Here is the very, very long and complete list of all dishes, ingredients, and drinks in Thedas as of Tevinter Nights.
This compiles all the canon posts. My headcanons are separate from this list to avoid any confusion but you can find it linked along with the other individual posts below.
Like in the individual posts, the list has the country of origins next to each item and any relevant information. Such as ingredients, use, notes, or trivia. For the canonically suggested foods and drinks I list what their real world uses are for your reference as to what they might be used for in Thedas.

The sap is high in vitamins a and c and has been used to fend off scurvy in the past. The sap can be drunk as a tea in the spring.

hi! do you have any thoughts on free marches culture/fashion/inspirations etc? im trying to piece together some marcher names but i cant find any real world inspirations to draw from - my best guess rn is a blend of like, irish, english and greek with some slavic inspo from ferelden?

It’s a very good ask, thank you!
The Free Marches are great for headcanons because we know so little about them. We know about Kirkwall but other than that? The possibilities are endless.
The Marchers are canonically descendants of both the Alamarri and the Tevinter people so I would expect some level of multi-ethnicity in all the city states. I also think that cities closer to Tevinter and Antiva (like Hasmal or Ansburg) would have more in common with those countries while cities like Kirkwall or Ostwick would resemble Ferelden more.
I've also checked the official titles in various cities because they might show the connections to other countries. Based on that the fact that the ruler of Ostwick bears the title of Teyrn may suggest that, at least at some point in history, Ostwick's political system was under strong influence of Fereldan culture. Similarly, the title of Duke in Wycome may suggest strong Orlesian influence.
These differences would affect accents, cuisine, perhaps some local holidays as well. As for fashion, I think that the differences between nobles in each city state would be far from striking as the court fashion has a tendency to be more unified across cities and even countries. The clothes and the hairstyles of the lower classes would be much more varied, though, and if you are looking for inspiration, it would be good to look through regional folk costumes across different countries.
As for real-life inspirations - I personally headcanon The Free Marches to represent Central Europe (more-or-less the borders of the Holy Roman Empire), the Balkans and Greece. I also like to add England to the mix because in my headcanon Ferelden is closer to Slavic than Anglo-Saxon culture. I especially headcanon Ostwick and Tantervale to have a bit of 19th century England vibe when it comes to their culture and aesthetics. More toned down in fashion compared to rococo-styled Orlais, with strict manners, where self-restraint and piousness are really valued. People from Ostwick would frown both on Orlesian hedonism and Fereldan straight-forwardness. But it’s just my personal take, made to serve my (sad) Trevelyan’s backstory. 🙂
I don't have well-defined ideas for other city states at the moment but I'm curious to hear other people's thoughts!

With the blight dragging on and no Grey Wardens to be found, forcing us to social distance, I’ve little choice but to sample the rich and varied cuisine of Thedas from my own kitchen.  Each week I will aspire to prepare a recipe from the fan made Dragon Age Cookbook “In Pursuit of Porridge” (available here).  The recipe will be chosen at random to keep things interesting.  Please feel free to join me and post any recipes you make.  If you use the tags #Dragon Age Cooking Club or #DA Cooking Club and/or tag me I’ll add your culinary creation to the Master Post!
For the first week we have a recipe from the Free Marches: Strawberry Rivaini Dip!

That’s right, it’s inexplicably guacamole with strawberries!  Don’t ask me why.  Those Marchers are a crazy bunch.
Difficulty: 1/5.  We couldn’t have started with anything easier, just chopping and mixing up a few things.
Ingredient cost/accessibility: 1/5. Nothing too crazy here, just produce and tortilla chips, of which I got the off brand.
Taste: 2/5.  It’s not terrible, but it’s not... good?  To be fair I’m no guacamole connoisseur.  I’m still occasionally eating a chip, so it’s definitely more edible than I was expecting.  The strawberries make a surprisingly competent replacement for tomato.  Still would have rather just had tomato though.
Suggested pairing: something light and summery, preferably alcoholic so you can forget that it isn’t the greatest tasting.  Light ale or a margarita maybe?
Suggested pairing: Varric/Bianca or Sera/Inquisitor.  It’s definitely pub appetizer food, so someone who lives in a pub would probably be down with it.

