Raspberry-Lime Vodka Cooler
Raspberry-lime vodka cooler; a simple refreshing go-to for summer.
This raspberry-lime vodka cooler was my first COVID holiday cocktail creation. I developed this lovely drink on Memorial Day when my family and I were stuck inside social distancing with blazing hot tempatures outside. With it’s fruity, tart notes and effervescent bubbles, it was the perfect warm-weather cocktail for sipping on. This simple new favorite is now one of my go-to summer drinksbecause…

March 1, 2019 - Cerros, Empanadas y Terremotos
Yet another long day exploring Santiago! This morning we were guided up to Cerro San Cristobal, a large hill in the middle of the city with 360 degree views. The city is shrouded in smog most of the time, as was clear today, but it’s still quite a sight to see. Santiago is far more spread out than any city I have spent time in - there are little clusters of tall buildings as far as the eye can see (before the mountains, of course.) I took most of my photos of San Cristobal on my film camera, so we will wait and see for those! Another person in my group took some pictures of me though, happy as all can be in the Santiago sunshine.

After San Cristobal, we walked through the city to the Mercado Central to eat some traditional Chilean empanadas. The whole group was ravenous at this point, and all I could think about the whole walk was eating these beautiful things. It was well worth the wait. We each tried one “de pino” (the traditional kind- ground beef, fried with white onion and are seasoned with garlic, hard-boiled eggs, and olives) and then one “de queso” (just cheese.) They were DELICIOUS. The owners of this empanada restaurant migrated here years and years ago from Italy - some interesting heritage that I’m excited to share with my dad when he visits!

Lastly, we went to a restaurant called “La Piojera” to try another traditional Chilean item - el terremoto. El terremoto (earthquake) is a drink that is known for getting you drunk quickly and making the world feel like an earthquake, and it lived up to its expectations. A massive cup filled with sweet white wine, grenadine, fernet-branc and pineapple ice cream, this was a perfect dessert after the empanadas (some live music, too!)
