Sharing My Memorable Accor Plus Member Stories
I was recently chosen by Accor Plus as their Member Ambassador representing the Philippines! This was really such an honor for me since most of their other ambassadors are from Australia and other Asian cities. As long time Accor Plus members, we always use our 50% dining discounts and complimentary stays to explore the many Accor hotels in the country. When I got promoted to an Accor Plus Gold membership last year, we were so happy with the free room upgrades we received every time we traveled and stayed at Accor hotels throughout Asia Pacific.

That's why I was even more surprised when I got chosen to tell my own Member Stories for the 30th Anniversary of Accor Plus. The shoot and interview was done a few weeks ago at Fairmont and Raffles Makati, another Accor hotel that is very close to my heart. Of course, we also got treated to the lunch buffet at Spectrum Restaurant and even got an overnight stay with breakfast after the photo and video shoot. Spectrum in Fairmont Makati Returns with Upgraded Sunday's Best Brunch Buffet
After a brief one-month hiatus last September, Spectrum Restaurant in Raffles and Fairmont Makati has reopened with its newly-renovated dining space with a bright and vibrant ambiance. We had just come back last week from our European honeymoon but I could not wait to go back to our favorite luxury hotel to see what new promotions and offers they have for guests this holiday season.
Sunday’s Best at Spectrum is a vibrant Sunday brunch buffet featuring the best of Spectrum’s indulgent multi-cultural cuisine plus a dessert showcase highlighted by unlimited Carmen’s Best Artisanal Ice Cream, the country’s first super premium quality ice cream. This is available every Sunday from 12:00nn to 2:30pm for P3,200 nett per person.
You can find Spectrum Restaurant at the lobby floor of Raffles and Fairmont Makati, two hotel brands that are really close to my heart (Read: Elegant Birthday Staycation at the Raffles Presidential Suite). Spectrum is back with its full buffet lineup of sumptuous main courses, offering a sumptuous array of gastronomic favorites from around the country and across the globe, cooked to perfection in interactive culinary theaters.
The newly renovated Spectrum now comes with brand new floors and tiles to match the elegant dining environment. Sundays are definitely the best time to visit Spectrum because their brunch buffet comes with all my favorite dishes and desserts.
My friend Joey Silvestre also came to have lunch with us together with our host Mike Sagaran of Raffles and Fairmont Makati. The Sunday Brunch also comes with unlimited chilled juices and mocktails, as well as one round of alcoholic beverages. Of course, we started with glasses of their Red and White Sangria.
For appetizers and starters, the bread station offers a variety of freshly baked breads to choose from.
Right beside it is the charcuterie station with its assortment of hams and cheeses. These include Black Forest Ham, salami, Emmental cheese, camembert, brie, and more.
There’s so much to explore at Spectrum’s Sunday’s Best. The Chinese Station comes with dimsum items like Xiaolongbao together with Yang Chow fried rice, stir fried mixed noodles, and other familiar dishes.
There's also the Japanese Station with its colorful display of sushi, maki and rolls. Make sure to get some delicious tuna and salmon sashimi here.
I love eating tempura so I also got a few pieces of their shrimp tempura which you can find beside the takoyaki balls.
Shawarma is also available and you can ask the servers to slice and prepare a fresh wrap for you.
The Fresh Seafood Station is really enticing. There’s fresh mussels, scallops, crabs, shrimp, and clams on ice that you can enjoy.
You can get a plateful of fresh seafood and bring it to the cooking stations to have them grilled or prepared with garlic and butter. There’s also an option to have your mussels and scallops baked with lots of cheese.
The Roasting Station has this sumptuous display of Peking duck, roast pork, and soy chicken welcoming all the guests. These are all freshly prepared so you can have your peking duck slices served with hoisin sauce.
We both really missed Filipino food since we were away in Europe for about a month, so we were excited to visit the Filipino station. Here we found the Paella Valenciana and the Sisig Paella which were both so delicious. Pair these with the inihaw na bangus and other Filipino dishes on the table for a complete fiesta.
They also had these crispy Chicharon Bulaklak which are really tempting but have to be eaten in moderation.
But the main event at the Filipino station is always the Lechon. This is what we really missed and we were so happy to feast on the crispy lechon skin and meat topped with lots of lechon sauce.
That's not all, because another juicy centerpiece at Sunday’s Best at Spectrum is this Beef Carving Ribeye Steak that will surely satisfy any hungry carnivore. I asked the server to sear a few slices of steak for me.
Add some side dishes like carrots, roasted potatoes, tomatoes to complete your steak plate. There’s also some red wine sauce to put on your beef. I actually went back for a second serving of this juicy steak.
After that exquisite adventure around the buffet stations, it’s now time for dessert! Sunday’s Best at Spectrum features a colorful array of sweets and treats for everyone. There’s a dark and white chocolate fountain where you can dip your fruits and candies. You can also find a lot of cakes, pastries, chocolate mousse, creme brûlée, crepes, and more.
Another highlight of the Sunday brunch is that they have partnered with Carmen’s Best to let guests have all the premium artisanal ice cream that they want!
