cupcake! (well, i do know that you love to cook, so i suppose i’d just like to hear more about it)
Are you a good cook?
I am now. I never cooked much before I moved to Finland - I learned how to make apple pie from my Daddy and I could do some very basic dishes but that's it. In fact, it was my first husband who did pretty much 90% of the cooking when we weren't doing take-out of one kind or another.
When I came here in 2000 I found that most of the things I liked to eat were simply unavailable, and so I started to teach myself. Baking, too, which is not actually the same thing as cooking. I turned out to be really good at it. I am basically completely self-taught. My maternal grandfather was a chef - like, a real chef, working in very prestigious restaurants in the San Francisco Bay Area until he was in his 50's, when he got involved in the cook/restaurant workers union (eventually becoming the president of the Bay Area chapter) but I really didn't learn much from him, he died when I was only 8.
I read cookbooks, I watched shows on TV, etc. I will say that I am not a good decorator - I have dyspraxia and it makes me clumsy, and cake decorating, for example, takes a deft and steady hand - but I am a good cook and good baker.
About 9 years ago the school I teach at was like, we are trying to get some new ideas for how to teach languages. And my old boss had had some of my baking (I'd bring in new things I'd made to see how people liked them) and he introduced me to the home ec boss and I gave her some brownies and we agreed I'd try to teach a baking class in English and the first class I offered, Chocoholics Anonymous, filled completely within 15 minutes of registration opening and I ended up teaching it five times because there were so many people on the waiting list! And my cooking/baking classes went from there. They are very popular.
I am not great at decorating or knife skills thanks to the dyspraxia, but that's not something that I can help. I do use knives, but I have to be careful and I'll never be showy. (When I can, I use a food processor or a mandoline, for example.)
Now that Finland has opened itself up a lot more to immigrants there's been a huge upsurge in different kinds of food available, which I love. I have an Asian market just down the street from me and I love going there and getting fresh veggies and spices and such so I can make Asian dishes. The stores now carry Tex-Mex foods, for example. Sushi finally came to Finland! Indian food! That's right, Finland, curry is delicious! So I am now able to also teach a lot of regional American dishes (with the explanation that they are immigrant American versions of other nations' food) and then the baking classes, thanks to way more ingredients being available to me.
Next year, for example, I am going to teach a Disney for Adults class and have a Halloween Cocktail party and Dinner with Leonardo (my city museum is having an exhibition of Leonardo da Vinci's works and I was asked by the City to give a cooking course with Italian Renaissance inspired dishes) and a class where I will teach them various pumpkin recipes, etc.
Am I a professional? No. They'd laugh me right out of a professional kitchen. But I make food that people love to eat and love to learn to make and that's good enough for me!

VLIVE: Fall Recipes

Minseok would always be the bartender. That image would never go away with no matter how many things he did since he’d always return to that sarcastic bartender persona. So, when he heard about the new vlive idea, his mind immediately went to autumn and fall inspired cocktails that he drank during the fall season. As a bartender in a hip bar, he’d often ended up making up all sorts of season inspired drinks. He personally had two go-tos for his fall lineup of drinks, taking on the classic flavours of pumpkin and spiced chai. As per popular demand three years ago, he’d also developed a non-alcoholic version of the drinks as well.
Maybe, he’d show off both drinks in both versions. He had given the staff a list of what he needed and while the kitchen was stocked with appliances, Minseok had brought with him his bartending tool kit. Rubbing his hands with a grin, he’d set out his bartending tool kit and grinned at the camera set up. “Fall is all about those familiar flavours, that call us home, that remind us of our childhoods. Fall is also meant to show off a good time with family, friends, lovers,” he begins with a grin. “Lucky for ya, I’ve seen it all, darlings,” He twirled a shaker and tossed it behind his back, catching it in the front.
“But we’re all grown up and sadly, the alcohols have to stay back at the bar but if you’re eager to try, come to me and I’ll hook you up!” he grinned widely. He then winked at the camera and laughed. “I was asked to create a pumpkin flavored drink for a tourist girl from America about five years ago because she missed her pumpkin spice lattes and I had come up with this. Ever since then, it’s become a staple of my seasons line up,” he stated, reaching for the shaker.
As a staff member asked something, Minseok grinned. “Yes, the seasons line does imply that I also have a winter special, a summer special and a spring special,” he stated, explaining the seasons line that he’d created.
“The non-alcoholic version of the Jack is delicious! 1 ounce of pumpkin flavoured creamer, 1 ounce of chai tea syrup to get that spice and then shake it!” he stated, doing the drink as he spoke. “Into a glass, top with ginger beer and garnish with cinnamon and nutmeg. This is a creamier version of the Jack but honestly, so good,” he whispered conspiratorially.
He then grinned. “However, for those who don’t enjoy pumpkin, there’s my fall apple pie or you know, a take on it. Inspired by the fam, and how chaotic it tends to get when we’re all together, it’s a drink inspired by family and childhood. This was the first drink I actually ever created when I started working at the bar,” he stated, quite excited at the second drink.
“I’ve called it the Snow White, inspired by the German fairy tale which came before the Disney movie,” he grinned. Minseok rinsed out the shaker and tossed on the rack to dry with a grin. He then switched over to something more theatrical where he opened the bottles of juices and syrups and put in a little pourer and went a little extra with it. “So, for the non-alcoholic Snow White, you want to start with 2 ounces of apple juice. Add 1 ounce of apple flavoured syrup, a bit of grenadine for that deep red color. Ice, and shake it, baby!” he grinned, shaking it and doing a few tricks with the shaker and pulling out the glass.
“Pour it in, top with soda and garnish with some gold leaf or a bay leaf for that apple effect!” he grinned, finishing the drink with a wide grin. “Welcome to fall darlings,” he stated, winking.

