right?

He re-read the other four messages, frowning at Scott and Malia's texts. It didn't seem right that both of them suddenly had to stay in Beacon Hills, but maybe he was overthinking it. Scott hadn't left Beacon Hills for more than a lacrosse game in years, he had a right to be nervous about it. Still, that didn't mean Stiles wasn't going to make him get away with it guilt-free.

To Bro: Dude, you promised. Don't make me come back there!

To Malia: Bummer. Did they at least give you your money back?

To Red-headed goddess: I saw Scott's Dad today; don't tell him. Oh, and Derek's been framed for mass murder. Again. Has he left town yet?

Stiles closed his eyes and sighed, then he rang his father immediately, not wanting to deal with the consequence of that last text just yet. Maybe tomorrow.

"Stiles? How was your first day?"

"Uh, yeah, it was great. Learnt a lot," Stiles said, not exactly lying.

"That's great to hear. Did you let the instructors actually teach you?" the Sheriff asked, sounding amused.

"I tried," Stiles said with a laugh, feeling a little better already. "How's things there?" he asked, hoping to distract his father from further questions.

"About the usual," the Sheriff replied.

Stiles frowned. "Usual as in everyone's fighting for their lives, or usual as in someone tried to rob Mrs. Gawler's corner store?"

The Sheriff looked out at his office where one of his deputies had a bandage around his head and Parrish was bloodied and bruised. "It's nothing we can't handle. You're at the FBI now, Stiles."

"What happened?" Stiles asked, instantly alert and pacing between his bed and kitchen.

"Stiles, no, you are not getting back into this, okay? This place won't fall apart without you here to save it, I promise," he replied.

Stiles clenched his hand in a fist and bit it hard, though he knew his father was right. He'd said the same thing to Scott, after all. So why didn't he believe it?

"Okay. Fine," Stiles said, sighing. He stopped pacing and sighed again, then rubbed his forehead with the palm of his hand before admitting in a rush, "Derek's been framed for mass murder."

"Again?" the Sheriff asked, sounding exasperated.

"Yeah, and all of these kids were picking apart his life, and they don't know the first thing about what he went through, what any of us went through. I just... I want to find out who's framing him, but that's not going to go down too well with my peers," Stiles muttered.

"When's that ever stopped you before?"

Stiles looked to the wall he'd kept free for his work, to the photo of Derek he'd brought with him, and nodded to himself. "That's true."

The Sheriff managed a wry laugh. "I'll let you get to it then."

"Thanks, Pops. Oh, and... let me know what's happening, okay? I promise not to fly back at the first thing, but... I need to know what's going on."

"Same with you, Stiles. Oh, and tomorrow, try to listen to your instructors this time; they might know more than you know."

Stiles scoffed. "Unless they know all twelve types of wolfsbane to incapacitate a werewolf, then no one there knows more than I do."

"Yeah, all right, don't sound so cocky about it. Love you, kiddo."

"Love you too, Pops," Stiles said, then ended the call.

He opened the suitcase he'd brought with him and started unpacking the most important things of all: multiple balls of string, scissors, and thumb tacks.

"All right; time to find out who's framing Derek," he muttered, looking to the notes he'd taken in his notebook.

Stiles' phone rang abruptly, making him curse and flail, his hands getting caught in a length of red string. He saw the time and the caller ID, then winced at both.

"Hey, Derek. How's things?"

"How's. Things? Stiles, you text me saying I'm being framed for mass murder and then didn't send anything else for the rest of the day! Explain. Now," Derek said, his voice a low growl.

Stiles sat on his bed, yelping when he sat on his scissors, then moved them and sat down again. "Uh, so... I started at the FBI this morning. There was a... they had a video of you, and said you were wanted for mass murder."

There was silence on the other end of the phone and Stiles undid the red string while he waited, setting it aside.

"Who's murder?" Derek asked finally, his voice sounding thick, but most of all, he just sounded tired.

