THE ORIGIN OF ODIA CUISINE

I have had the good fortune of travelling the length and breadth of India owing to the nature of service I have rendered for the past twenty years. In all my travails, I have always yearned for food rooted in my childhood. Wandering from the wide Brahmaputra valley to the islands of Andaman’s, from the silicon valley of India to the Himalayan hill tops my palate has searched for the simple yet wholesome and flavourful cuisine of Odisha, the land of my birth. Alas, my entire search has been in vain as the rustic cuisine of Odisha is not only absent elsewhere, but also on the verge of disappearance even in Odisha itself, slowly being gobbled up by the ever rising demand and burgeoning expansion of the rich north-indian cuisine or toxic Chinese food. Even the basic knowledge or acknowledgement of the odia cuisine is absent. So when I retired, I decided to make it my endeavour to rectify this abysmal state of affairs and set it as my goal to popularise odia cuisine and while trying to do so, rediscover dishes that are on the verge of disappearance and curate whatever little expertise in odia culinary skills that are possessed mostly by odia ladies.
The primary deity whose benevolence permeates nearly every household of Odisha is Lord Jagannath. That is why, it is not surprising that all odia festivals and in turn the odia cuisine owes its origin and relevance to him. Most of our odia dishes can therefore be traced back to the ‘chhappan bhog’ (ଛପ୍ପନ ଭୋଗ) ‘Mahaprasad’ (ମହାପ୍ରସାଦ) prepared in the kitchen of Lord Jagannath, ‘Ananda Bazaar’ (ଆନନ୍ଦ ବଜାର). It is said that there are four divine shrines located at the four cardinal points of the Indian sub-continent, Puri (ପୁରୀ), Rameswaram (ରାମେଶ୍ୱରଂ), Dwaraka (ଦ୍ଵାରକା) and Badrinath (ବଦ୍ରୀନାଥ) which are believed to be linked to Lord Vishnu intimately. It is said and believed that he takes his bath at Rameswaram, meditates at Badrinath, dines at Puri and retires at Dwaraka. Hence, the temple food of Puri, "Mahaprasad" (not simply prasad) is held to be of supreme importance. Like the food of the lord, the cuisine of Odisha, even down to the simplest dish is a reflection of the taste of Lord Jagannath; simple, hearty, filling and supremely divine. It came to me therefore as a kick in the teeth that in spite of the number of devotees from all over India thronging the Jagannath temple daily, there is no awareness in rest of the country regarding odia cuisine. Even with hundreds of odias’ settled out of state, no one has attempted to popularise our cuisine. Even today the print and televised media broadcast that odia cuisine is heavily influenced by Bengali cuisine and not the other way round. We are portrayed as the poor cousins to the Bengali and even the Assamese cuisine. The mahaprasad of Puri existed centuries before the Ahom or Bengal regions came into existence.

It is said that every day 56 types of Prasad, popularly known as ‘Chhappan Bhog’(ଛପ୍ପନ ଭୋଗ) are offered to the Lord each time of worship and all of these are prepared in the kitchens of the temple by the Suaras (ସୁଆର) who also prepare the mahaprasad. Sukhila mahaprasad consists of dry Mithas (ମିଠା) and Pithas (ପିଠା) along with various fruits. Even today mahaprasad is cooked only in earthen pots (କୁଡୁଆ) using wood fired ‘chullahs’ (ଚୁଲି). The steam-cooked food is offered to Lord Jagannath first and then to Maa Bimala (ମା ବିମଳା) after which it becomes Mahaprasad. Besides Sukhila mahaprasad a second type of dry mahaprasad is Nirmalya (ନିର୍ମାଲ୍ୟ) or Kaibalya (କୈବଲ୍ୟ). In recognition Nirmalya is as important as Mahaprasad. There is a belief among Hindus that if Nirmalya is given to a person on his death bed, he is certain to find a place for himself in heaven after his death following atonement of all his sins. Daily fare as well as the ritualistic festival offerings of Odisha are coloured in the hues of the mahaprasad. The offerings during various festivals celebrated in Odisha also comprise of some or the other component of the divine mahaprasad.