Review: Menu Updates and More At Magic Kingdom’s Liberty Tree Tavern
The new year has begun, and what better way to start the year than with lunch at one of our favorite Walt Disney World table service restaurants: Liberty Tree Tavern! You know this colonial-esque spot as the premier place to get a turkey dinner in Magic Kingdom, but the lunch menu also offers a la carte options, so I got into that for ya, too!

Atmosphere
Liberty Tree Tavern takes its colonial roots seriously, and diners can see that in the decor. Each room is packed to the gills with details from the time period, and if you look closely, you’ll see that rooms are themed to colonial figures. George Washington gets a place of prominence over the mantle in his room.

Diners can explore each room, taking in the period details and the subtle differences between each historical figure’s depiction. But then, you’ll want to get back to your table because it’s time to eat.
Eats
Alcohol has been served at Liberty Tree Tavern since 2016, when Magic Kingdom first expanded it’s adult beverage offerings; and the drink menu is extensive, as befits a tavern, right? Choose from beer, hard cider, cocktails, or wine. And remember that if you’re using the Disney Dining Plan (and you’re of age) you can select one alcoholic beverage to enjoy with your meal.

Lunch consists of two options: A la Carte and Bill of Fare (a/k/a the Patriot’s Platter). A la Carte entrees include Our Tavern Keeper’s Favorite (which happens also to be a guest favorite!) Pot Roast, Tavern Battered Fish and Chips, and The Colony Salad. You can also order The Pilgrim’s Feast (essentially Thanksgiving dinner on a plate!).

We’re happy to report that the full dinner menu is now available for lunch as well. Bill of Fare is All-You-Care-to-Enjoy and starts with the Declaration Salad, proceeds to the Patriot’s Platter, and ends with — you’ll see! — a fabulously indulgent dessert trio. (Yup — TRIO!)

Whatever you choose, the meal at Liberty Tree Tavern starts with rolls and butter — simple but good.

We ordered three appetizers from the A la Carte menu, starting with the Vermont Cheese Plate. It’s pretty much impossible to craft a cheese plate I don’t like, and this one is a particularly good one!

The serving size and quality is better than some I’ve had in signature restaurants. The cheeses themselves were typical — brie, cheddar, blue, and what tasted like a gouda. It’s a good plate for someone new to cheese plates, or for a kiddo trying a cheese plate for the first time.

What’s better than one cheese-focused appetizer? A second one! The Tavern Cheese Dip with Brown Bread is dynamite! The bread is quite sweet, which might be a little off-putting for some, but with the salty, savory cheese, it worked for me! I loved this one.

If it’s a chilly day in central Florida — or if you just love a bowl of soup — the Beef and Barley is a decent option. It’s not a wow dish — and the flavor could have been more pronounced. The soup is packed with bits of pot roast, so if you want a beef option but can’t pass up the turkey entree, this is a way to enjoy some of the Tavern’s roast beef. Overall, though, if you’re able to go for one of the other appetizers, this one is OK to miss.

First up from A la Carte entrees: Turkey Pot Pie. This is essentially comfort food in a bowl, with the pot pie filling topped with rounds of puffed pastry. It hits all the flavor notes you want from pot pie (even though I’d love to have a proper crust!).

