How Do Manufacturers Obtain and Process Basmati and Non-Basmati Rice?
Tumblr media
Rice is an essential food staple globally, and its sourcing and processing varies depending on the type – Basmati or non-Basmati. Both types have unique properties and serve different culinary purposes, making it important to understand their different sourcing and processing methods.
Sourcing Basmati and Non-Basmati Rice
Basmati Rice: It is grown primarily in the northern regions of India and Pakistan. Traditional cultivation of Basmati involves sustainable farming practices that rely on natural water sources such as river water and monsoon rains. This variety has been cultivated in the foothills of the Himalayas for centuries, and its unique characteristics come from both the climate and soil of these regions. Modern farming techniques now complement traditional methods to increase yield and quality, ensuring that Basmati rice meets high standards for international markets.
Non-Basmati Rice: This category includes several varieties of rice such as Sona Masuri, Ponni and IR-64, which are grown in different parts of India such as Tamil Nadu, Andhra Pradesh and Odisha. These varieties are known for their versatility and are grown in different climatic conditions. India is a major producer of non-basmati rice, which is in high demand globally due to its affordable price and adaptability in cooking. Strict quality checks ensure consistency in grain size, moisture content and absence of blemishes, making it a reliable option for domestic and international consumer sources.
Rice Processing: From Farm to Table
Harvesting and Drying: After harvesting, rice grains undergo a drying process to reduce their moisture content. This step is important as it prevents spoilage and maintains the quality of rice during storage and transportation.
Dehusking and Grinding: The next step is dehusking, where the outer husk of the rice is removed. This process is carefully done to maintain the integrity of the long, slender grains of basmati rice. Non-basmati rice, depending on the variety, can undergo different degrees of milling to suit its intended use – whether it is for softer grains or a stickier texture.
Polishing: Polishing is a process in which the outer layer of the rice grain is removed to enhance its appearance and texture. This step is more common with basmati rice, which gives it a shiny, white color. However, some health-conscious consumers prefer brown rice, which skips this step to retain the nutrient-rich bran layer.
Quality Control Measures
For both basmati and non-basmati rice, maintaining quality is paramount. Quality control involves several steps, including:
Grain inspection: Checking for uniformity of size, color, and absence of broken grains.
Moisture Content Analysis: Ensuring that moisture levels are optimal to prevent mold and other issues.
Contaminant Testing: Checking for the presence of pesticides, heavy metals, and other harmful substances to ensure compliance with food safety standards.
Differences in Basmati and Non-Basmati Processing
While the basic steps of processing remain the same, the manufacture of Basmati rice requires more delicate handling due to its unique physical properties. Its aromatic qualities and grain integrity require precise temperature and humidity control during drying and grinding. In contrast, non-Basmati rice varieties, with their different grain structures and cooking characteristics, may undergo specialized processing appropriate to their specific culinary uses.
Market Dynamics and Exports
India is a significant player in the global rice market, exporting Basmati and non-Basmati rice to several global markets for Basmati rice, including destinations such as the Middle East and Europe, while non-Basmati rice finds markets in Africa and Southeast Asia. The demand for these varieties is driven by their distinctive characteristics and the culinary preferences of the different regions they source from.
Understanding the source and processing of basmati and non-basmati rice highlights the complexities and expertise involved in bringing these staple grains to our tables. Producers employ a mix of traditional and modern methods to ensure that each type of rice retains its unique properties, making it suitable for different culinary traditions around the world.

COVID-19 / Ukraine Crisis - Impact Analysis:
Investigations pertaining to the impact of the COVID-19 pandemic on rice volumes and prices were performed. International rice prices rose on an average of 25 percent during March–September 2020 and remained high (on average 36 percent higher in March 2021) compared to pre-COVID-19 levels, despite the loosening of rice export restrictions and quarantine measures in the second half of 2020.
Following the invasion of Ukraine, prices of staple foods or diets like maize became greatly volatile as did rice prices. The war boosted feed demand for rice after supply concerns in maize and wheat, making rice prices extra volatile. As per FAO, the world rice utilization in 2022/23 is currently projected at 519.0 million tons, down 0.6% from the 2021/22 historical peak. As per the Cambodia Rice Federation (CRF), the Russia-Ukraine war would have no considerable impact on Cambodian milled-rice exports.