This is not just your ordinary ice cream because Carmen’s Best is undoubtedly one of the best premium ice cream brands in the country. You can choose from among the various flavors available like Salted Caramel, Cheese, Brazilian Coffee, Rocky Road, and others. No other hotel buffet can boast of having this kind of ice cream on their menu, and it’s all unlimited.
But wait, there's more! There's a new Teppan Ice Cream station where you can customize your own ice cream flavors. Just choose which ingredients you want to include in your ice cream and the chef will create and prepare it right before your eyes.
I chose and named this Triple Berry Teppan Ice Cream myself which consists of strawberry, raspberry, and blueberry then topped with strawberry sauce. It was so good!

Sunday Brunch Buffet Returns at Fairmont Makati with Sunday’s Best at Spectrum
Spectrum Restaurant at Fairmont Makati was one of my favorite Sunday Brunch buffets before the global pandemic hit (Read: Seafood Sunday Brunch at Spectrum). During the last two years, the hotel took a long time before they were able to reopen their facilities, including their bars and restaurants. I dined at Spectrum a few months ago when they were still on a “hybrid” a la carte all you can setup, but it just wasn’t the same. But now, I’m so happy to see that they have finally returned to their full buffet setup with a revitalized Sunday Brunch that truly stands out from all the other Sunday brunch offers around the city.
Sunday’s Best at Spectrum is a vibrant Sunday brunch buffet featuring the best of Spectrum’s indulgent multi-cultural cuisine plus a dessert showcase highlighted by unlimited Carmen’s Best Artisanal Ice Cream, the country’s first super premium quality ice cream. This is available every Sunday starting September 25, 2022 from 12:00nn to 2:30pm for P3,200 nett per person. The Hungry Kat was invited to be one of the first guests to experience their new Sunday Brunch and I was really excited to be back at my favorite luxury hotel in the country.
You can find Spectrum Restaurant & Terrace at the lobby floor of Raffles and Fairmont Makati, two hotel brands that are really close to my heart (Read: Elegant Birthday Staycation at the Raffles Presidential Suite). Spectrum is back with its full buffet of sumptuous main courses, offering a sumptuous array of gastronomic favorites from around the country and across the globe, cooked to perfection in interactive culinary theaters.
We were given some refreshing welcome drinks like this Strawberry Spritz which started our gastronomic adventure on a sweet note. Mocktails and sodas are included in the buffet price so you don’t have to worry about adding anything else.
Take a peek at the Salad Bar and the bread station which offers a variety of freshly baked breads and healthy greens for appetizers.
I opted to start at the charcuterie station with its assortment of light hams and cheeses. These include farmer’s ham, black forest ham, Emmental cheese, brie, and more.
Right beside it is a colorful display of endless maki and rolls at the Japanese Station. I also got some delicious sashimi here including salmon, tuna, and our favorite unagi or eel.
I am a certified noodle lover so I could not resist heading to the Ramen Station and asking for a bowl of hot ramen. You can customize your bowl so I had it topped with savory chashu.
The Fresh Seafood Station is really enticing! This is what I remember most at Spectrum’s Sunday Brunch and I’m happy to see it still here. There’s fresh mussels, scallops, crabs, tuna, salmon, and even some prawn cocktails.
I took a plateful of seafood and brought it to the grilling station to have to cooked. There’s also an option to have your mussels and scallops baked with lots of cheese.
There’s so much more to explore here at Spectrum’s Sunday’s Best. This is the Chinese Station which comes with several dimsum items like siomai, siopao, dumplings, and my favorite hakao shrimp dumplings.
The Roasting Station has this sumptuous display of Peking duck, roast pork, and soy chicken welcoming all the guests. The peking duck is placed inside Chinese wrappers and served with hoisin sauce.
Shawarma is also available and you can ask the servers to slice and prepare a fresh wrap for you. Better yet, get some servings of their Salmon Wellington with its crispy puff pastry covering the tender salmon.
Don’t forget about the Filipino Station which has its own magnificent carving area featuring the glorious Lechon. Ask for more crispy skin to go with your lechon meat.
The Grill Station itself has a lot of meat and seafood options. I got some beef and salmon belly which was grilled and brought to my table. They also have some pork and chicken skewers here.
The main centerpiece of Sunday’s Best at Spectrum is this humongous beef carving that will surely satisfy any hungry carnivore. I asked the server to get a few slices of steak and have them seared a bit at the grill.
There’s a choice of mushroom sauce or red wine sauce to put on your beef. I actually went back for a couple more servings of this juicy steak.
After that exquisite adventure around the buffet stations, it’s now time for dessert! Sunday’s Best at Spectrum features a colorful array of sweets and treats for everyone. There’s a dark and white chocolate fountain where you can dip your fruits and candies.
I love the macarons at Cafe Macaron, Fairmont Makati’s lovely lobby cafe, so seeing them here at the buffet is surely a delight. You can also find a lot of cakes, pastries, chocolate mousse, creme brûlée, crepes, and more.
They even have a dedicated Halo-Halo Station which can serves as both a beverage and a dessert in one. Don’t forget to put some leche flan on top of your halo-halo.