I also ordered the Bacon Cheddar Cheeseburger which — hello! — looks awesome. This is a a classic burger done very well. All the traditional elements are there: relatively crispy bacon, rich cheese, lettuce, and tomato. Note that I had to order this one for my 5-year-old since there wasn’t a burger on the kids’ menu (he’s in that “I don’t eat anything except french fries” stage).

The burger patty itself is massive and (thankfully) not completely dried out. I wouldn’t say it’s the juiciest burger I’ve eaten, but it was pleasant and tasty.

The fries on the side were golden brown and perfectly crispy on the outside, soft on the inside. It you’ve got to have a burger when it’s time to dine at Liberty Tree Tavern, this will make you happy.

Now for the Patriot’s Platter and everything that comes with it. This offering is the main event at dinner (no A la Carte menu during dinner time!), but it’s also a popular lunch offering. That’s because with the Patriot’s Platter, you get to sample three meats and enjoy traditional sides. Note that everything is all you care to eat – so you can get seconds and thirds if you’d like.
The Platter begins with the Declaration Salad. This is a bowl of mixed greens, onions, tomatoes, cucumbers, and carrots. It’s… a salad. Nothing inspiring here at all. But if you are trying to balance out rich meal offerings with light, this is a good way to do it.

The Patriot’s Platter consists of Roasted Turkey, Oven-Roasted Pork, and Pot Roast. Sides include mashed potatoes, seasonal vegetables (green beans! yum!), stuffing, and mac and cheese.
Note that even though two of us at the table ordered the Patriot’s Platter, we each got our own serving plate for the entree — they didn’t pile two orders’ worth of food on one big platter for us to server ourselves, which is what happened previously. Also note that the Patriot’s Platter serving does include a small container of the cranberry sauce, which previously was by request only.

The meats are all passable here, with the pot roast being the most moist and flavorful on my visit. The pork was particularly dry, however. The sides were all delicious.

The mac and cheese comes in a separate dish. Sadly, it’s super bland and boring. Nothing like it used to be when Liberty Tree served Stouffer’s Mac and Cheese. If you’ve got kiddos with you, they’ll probably enjoy this, but for the adults in the crowd, I hope your mac is better than mine was.

Now we enter the sweet part of our dining experience, and you’re probably anticipating… Ooey Gooey Toffee Cake. And there will be some!
But first: a newish dessert for Liberty Tree Tavern: Warm Banana Cake. This dense, layered cake is served with butter pecan ice cream that’s swirled with salted caramel. The the cake is fine — definitely packed with fresh banana flavor (not just a fake additive which… yuck), and the ice cream is delicious. But it didn’t have the dense sweetness that you’d expect from a pound cake or a butter cake. The standard portion shown here is more than enough to share.

The Patriot’s Platter comes with a trio of desserts that are served family style (so two portions on one plate, in this case). Of course the first of the trio is the restaurant’s iconic Ooey Gooey Toffee Cake which, I’m thrilled to report, is as awesome as ever!

Not gonna lie: the Ooey Gooey Toffee Cake is on the small side. It’s possible to need a second serving of that, even with the other desserts on the plate. Those include a smaller version of the Warm Banana Cake and also some Apple Fritters with caramel dipping sauce.

The Apple Fritters are nicely deep-friend and pretty tasty. Thankfully they manage to stay fairly light, and they’re crispy, fruity little bites. (Side of maple caramel sauce does. not. hurt.)
The other dessert is a smaller portion of the Banana Cake.

You’re looking for some serious comfort food at Magic Kingdom.
Table service dining is something you want to incorporate into your day at Magic Kingdom.

I like to try Disney Parks restaurants over and over again, and one reason is to be sure that I can keep recommending them. Liberty Tree Tavern is a solid bet every time. The food isn’t overly fancy or trying too hard — and that’s in keeping with the restaurant’s theme. Liberty Tree delivers on comfortable Americana with familiar dishes and flavors, and it’s nice to know that in a World where food trends come and go, Liberty Tree Tavern is a sure thing!

Review! NEW Dinner Menu at Whispering Canyon Cafe in Disney’s Wilderness Lodge
Yee-haw!! Howdy from Disney’s Wilderness Lodge! We decided to mosey on over to Whispering Canyon Cafe, because they changed their dinner menu earlier this week.

Whispering Canyon Cafe has long been a favorite spot for comfort food, all-you-can-eat skillets, and rowdy antics from the servers, and we were excited to see what new eats they had to offer!
Atmosphere
Located off the gorgeous main lobby at the Wilderness Lodge, Whispering Canyon Cafe is a table service location full of delicious eats and lots of fun. Be prepared for the stick-pony races, silly antics from your servers (yep, they’re still in full swing), and an old fashioned good time!