Sugar Free - Semaine 1 : Tiraillée

La semaine sans sucre a vraiment commencé cette semaine. Les conseils et exercices se sont portés sur les boissons, les yaourts et les petits-déjeuners. J'ai appris quelques trucs, mais globalement j'en avais une bonne connaissance et conscience.
Bon, j'avoue, j'ai craqué aujourd'hui. Je suis allée prendre l'air, marcher un peu et en plein milieu de ma sortie j'ai eu méga envie de manger... J'avais qu'une envie c'était de retourner chez moi et de me cuisiner un plat de chou-fleur, pomme de terre béchamel. Finalement il n'en fut rien. Au lieu de craquer pour des trucs méga sucrés, je me suis dit que ça serait toujours mieux d'acheter des aliments sains qui me font kiffer. Avocat, banane, tomate, pain hamburger complet, copeaux de noix de coco et porridge. J'ai refais un peu mon garde manger basique. Sur le chemin du retour j'ai miam une tablette de chocolat gerblé sans sucre et quelques gâteaux de la même marque, sans sucre également (impact réduit sur la glycémie avec un taux de sucre 1g/100g). En rentrant je me suis cuisiné 2 hamburgers végé.
J'ai réussi à limité la casse, mais j'ai quand même la sensation d'avoir crakos. Don't worry, ça arrive. Demain est un nouveau jour et une nouvelle opportunité de continuer de construire de bonnes habitudes alimentaires.
Cette semaine a été ponctuée également par quelques parts de galettes frangipane, poire chocolat et framboise. C'est mon régal en cette période et j'ai choisi en conscience de me nourrir de ces douceurs sans excès. D'ailleurs, l'une des parts provenait d'une galette bio sans sucre ajouté faite maison ! Miam !
C'est dur quand même. Je ne vous le cache pas. Parfois, des images de pâtisseries, de viennoiseries, de bonbons viennent envahir mon esprit. J'arrive à résister. Je me rends compte à quel point la culture du sucre est encrée en moi...
Bilan de cette semaine 1 plutôt positive avec seulement 2 petits craquages. Je me félicite quand même car avant cela, je passais direct au côté obscur de la force et j'y restais plusieurs jours voire semaines. Là c'est quand même plus ou moins maîtrisé.

ON TARGET: Canada Must Denounce Glorification of Nazis

On 28 April approximately 250 people marched through the streets of Kiev, Ukraine to commemorate the 78th anniversary of the WW2 Waffen SS Division Galicia.
That’s right folks, hundreds of people gathered despite the threat of spreading the COVID-19 virus, to commemorate Ukrainian soldiers who took an oath of allegiance to Adolf Hitler and fought for Nazi Germany.
This parade drew an immediate backlash from Germany’s ambassador to Ukraine, Anka Feldhusen. She tweeted “Waffen SS units participated in the worst war crimes and the Holocaust during WW2. No volunteer organizations fighting and working for Ukraine today should be associated with them.”
This blatant display of Nazi glorification was also condemned by the Israeli ambassador in Kiev and the Israeli Foreign Ministry. Sadly, there was no such reaction from the Canadian embassy nor from the Canadian Armed Forces. Canada presently has over 200 military trainers assisting the Ukrainian armed forces in the face of Russian aggression.
For the regime in Kiev to not only allow a tribute to Hitler’s SS to take place, but to also provide the marchers with a police escort, flies in the face of all those Canadian soldiers who fought and died in WW2 to defeat the Nazi regime.
For the record, and before the apologists claim this event was an exercise in ‘free speech’, Ukraine has cancelled this year’s May 9 traditional celebration of Victory Day WW2 due to COVID19 concerns.
Ukrainians were prevented from gathering to celebrate the defeat of Hitler, but allowed to parade in commemoration of Ukrainians who volunteered to fight for the Nazis?
The U.S. State Department did not directly condemn the parade but in a statement to The Nation they noted “We welcome [Ukraine] President Zelensky’s strong statement condemning the march.” However, they added the comment that the U.S. State Department “continues to monitor and systematically refute a longstanding Russian disinformation campaign that conflates support for Ukrainian sovereignty with support for neo-Nazi and fascist ideals.”
Here is a little bit of free advice for those concerned about Russian disinformation: just put an end to parades and events that glorify Hitler’s Waffen SS.
While I can understand that Ukrainians are proud of their heritage, I cannot fathom why young nationalists seek to glorify those who took up arms to enforce the Nazi’s ideology? Yes, I understand that Stalin imposed ruthless measures against the people of Ukraine and that they suffered horribly under the Soviet regime.
However, the fact that Ukrainian men took up arms to fight the Red Army as members of the Waffen SS does not change the reality that Hitler’s Nazis perpetrated the Holocaust.
Of all the incredible accomplishments that Ukrainians have achieved throughout history – music, literature, cuisine, art etc, I cannot fathom why it is a flawed military unit that fought for Hitler, which these young Ukrainians have chosen to revere.
Formed in 1943, the SS Galicia Division only really fought one major engagement against the Soviets in the Battle of Brody in July 1944.
The SS Galicia was soundly defeated and it was subsequently relegated to fighting against partisans, first in Slovakia and then in Yugoslavia.
For those who would paint the SS Galicia volunteers as fighters for Ukraine’s independence, this theory cannot be justified in view of the fact they actually fought against civilian patriots in Slovakia and Slovenia to enforce Hitler’s Nazi occupation.
In the final days of the war, the SS Galicia changed their name to the 1st Ukrainian Division prior to surrendering to the allies in Austria.
After a lengthy internment in Italy, many of these Ukrainian SS veterans emigrated to Canada. There is actually a memorial erected to the memory of the SS Galicia division in Oakville, Ontario.
That said, it is estimated that over 40,000 Ukrainian Canadians served in the Canadian military during WW2, fighting to defeat Hitler.
It is those brave, patriotic Ukrainian- Canadians that Canada needs to remember. It will make it far easier for our government to publicly denounce any future Nazi-glorification in Ukraine.