Indian rice export ban to impact millions in Asia
Tumblr media
India is one of the world’s largest producers and exporters of rice, and while basmati rice is perhaps the most well-known variety, the country also exports substantial quantities of non-basmati rice. Non-basmati rice refers to various types of rice that are not classified as the premium basmati variety. These non-basmati varieties are grown across different regions of India, each contributing to the overall export of rice from the country.
Varieties of Non-Basmati Rice: Non-basmati rice comprises a diverse range of rice varieties, each with its own unique characteristics in terms of grain size, shape, color, aroma, and taste. Some of the common non-basmati rice varieties that India Rice export include:
Common White Rice: This variety is usually short to medium-grain and is often used as a staple food in various regions. It has a neutral flavor and is versatile for use in a variety of dishes.
Parboiled Rice: Also known as “converted rice,” parboiled rice is treated with steam and then dried before milling. This process partially cooks the rice, making it more nutritious and less likely to stick together when cooked.
Long-Grain Rice: Long-grain non-basmati rice varieties are slender and elongated. They are known for their separate, fluffy grains when cooked.
Medium-Grain Rice: This variety has grains that are shorter and plumper than long-grain rice, but they still remain separate and slightly sticky after cooking.
Short-Grain Rice: Short-grain non-basmati rice varieties have a higher starch content, making them slightly sticky when cooked. They are often used in dishes that require a stickier texture, such as sushi.
Jasmine Rice: While primarily associated with Thai cuisine, jasmine rice is also grown in India and exported. It has a distinct aroma and a slightly sticky texture.
Export Markets: India’s non-basmati rice finds its way to a multitude of international markets. Countries in Africa, the Middle East, Southeast Asia, and even some parts of Europe are prominent importers of Indian non-basmati rice. The affordability and versatility of these rice varieties make them attractive options for countries with diverse culinary preferences and economic considerations.
Export Process: The export process for non-basmati rice involves several stages:
Production: Non-basmati rice is cultivated in various states across India, including West Bengal, Andhra Pradesh, Punjab, Uttar Pradesh, and others. The crop is sown, cultivated, and harvested based on the specific requirements of each rice variety
Processing and Milling: After harvest, the rice grains are separated from the husk and undergo milling to remove the outer layers, resulting in polished rice that is ready for consumption.
Quality Control: Quality checks are carried out to ensure that the rice meets both domestic and international quality standards. Factors such as grain size, color, moisture content, and impurities are assessed.
Packaging: The rice is then packaged in various sizes and formats, ranging from bulk shipments to consumer-sized packages.
Export and Logistics: Exporters work with shipping and logistics companies to transport the rice to international markets. India Rice export documentation, including invoices, certificates of origin, and quality certificates, is prepared.
Importing Countries’ Regulations: The importing countries’ regulations, including food safety standards and quarantine requirements, must be adhered to. These regulations can vary significantly from one country to another.
Market Distribution: Once the rice reaches its destination, it is distributed through various channels, including wholesalers, retailers, and foodservice providers.
Challenges and Opportunities: While India is a major player in the global non-basmati rice market, there are certain challenges and opportunities that the industry faces:
Challenges:
Quality Consistency: Maintaining consistent quality across different batches and varieties of non-basmati rice is a challenge, as it can impact consumer preferences and international trade relationships.
Competition: India faces competition from other rice-exporting countries like Thailand, Vietnam, and Pakistan. Price competitiveness and quality differentiation are essential to maintain and expand market share.
Infrastructure and Logistics: Efficient transportation and storage infrastructure are crucial to prevent spoilage, especially in the context of bulk shipments.
Opportunities:
Diversification: India can focus on promoting specific non-basmati rice varieties that have unique characteristics, flavours, or nutritional benefits, creating a niche market.
Value Addition: Investing in technologies for value addition, such as fortified rice or ready-to-cook products, can enhance the appeal of Indian non-basmati rice in global markets.
Sustainability: Emphasising sustainable and organic farming practices can attract consumers who prioritise environmentally friendly products.
In conclusion, India’s exports of non-basmati rice play a significant role in its agricultural economy and international trade. These rice varieties cater to a wide range of culinary preferences across the globe, and while challenges exist, the potential for growth and innovation remains substantial.

Tumblr media
The seed of the grass Oryza glaberrimaor Oryza sativais known as rice. Rice is a cereal grain, which is a staple food of more than half of the population of the world. In addition, it is considered as the second most important cereal crop in the world. Annually, the global production of rice is around 700 million tons. China, India, and Vietnam are among the largest producers of rice. The area of harvesting rice in China is lower than India's rice harvesting area. However, as only less than half of India's rice area gets irrigated, China accounts for greater rice production.
Rice is available in different varieties and types with varied segmentations. Each type of rice has its unique properties, taste, and texture, working differently with various cooking recipes. U.S. alone commercially produces around 20 different varieties of rice. Few unique varieties of rice belonging to the aromatic category such as jasmine rice and basmati rice are extensively imported from India, Thailand, and Pakistan.
The plant of rice takes about three to six months form germination to maturity, which completely depends upon the variety of rice and the environment in which it is grown. Rice is majorly consumed after cooking in water, whereas rice wafers, rice flakes, puffed rice, and canned rice are some other forms of rice consumption. Some other industries such as starch and brewing industries also use rice. The by-products of rice left after milling, that is, rice husk and bran, are used as a poultry & cattle feed. Rice market is expected to see a substantial growth during the forecast period, owing to the ever-growing consumption of rice.

Market players are not able to meet     the demand of customers in the current pandemic situation.
Farmers are facing problems to     supply the harvested rice due to the logistic slowdown.
Disruption of the supply chain,     halt in the export-import activities, and loss of labor are the major     problems faced by the global rice market.
Top impacting factors: market scenario analysis, trends, drivers, and impact analysis
Expansion of the fast food industry & restaurants and rapid growth in the population are the key factors that drivethe growth of the rice market, globally. Global Basmati Rice Market Statistics, CAGR, Outlook, and Covid-19 Impact 2024
"Basmati is a variety of long, slender-grained aromatic rice which is traditionally from the Indian subcontinent. Basmati rice has a typical pandan-like (Pandanus amaryllifolius leaf) flavour caused by the aroma compound 2-acetyl-1-pyrroline. Basmati grains contain about 0.09 ppm of this aromatic chemical compound naturally, a level that is about 12 times more than non-basmati rice varieties, giving basmati its distinctive spicy fragrance and flavour. This natural aroma is also found in cheese, fruits and other cereals. It is a flavoring agent approved in the United States and Europe, and is used in bakery products for aroma."