"Basically anyone in the last three years who's had their throats torn out," Stiles said. "I get the irony, but it's so not funny. I'm trying to find out who framed you."

Derek exhaled loudly at that, as though he'd expected Stiles to believe the FBI, as though he was expecting Stiles to hunt him down.

"Dude, you okay?"

"Don't call me dude," Derek said, the words practically a Pavlovian response after all these years. "I thought... I thought you'd texted me to give me a head start."

Stiles frowned. "I kinda did? I don't want you to be in town when the FBI show up. But I'll work on clearing your name. Y'know, again. Hey, doesn't it seem stupid that you keep getting pinned for this stuff? I mean, you're basically a giant teddy bear. But with claws."

"Bears have claws too, Stiles."

"Touché. But still, it's stupid. You think they'd go for something more original." Stiles could practically hear Derek rolling his eyes in response, and grinned. "I'd better get some sleep if I'm going to clear your name."

"All right. Thank you, Stiles," Derek said, the words almost a whisper.

"Anytime, Derek," Stiles replied.

He could practically hear Derek's heart breaking and Stiles wanted nothing more than to reach out and hug Derek, to give him some form of comfort beyond this.

"Stiles?" Derek added before he could hang up.

"Yeah?"

"I trust you."

Derek hung up without waiting for a response, and Stiles set the phone aside, his hand trembling.

Why Adelaide Homeowners are Renovating and What Do They Want?

The reasons why homeowners want to renovate their Adelaide homes, and what they expect from their renovations, is something that is naturally of great interest to us!

Although there are no definitive answers, our long experience as Adelaide home renovation builders, combined with some recent research into the home renovation industry across Australia, goes some way to revealing the answers as to why so many homeowners are opting to improve rather than move, and which parts of the home are most likely to be the target of a makeover.

Who is renovating in Adelaide?

The short answer to this is, a lot of people. In 2016, more than 60% of Australian homeowners undertook some form of home renovation, and this growing trend shows no signs of abating — it’s estimated that the amount spent nationwide on home renovations will reach $33.2 billion annually by 2018-19.

Interestingly, 26% of the homeowners who undertook renovations in 2016 had been in their home less than twelve months, compared to 14% who had lived in their property for more than five years. This indicates something that we have also found at Builders At Your Service, namely that one of the primary motivations for undertaking a home renovation is in order to make a newly-purchased property ‘your own’, and this reflects many new homeowners’ desire to personalise their living spaces in a way that suits and reflects their family and lifestyle, and allows them to express their own taste as opposed to that of the previous owner.

There is some further interesting research data that also confirms our experience as specialist renovations builders in Adelaide’s northern suburbs. For instance, 21% of home renovations nationally are carried out on properties built between 1961-1980, while on houses constructed between 1981-2000, that figure rose to 27%.

For areas in the north of Adelaide, particularly Elizabeth and Salisbury and the surrounding suburbs, the 1960s, 1970s and 1980s were boom building periods, with the vast majority of the properties in these areas being constructed during these years. As those homes, however, are seldom still in the possession of the original owners, and are often bought today by young families making their way on the housing ladder, renovation is undertaken by the new owners to update these properties (particularly the bathrooms and kitchens, as these are the living spaces that seem to show their age most quickly and dramatically), and to add the personal, individual touch.

Why are Adelaide homeowners renovating?

The recent research, plus our own experience, reveals that there a number of reasons behind the growing desire to renovate rather than uproot — apart from the enormous popularity of the seemingly never-ending stream of home renovation shows that dominate the TV schedules!

Firstly, despite wanting to give their house a facelift, a lot of people are simply very attached to their current home or block of land, and have no desire to go elsewhere. Allied to this, another frequent driving force behind the choice to renovate was shown to be a desire to stay in the same neighbourhood, with 33% of Australians citing this as the reason why they are undertaking home improvements rather than moving.