Blackwall doesn’t really look like an Orlesian, even in terms of general tastes and way of fighting, reasoning, speaking, and Varric complains to Hawke how disgusting Orlesian cuisine is to him (“Did you know that they eat snails here?”).
Vivienne and Dorian have of course refined tastes, but while Vivienne is perfectly used to - and content with - Orlesian dishes (but I can see her having a soft spot for simple things, like cookies and butter soup), Dorian likes richer tastes and doesn’t refuse to try new things, like Fereldan or Free Marcher dishes. I can see him pretending to wrinkle his nose at that baked fish that is so loved at Starkhaven, but actually craving for more after eating it. As for drink, we all know he loves wine and if the Antivan one is anything like our Italian one, he probably loves that one.
Cassandra eats everything, except for a few exceptions. She might come from a noble, rich house, but her childhood sounds terribly practical, surrounded by corpses that got more attention than her. I can see her and her brother being left alone for long periods of time; they could eat well and were never left wanting more, but there wasn’t the same attention and effort put into it like in, say, Dorian’s family. Also, when she became Seeker, her military, harsh life, even if high-ranked, led her to develop even simpler tastes and needs.
Same counts for Sera: you can’t have difficult tastes and be picky when you live in the streets as an elven girl. Even if she was raised by a human woman for a time, I doubt she could eat everything she wanted. We see her drink ale at The Herald’s Rest at Skyhold and she becomes drunk during the round of Wicked Grace, so she definitely loves alcohol.
Bull probably loves meat and fish, but also baked food. I can’t imagine him eating sugary stuff, but he may enjoy tarts and cookies from time to time - they don’t even have those in Seheron and Par Vollen! ;_;
As for Cole, that depends on whether he becomes more spirit or human. I’m pretty sure he doesn’t need to eat and drink in the first case; in the second one, it will be like being born anew and discovering new tastes along the way. I can’t imagine him holding his liquor well, but he would avidly eat all the homemade pies and stuffed salty cakes he can find.
As for Solas, it’s canon that he doesn’t eat much, but often requests tea from the kitchen, which has to be made in a special way he explained to the cooks (World of Thedas 2). We know that he enjoys the Orlesian frilly cakes, though, and I’m pretty sure it’s also canon, by now, that he has a huge sweet tooth and always craves for more cakes and sweet things. He probably follows a light diet of meat and vegetables and I can picture him sitting content and happy with a steaming bowl of potato soup in his hand. ; v ;
Scarlet adores spicy stuff! She would add spices and pepper to any dish and she misses the delicate, but also tasty and strong Dalish food from her clan. She doesn’t drink alcohol - only on special occasions - and the only kind of “wine” she enjoys is the hot, Dalish one her clan would make during winter.

