Oh, uh...
Ha ha, in actuality Jollof is one of the Nigerian foods I don't know how to make since my mother usually does it.
Like, I can make stew and rice, okra soup, Moi Moi, Edikang ikong soup (though that's typically me making it for someone else because I fucking hate tripe), goat Peppersoup...
But for Jollof, I'd have to ring up my mother.

Edikaikong Soup. Ingredients: 1kg Spinach/fluted Pumpkin leaves(Ugwu) 200g Water leaves 500g of assorted meat(cow tripe (shaki),snails, cow’s skin(kanda), Stockfish(optional) Smoked fish 250ml palm oil 1 cup Periwinkles (optional), but it gives the soup a boost 2 tablespoons ground crayfish 2 stock cubes 1 medium sized onion 2 scotch bonnet Pepper a.k.a fresh pepper Salt to taste Cook directions: Note: Prepare the vegetables by washing and cutting them into tiny bits (thin slices preferably) and set aside. -Wash and cut the assorted meat in bite-able sizes. Clean the periwinkles, dried fish and stock fish and set aside. Now to cook the Edikang Ikong Soup: -Place the assorted meat and stock fish in the pot , add a little water, the chopped onion and one stock cube. -Cook until all the meat is properly cooked and there is just a little liquid in the pot (remember to cook the toughest meat first). -When the meat is done, add the dried fish and periwinkle. -Add the palm oil, the ground pepper and crayfish and leave to boil for about 10 minutes. -Now add the water leaves(or lamb lettuce) and leave to cook for 3 minutes. -Then add the Ikong Ubong /Ugu leaves (fluted pumpkin leaves) and salt to taste. -Stir thoroughly and leave to simmer for 5 minutes on low heat and your Edikang Ikong soup is ready. Enjoy! Tip: Please note that some folks, add the water leaves at the same time the oil is added, as they say that the liquid from the water leaves actually serves as the main base for the soup. Efo Riro (pronounced ‘eh-faw ree-roh‘) is a traditional rich vegetable Nigerian soup made popular by the Yoruba’s of Western Nigeria. Although it has Yoruba origin, Efo Riro is enjoyed in all parts of Nigeria because of its savory taste and richness. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth) or spinach What is Efo Shoko in English ? The English name: Green Vegetable. Shoko (Yoruba). Efo Shoko a.k.a Lagos Spinach! Botanical Name: Celosia Argentea, an indigenous plant with leaves high in beta-carotene and folic acid. While Efo Tete (African Spinach): “Green” (English), Efo Tete/ tete eleegun (Yoruba). Botanical Name: Amaranthus Hybridus. Family: Amaranthaceae, These vegetables are perennial herb. As expected, they are in great abundance during the rainy season. Efo means “Green leafy vegetable” and riro, “to stir”. Simply put, Efo riro means “stirred leafy vegetable”. However, we just don’t stir the vegetable by itself; rather we stir it in a rich pepper sauce which is laden with Meat, Crayfish, Dry Fish, and other Meat or Fish of Choice. Nigerian Soups Nigerian Soups are very delicious and essential for healthy living. They can be served with eba (garri), amala, agidi, semo, tuwo shinkafa, pounded yam or fufu. Edikang Ikong soup The Nigerian Edikang Ikong soup or simply Vegetable soup is native to the Efiks, people from Akwa Ibom and Cross River states of Nigeria. It is a general notion that the Edikang Ikong soup is very nutritious and this is very much so. Prepared with a generous quantity of pumpkin leaves and water leaves, this Nigerian soup recipe is nourishing in every sense of the word.
This soup is popular because it could be made in more than five different ways and can also be refrigerated for a very long time (even though I recommend two weeks at most for most Nigerian soups).
Okra soupOgbono soupThe Nigerian Pepper soup is a popular Nigerian soup recipe. It is such a versatile recipe as it can be prepared with different types of meat and fish. Thus there is the Chicken Pepper Soup, the Catfish Pepper Soup (popularly known as Point & Kill), the Goat Meat Pepper Soup, the Cow Foot Pepper Soup and the Assorted Beef Pepper Soup.
Ewedu soup is also a popular Nigerian soup common to all tribes; this is usually made with melon seeds to cook ordinarily or combine with leaves like ugu or bitter leaves depending on choice.

It is traditionally prepared by the Hausa people of northern Cameroon, Nigeria, Niger, and some parts of Sudan (where it is called agashe). Suya is generally made with skewered beef, ram, or chicken. Innards such as kidney, liver and tripe are also used.