We have also found this to be the case with many of our clients for whom we have undertaken home renovations in Adelaide. Whether it’s the convenience of getting to work, the proximity of kids’ schools, the cachet attached to your address, or simply that people have built up a network of friends and neighbours that they don’t want to leave, families form very strong bonds with the Adelaide suburbs in which they live, and want to maintain these, even if their circumstances are now such that their house as it currently stands isn’t meeting all of their lifestyle needs. In this case, a home renovation or extension gives them the best of both worlds, a mixture of the familiar and the new.

A desire to combine both history and contemporary comforts is also the reason why homeowners with period or heritage homes often want to renovate as well. While a late 19th- or early 20th-century cottage, like you find in some parts of Salisbury and further north in Gawler, may be beautifully proportioned and solidly constructed, few people today are really that keen on century-old ablutions or cooking facilities. However, a sensitive and well-designed renovation of these essential spaces can mean that you retain your modern comforts without detracting from the overall integrity and period feel of the house.

Another driver that came out of the research was that for many homeowners, the relative costs involved in renovating their existing property were substantially lower than the costs (and hassles!) associated with buying another property and then moving (stamp duty is a particular barrier for many when it comes to considering a move, especially in high-demand residential suburbs). In many cases, it simply makes more economic sense for homeowners to undertake a home renovation, or to add an extension, rather than sell.

Of course, for many homeowners, the decision to renovate may be a purely practical one, as your home’s structural integrity may have deteriorated due to age or the effects of sea air, or suffered damage as a result of termites or other pests. Recent research suggested that these or similar reasons were the motivating factor behind about 15% of home renovations across Australia, and this would seem to correspond with our experience as well.

How much do people really DIY?

Apparently, not as much as we are led to believe by TV and advertising. According to research carried out by Houzz, 89% of homeowners who undertake renovations call on the assistance of a professional to get the job done. And it tends to be specialist home renovation builders (like us!) who are most commonly used, with 21% of renovation work undertaken by builders, followed by kitchen designers and interior designers.

The reasons why people prefer a professional to DIY, as revealed by the research, is the quality of the result, the ability to complete the job according to the budget, and the expertise of qualified builders to find and use the right products and materials to suit the specific needs of the work.

What and where are we renovating?

As we have been in the Adelaide home extension building business for so long, and worked on so many projects, the results of the research as to which areas of the house are most frequently renovated came as no surprise to us, with the top five being kitchen, living/family room, bedroom, bathroom and laundry room.

With kitchens, bathrooms and laundries, the desire to renovate these is more often than not driven by a pressing need to modernise, in terms of the decor, layout, and appliances — or often all three. A kitchen can show its age very quickly, due to the fact that it gets a lot of heavy-duty use, while those designed and built in earlier times very often don’t have a layout suited to a modern lifestyle, nor the room to accommodate the greater number of appliances that we have all become used to. Interestingly, as well as being the room that is most commonly updated, we have also found that the kitchen is also the first room that new owners want to renovate, and that personalisation of this central living space, so that it accommodates how you and your family live, is almost always the first priority.

However, bathrooms aren’t far behind. Again, they can also age very quickly, especially with regard to colour schemes (some 1970s bathrooms were truly awful!), and as they come in for a lot of use and abuse, they can look very tired in no time at all. Also, lifestyles have changed and, while the old-fashioned stand-alone bath is making a comeback, there has been a big shift in bathroom design towards a much more contemporary, sleeker look, incorporating bigger and better showers, stand-alone sinks (as opposed to the old vanity unit) and a generally less cluttered feel. For this reason, our experience absolutely corresponds with the research that says a major renovation priority in Adelaide homes is almost always the bathroom.

Lotsa babies! 

With all the crazy weather of late, I decided to drop by the Gawler Community House, where I look after the garden that supplies the kitchen with fresh, seasonal vegetables for their community meals.
