oh my god! have so much fun, i honestly think it’s the most incredible city i’ve been to. in the day it’s mindblowing, then at night, with the LIGHTS, and the cyberpunk insanity of it all, even more amazing. i’m only here for a few days for work and i’ve been trapped in meetings most of it but i’ll definitely gather some recs from friends and colleagues and send you some. (also the food is SO GOOD. the street food. the chongqing xiaomian which is tongue numbing and delicious. and a friend took me to have boboji my first night here and now i keep eating that. it’s a bit like kushikatsu in japan/lok lok in malaysia, you pick what skewered items you want but then they put the food items you pick in this amaaaazing spicy sauce and it’s heaven)

Chongqing noodles with beef / Mala Xiaomian - I have been really obsessed with regionally specific types of soup base and stocks recently - there is such variety. Starting from scratch and layering the dish from start to finish gives such depth of flavour. This soup base took over 3 hours to make and like the last noodle soup I experimented with (Lanzhou beef noodle soup) it was WELLLLLLL worth the time and effort.
