Flax Sesame Crackers & Sunflower Hummus
Savory crackers with a hummus that can definitely live up to the chickpea kind
Ingredients:
For the Crackers:
3 table spoons Flax Seeds
2 table spoons Chia Seeds
11/2 dl Almond Pulp
2 dl Activated Sunflower Seeds
1 dl Sesame Seeds
3 table spoons Millet Flour
3 table spoons Coconut Flour/Fiber
1/2 teaspoon Sea Salt
Water
Sea Salt, Sunflower and Sesame Seeds for sprinkling
Set the oven on 150 degrees Celsius.
Mix Flax and Chia Seeds in a small bowl and fill with water (about 4-5 dl), let sit for about 5-10 minutes.
Mix Seeds, Almond Pulp and Salt in a bowl.
Pour into blender/food processor. Blend until the dough is like porridge, adding water when needed.
Pour into bowl and add the flours.
Spread 1/2 of the dough on a baking tray with baking paper putting another piece of baking paper on top and flattening the dough with a rolling pin, a spoon or any other tool that does the trick.
Sprinkle with Seeds and Salt and roll it into the dough with the pin (you can put the baking paper on top again to not get it dirty).
Bake the crackers for 15 minutes and take them out, cutting them into desirable pieces. I used a pizza cutter for this.
Bake for another 20 minutes approximately. After this they may need more depending on the oven, keep a eye on them and if your oven bakes unevenly, turn the baking tray around. The crackers should be lightly coloured and crispy, but not too dark.
Take out and let them cool off before storing them in an airtight container.
For the Hummus:
2 dl Activated Sunflower Seeds
5-6 Activated Cashew Nuts
1-2 teaspoons Tahin
Juice of 1/2 Lemon
1/2 tablespoon Sea Salt
1 tablespoon Olive Oil
3-4 cloves of Garlic
A little Parsley
Water
Mix all the ingredients in a blender/food processor and blend well. If needed add more Olive Oil or Water to make it go around. Add more Lemon Juice to taste.
Serve with a drizzle of Olive Oil and Paprika.

Soy Peanut Dipping Sauce
Ingredients
1/4 cup rosted, unsalted peanuts
1 tbsp. soy sauce
1 large garlic clove, peeled
2 tbsp. water
Preparation
Combine all ingredients in a food processor
Blend until reach mostly smooth consistency with some peanut chunks remaining
Recommended Uses
Slice up some celery and you have yourself one great snack!
Roast or grill some vegetables, coated lightly in balsamic vinegar and/or rice vinegar, and serve this dipping sauce on the side
I love how this sauce tastes mixed in with brown rice and garlic powder!

Spiced Yogurt
1 cup plain greek yogurt (I use fat-free Fage)
2 tablespoons finely chopped fresh cilantro
Juice squeezed from 1 lime
Cayenne pepper
Paprika
Black pepper
Preparation
Combine greek yogurt, fresh cilantro, and lime juice in bowl and mix
Add black pepper and cayenne pepper to taste (mix)
Add paprika in small amounts, mixing and tasting before adding more (paprika is a very strong spice)
Store in fridge and enjoy!

Spicy Guacamole
Ingredients
1 ripe avocado
Juice squeezed from 1/2 large lemon
Large slice of red onion
Crushed pink Himalayan rock salt (or sea salt if rock salt is unavailable)
Black pepper
Cayenne pepper
Preparation
Mash up ripe avocado with a fork until you reach a smooth/mostly smooth consistency
Mix in lemon juice
Chop up skinned red onion into very small pieces and mix into avocado/lemon juice mixture
Add salt, black pepper, and cayenne pepper to taste
Recommended Sides
My most frequent use of my spicy guacamole is actually part of my favorite breakfast!
Cut up some cucumber, bell peppers, and broccoli and you have yourself one great snack! Also try spreading this goodness on rice cakes!
This guacamole can be QUITE spicy, so have a large glass of water and a side of blueberries or cherries to cool your mouth down!
For a summery version of this guacamole, try adding a few strawberries (minced) to the recipe. The simultaneous taste of the spicy cayenne pepper and the sweet strawberries is, quite literally, mouth watering!
Store in fridge and enjoy!
