Garam masala, cumin, and coriander are some of the fragrant spices that give this Indian spiced lamb curry its great taste. The lamb is cooked in a rich sauce made of tomatoes and yogurt, which makes the flavors go well together.
Ingredients: 500g lamb shoulder, cubed. 2 onions, finely chopped. 4 cloves garlic, minced. 1-inch ginger, grated. 2 tomatoes, diced. 2 tbsp vegetable oil. 1 cup plain yogurt. 2 tsp garam masala. 1 tsp ground cumin. 1 tsp ground coriander. 1/2 tsp turmeric powder. 1/4 tsp cayenne pepper. Salt to taste. Fresh cilantro leaves for garnish.
Instructions: In a big pot, heat the oil over medium-low heat. To make the onions soft, add them and cook. After you add the garlic and ginger, cook for one more minute. Stir the lamb cubes in a few times to make them brown. Add spices, yogurt, and tomatoes and mix well. Turn down the heat, cover, and let it cook for an hour, or until the lamb is soft. Salt the food to taste. Before serving, sprinkle with fresh cilantro leaves.