If you’ve been to Whispering Canyon Cafe, this may be no secret to you. But for those who haven’t visited, you will definitely want to ask for some ketchup (like, whether you need it or not). We don’t want to share exactly what happens next so it can be a surprise, but we will say that the result is a lot of fun and any little cowpokes in your group will get a real kick out of it.
Eats
We’re keeping the tour short, though, because as I mentioned, the reason for this particular visit was to try out the new dinner menu! The biggest addition is that they have THREE new all-you-care-to-enjoy skillets! The Traditional Skillet has been a staple at Whispering Canyon Cafe, and now they have expanded their skillet offerings with a few variations.

The flip side of that change is they have greatly reduced the number of a la carte entrees and appetizers. But they also shook up their specialty drinks selection!

Everything besides the Magical Star Cocktail (which is a staple around Disney World lounges), is either a new addition or the recipe has been updated. We decided to try two brand new drinks — Bourbon Sweet Tea and the Mountaineer Margarita — and one revamped classic, the Moonshine Lemonade.

The Bourbon Sweet Tea is just two simple ingredients. You guessed it: Maker’s Mark Bourbon and sweet tea.

This was a great drink — albeit pretty strong, so heads up! If you are a big bourbon fan, adding the sweet tea is a unique twist that fits nicely with the Whispering Canyon vibe. It’s a fun and simple cocktail that I’d certainly try again.
Next up, the Moonshine Lemonade! The Moonshine Lemonade comes with your choice of flavored lemonade — strawberry, blackberry, or watermelon. We went with Strawberry.

I was prepared for this to be super strong considering the moonshine, but it was actually very refreshing! The strawberry wasn’t overwhelmingly sweet and added a nice light, freshness to the alcohol. Overall, this is something we’d absolutely try again, and I look forward to sampling the other flavors at some point! (So, there’s a little “note to self…”)
Last up, the Mountaineer Margarita. This is a classic margarita made with Don Julio Tequila, Cointreau, fresh Lime Juice and Agave Nectar, but it has a cowboy twist — Smoked Hickory Syrup!

This drink was fantastic and ended up being the favorite of the night. It was a good margarita to begin with, but the smokey syrup really shines through and takes it to the next level. Highly recommend this one!
Now for the eats! The first thing we tried was the new Smoked Beef and Vegetable Soup.

This hearty soup was really more of a stew, full of smoked beef chunks, potatoes, onions, and carrots.

This was certainly a good stick-to-your-ribs soup that you’d expect from Whispering Canyon. The beef was plentiful, and the potatoes were nice and soft. This relatively simple dish was comfort food at its finest, and paired with a salad this would make a great meal on its own!
Next up, we HAD to try out these new skillets! From left to right, you’ll see The Land and Sea, The Pig, and The Plant-Based. Don’t forget that all of these skillets (and the Traditional) are all-you-care-to-enjoy so come hungry!

When you order any of the skillets, the first thing to arrive is delicious fresh cornbread and honey butter!

You can literally see the honey oozing throughout the butter. (As our awesome server, Mike, said “Do with it as you must.”) Also available upon request is coleslaw.

The coleslaw is crisp and fresh, and not too overdressed, which happens easily with slaw.
There is also a vegan slaw available if you’d prefer. Unlike its mayo-based cousin, the Vegan Coleslaw has a vinegar-based dressing.

It’s not too overwhelming or acidic, and I actually preferred it over the regular slaw even though I am not vegan.
First up, we decided to try the Plant-Based Skillet. This dish made its debut on the menu as an “on request” item last fall, so it’s nice to see it graduated to a regular menu item! And it definitely made us curious…

That’s right, this isn’t just vegetarian, it’s completely vegan friendly! The Plant Based Skillet comes with Maple-Chipotle BBQ Jackfruit, Spicy “Sausage”, Mustard Glazed Beefless Tips, Herb Brushed Trick’n Chick’n, Oven Roasted Carrots, Sauteed Green Beans, and Charred Peppers.
Whispering Canyon Cafe Plant Based Skillet Proteins
Out of all the proteins, the Chick’n was my favorite. The moho sauce was delicious — I would gladly put that on just about any meat (or “not meat”!) The beefless tips were also seasoned nicely and the sauce was delightful. The sausage is full of flavor as well, with strong hints of coriander and garlic. Lastly, the jackfruit! This is a common vegan substitution for pulled pork, and was an especially nice addition to the skillet because it gave it the western flavors you expect at Whispering Canyon.
The team at Whispering Canyon even made sure the vegetables would be completely vegan-friendly by steaming them or roasting them in oils instead of butter. The green beans and carrots were good, if nothing special, but the peppers were amazing! Nice and charred with a little kick!
Overall, this isn’t something that I would necessarily order again or recommend to someone that isn’t vegan. Meat substitutes certainly have an acquired taste and texture. That said, if you are vegan (or vegetarian), this is an awesome option for you! It’s one of the most unique vegan offerings we’ve seen around Walt Disney World… and at a restaurant where you’d least expect it, no less.
Next up, the Land and Sea Skillet. This skillet comes with House-Smoked Salmon, Citrus Herb Chicken, Spicy Vegan Sausage, Charred Portabella Mushrooms, BBQ Cauliflower, Roasted Potatoes, Sauteed Green Beans, and Oven-Roasted Carrots.