Jeudi 31 Août 2017 – Partie 03/03 : Lac Maligne, la reusta des lacs de Jasper.
Selon les recommandations des prospectus et de mon guide, le lac Maligne porte en lui la promesse d’un des plus beaux lieux de visite du parc de Jasper. Toutefois, la route qui y mène justifie à elle seule l’adage qui dit que « l’important ce n’est pas la destination, mais le voyage ». Les 40mn de route offrent qui montent au lac offrent une variété de paysage et de curiosité absolument spectaculaire : Tout d’abord les vues sur la vallée et ses rivières en serpent donnent l’impression de se trouver face à un décor tropical. Plus loin, la route marque une épingle et offre une vue sur le lac Médecine en contrebas. Si ce dernier n’a rien d’exceptionnel, il est surplombé par un impressionnant mur de barres rocheuses, aux pieds desquelles se trouve une forêt manifestement dépouillée par un incendie… l’échelle du paysage, à la fois ouvert et gigantesque, a de quoi couper le souffle.
Plus haut, alors que la route perd un peu de sa superbe en s’enfonçant dans une zone forestière, je stoppe ma progression derrière plusieurs véhicules arrêtés sur le côté de la chaussé. Du haut de son camping-car, un foutu hipster à barbe longue pointe son appareil équipé d’un énorme objectif vers le talus de mon côté de la route. Curieux, je quitte mon habitacle, pour m’approcher du lieu de la curiosité… pour y trouver un ours brun ! Juché sur le talus de bord de route, la grosse bête s’affaire à fouiller des buissons pour y trouve des baies, laissant entrevoir sa belle bouille et son popotin à nos yeux ébaubis. Sur la route, les locaux en pick-up qui montent travailler au lac maligne pestent à coup de klaxon contre les gens qui n’ont pas pris la peine de se ranger sur le bas-côté. Un peu inconscient, ou désespéré (ou les deux), je m’approche plus que de raison de l’animal, qui ne lève à aucun moment la truffe vers son public, pour prendre un meilleur cliché. C’est à ce moment que le nounours se décide à descendre sur la route pour poursuivre ses emplettes ; et c’est le moment où je me dis « non. Non non non non non. C’est bon, merci, ça suffira pour aujourd’hui ». Tout le monde se remet en marche. Ça y est, je suis en haut de l’échelle du « l’homme qui a vu l’homme qui a vu l’ours », expression qui me ramène illico aux souvenirs des récits de mes parents sur leur voyage canadien.
Arrivé sur les rives du Lac Maligne, je découvre un lieu bien plus touristique que je ne l’imaginais : Le « maligne Lake Chalet » qui abrite un restaurant, un magasin de souvenirs et un café, est blindé de touristes. Plus loin, on trouve carrément un petit ensemble de bungalows de location. Devant ces installation, deux embarcadères d’où partent régulièrement des bateaux chargés de curieux qui veulent aller jusqu’au milieu du lac pour un tarif exorbitant. Pour l’expérience sauvage du lac isolé en haute montagne, on repassera, mais le tout ne dénature finalement pas trop le paysage.
Le lac Maligne est réputé pour la couleur de ses eaux, mais il m’est impossible d’en profiter, le ciel s’étant encombré, ternissant les teintes et nuances du paysage, et les fumées latentes n’arrangent rien. Néanmoins, la vue, avec sa jolie boat house, offre tout de même un paysage de carte postale, avec ses pics rocheux dans le lointain et ses collines qui se superposent comme autant de calques. Je pose mon popotin sur une petite plage au sol meuble pour y bouloter la fin de mon paquet de chips, avant de commencer une boucle sur la rive nord du Lac.
Quelques centaines de mètres plus loin, le parc de Jasper m’offre une deuxième surprise animalière : Dans les fourrés sur le bord du sentier, une famille d’élan est occupée à brouter, pas du tout inquiète du petit groupe de touristes en train de les prendre en photos. Nous resterons ainsi silencieux quelques minutes à observer les majestueuses bestioles. Alors qu’elle à se remet en marche après avoir pris ses photos, une femme invite les gens arrêtés : « continuez à marcher, ne vous arrêtez pas, ces animaux n’aiment pas la proximité humaine ». Je pense avoir à faire avec une guide du Parc, mais il en est rien, il s’agit juste d’une experte auto-proclamée qui a décidé d’expliquer aux gens comment vivre leur vacances. Les gens sont bizarres.
La boucle que j’ai choisie longe les rives du lac pendant un petit kilomètre, offre des points de vue sympathiques sur le lac, peuplé de japonais en canoë, avant de s’enfoncer dans les bois. Je suis apparemment le seul à avoir choisi ce tracé, puisque je ne croiserai personne durant ma longue promenade dans une forêt épaisse et humide, au point que j’en viens à me demander si je ne me suis pas perdu. Je m’arrête quelques secondes pour écouter le silence, rapidement comblé par le brouhaha dans ma tête qui m’encourage à me remettre en ordre de marche.