The House-Smoked Salmon was the favorite from our table! It had a perfectly crisp skin, and a bright, fresh flavor. The Herb Chicken was also a big hit thanks to its perfectly roasted skin, as was the BBQ cauliflower for spicing up an otherwise ordinary vegetable. The sausage is the same offered on the Plant-based Skillet, and the Portabellas were perfectly cooked! If you are a mushroom fan, you are seriously going to love these buttery ‘shrooms.
The green beans, carrots, and potatoes were all delicious and perfectly cooked as well. Nothing too exciting, but they certainly taste fresh and add a nice light addition to all of the meats. Overall, the Land and Sea is a great healthier option for those who want to enjoy the rowdy atmosphere at Whispering Canyon, but want something a little lighter.

Last up: The Pig Skillet. This skillet comes with Braised Pork Belly, Maple-Chipotle BBQ Pork Ribs, Slow-smoked Pulled Pork, Mustard BBQ “Piggy Wings,” and Western-style Sausage and is accompanied by Mashed Yukon Potatoes, Buttered Corn, and Sauteed Green Beans. The Pig is the closest to the Traditional Skillet and the kind of eats you think of when you come to Whispering Canyon Cafe.

The Ribs were our favorite, as the sauce is terrific and the meat literally falls off the bone. The Pork Belly was some of the best I’ve had at Disney, and getting it in the skillet is a great way for less-adventurous eaters to try it. The Pulled Pork has a nice smokey flavor, and we highly recommend getting a bite of it with the deliciously buttery mashed potatoes. The “piggy wings” were actually my least favorite on the plate, as they were a little under-sauced for my taste. The sausage, green beans, and corn were all good, but again, nothing too exciting. Overall, this was the favorite skillet of the night, and we absolutely asked for more ribs.
Even though we were stuffed, we couldn’t resist trying their new desserts!

Our server let us know that once again, most desserts on the menu are new or have been updated. We decided to try the Whispering Canyon Pioneer Chocolate Cake, Granny Smith Apple Pie, and Seasonal Cobbler.

First up, the Chocolate Cake. They recently went to a flour-less recipe instead of a traditional chocolate cake, and it comes served a la mode.

This was more like a lava cake, and the warm, gooey cake is a perfect bite with the vanilla ice cream. This dessert is very rich, especially after the big meal you just had, so we recommend sharing!

Next up, the Granny-Smith Apple Pie! This is also served with vanilla ice cream.

The pie is topped with slivered almonds, and comes in a crisp and crumbly crust. There are big chunks of fresh Granny-smith apples, which give the pie a tart flavor. It matches perfectly with the ice cream, and even though we were stuffed, we licked this plate clean!
Last but not least, the Seasonal Cobbler which was Peach for us.

Some of you may remember the seasonal cobbler being a very popular dessert at Artist Point, before it was transformed into Storybook Dining with Snow White. While we love the new character dining experience, we were sad to see this go — so we are SO happy it’s back at the Lodge!
The crust is crumbly and sweet, but not too sugary. Most of the sweetness from the tart comes from the fresh peaches. This was absolutely my favorite dessert, and possibly my favorite thing I ate all night!
Overall
Overall, Whispering Canyon Cafe’s new offerings were pleasant surprises! It’s nice that they have expanded the menu to accommodate people who would prefer a lighter or vegan meal. We never thought we’d recommend Whispering Canyon as one of the top vegan meals on property, but here we are!
All three drinks we tried were unique and fitting to the location, as were all of the desserts (especially the cobbler!!). Whispering Canyon Cafe still lands as a great dinner spot, especially with kids, thanks to the rowdy antics, and reliable comfort food. We will certainly be back… and, don’t forget that starting March 26th, some new Skillets will be joining the breakfast menu at Whispering Canyon Cafe, too!