La boucle bouclée, je fais un petit arrêt dans le Maligne Lake Chalet, pour considérer un instant les pâtisseries offertes par le café, avant de me raviser, l’estomac pas du tout attiré par la promesse d’une douceur. Voilà qui ne me ressemble pas. Je flâne dans le magasin de souvenirs sans rien y acheter, et je regarde d’un œil attendri et amusé les gens poser avec la mascotte du parc, sorte de gros ours en peluche grimé de l’uniforme de la police montée. Je les prends en photos, me sentant un peu déplumé de n’avoir personne avec qui câliner le gros nounours, et me sentant un peu couillon de constituer mes souvenirs de vacances avec des photos d’inconnus. Mais bon, c’est le jeu du voyage en solitaire.
Retour à Jasper pour prendre possession de ma chambre dans l’auberge de jeunesse. Le duo d’anciens qui tient la réception (une anglophone et un québéquois) me donnent mon nécessaire (draps et vaisselle), et me voici installé dans un grand  dortoir au sous-sol. Le couchage est exigu mais à ce stade, tout ce qui sera plus confortable que l’habitacle de ma suzuki m’apparait comme un luxe éhonté. La cuisine a elle l’attirail complet de l’auberge de jeunesse : sans fenêtre, meublées de tables longues, deux pianos de cuisson, frigos et étagères à foison avec étiquettes et une free food shelf dans laquelle je vais directement fouiller, par automatisme, un vieux réflexe de backpacker. Une douche bien chaude plus tard (quel bonheur !), je pars faire un tour rapide du centre-ville. J’y retrouve le parking principal, réalisant quelle mauvaise idée c’était d’envisager d’y passer la nuit, mais aussi à quelle vitesse la vile de Jasper est passée de territoire inconnu, nocturne et hostile, à bourgade chaleureuse. Je prends au passage une photo du centre-ville et l’envoie à Taylor, le joyeux luron canadien, natif de Jasper (que j’avais connu à Collaroy beach en Australie) pour lui demander si le lieu lui est familier. Fidèle à lui-même, le prodige de la guitare me répond qu’il vient de rentrer au pays la veille après 3 ans à bourlinguer de par le monde. Coïncidence incroyable. Il m’invite à venir le voir jouer de la guitare dans son groupe sur la scène du pub « Legion » le lendemain soir, pour son concert de retour. Taylor fait partie des rares personnes dont je suis sûr que le tempérament implacablement joyeux et enthousiaste m’éviteras toute situation gênante, j’accepte donc le rendez-vous, quand même anxieux à l’idée de me pointer dans un pub à l’heure de pointe pour renouer dans le bruit avec une vieille connaissance. Paré d’un café et d’une pâtisserie de chez Tim Hortons, je me pose sur la terrasse de l’hôtel avec mes prospectus pour étudier mon plan d’action pour le lendemain. Sur le table à côté de moi deux jeunes aux allures de hippies se fument un pétard, et sont rejoints par deux ouvriers peintres des pays de l’Est, parés à célébrer la fin de journée avec un pack de bière. Je reste en retrait, toujours incapable (et sans l’envie) de copiner autour du simple échange d’alcool et de fumette.
Premier jour « d’aventure » en solitaire, et me voici de retour dans les mêmes chaussures qu’à mon tout premier jour de voyage, en auberge en Australie : inadapté, paumé, en retrait, sans projet, avec pour seule consolation le fait d’avoir un matelas financier et une pratique du voyage qui me fait me sentir en sécurité. Alors que la lumière du jour s’épuise, il devient difficile de lire mes prospectus à la seule lueur des lampadaires et de mon inspiration terne et infertile.
Je déciderai du programme dans la matinée, car Morphée m’appelle, et il ne me faudra pas longtemps pour m’éteindre, épuisé, dans mon petit lit finalement bien confortable.

Foods of Thedas: Dishes, Sauces, and Sides
There are multiple food lists for Dragon Age out there, some current, some not. I put this together mostly for my own personal reference and keep updated because I need to clear out my google sheets.
From gravy, desserts, main courses, sides, soups, and stews. The foods are both mundane or share some medicinal uses. But they had to be things that would reasonably be eaten as a food item. So something like powdered tusket horn which is purely supplemental isn’t included. But something like a sauce that also helps with impotence is included since it is implied to be used as a food item and medicinal. So every dish here is canonically mentioned and shown through the games and additional media tie-ins.
This list doesn't include individual ingredients. Those are all in separate posts. Given the size of these lists, I had to split everything up. They were far too long for my tastes, so all links for the additional posts are below and above the cut, so you don’t have to endlessly scroll if you just want to see all the items in one post (the master post) or the wiki page. (Which got put up first because Tumblr really doesn’t seem to like the lengths of my posts.)
