Few weeks went by ever since you (kind of unwillingly) adopted a stay-at-home vampire. Even if the deal didn't really favor you, you got used to this way of living. It wasn't that bad, though. Now, instead of one creature that depended on and loved you, you had two! And he could hold a conversation with you, unlike your pet.
You felt relief after finally arriving at your doorstep. Today has been busy as hell, and you couldn't wait to just melt on your couch and do nothing for the rest of the day. You could even say, you were looking forward to lazily cuddle with Matthew. Most days his attachment to you felt overbearing, especially when you wanted to be left alone. It took you some time to get used to living with someone, but on the rare occasions you craved affection, it came in pretty handy.
Coming inside, you expected to find your roommate (boyfriend? you didn't really have a discussion about what you two were yet) sleeping upside down on your bed, per usual. He would wake up just as you walked through the doors to your bedroom, getting all giddy from seeing you again. Depending on your mood, it was one of the highlights of your day - you appreciated someone caring enough to be happy about your arrival, aside from your pet. With that thought, you walked thru the hall, not expecting any changes in your routine.
It didn't take long for you to smell the nice aroma lingering around the house, lightly tickling your nostrils. It was- uncanny, to say the least. You quickly investigated the source of the smell, leading straight to your kitchen. There, you saw your counter full of dirty bowls, cooking supplies, lots of spices laying around, and your vampire standing in the middle of it all. Astonishment overtook your face. The sound of your footsteps alerted him, turning on his heel he faced your way.
"You're back!" He beamed, holding the wooden spoon in his grip. He quickly put it back it into the pot, intending to run up to you and greet you properly with a joyous embrace.
"You're gonna clean that up, right?" You were quick to ask the most important question, making him stop in his tracks.
"I-" He got taken aback, clearly expecting a different reaction from you, "I made you dinner, and that's the first thing you say to me after coming home? Not even a hello?" The bangs covered half of his pout as he crossed his arms in dismay. You realized you came off way too harsh, too occupied with the mess to acknowledge his efforts.
"Right- sorry," you resumed to your regular tone instead. His expression softened, returning to his usual self. You approached the man with curiosity, smelling the unfamiliar scent of spicy food in your house. "What's this?"
"Well- as I already said, I tried to make something for you," he suddenly turned a bit coy after seeing your cocked eyebrow, "I don't really know if it came out right, human food doesn't really taste good to me, but I carefully followed the recipe I found on the internet, so..." His explanation made you smile, you felt nice knowing he prepared it specifically for you, even if he knew jackshit about your diet. You looked inside the pot as he continued, "It's called uh, tikka masala? I just thought it looked good." He judged your stare, hoping it would be something up to your liking.
You fished out the wooden spoon, grabbing a piece of sauce covered chicken with it. It didn't look inedible, on the contrary, it smelled really good. You were quite surprised he managed to not burn it, assuming it was his first time cooking anything. You guessed he had a lot of time to spare and made sure he did it correctly. He watched intently over your shoulder as the chicken disappeared from the spoon and into your mouth.
First thing you felt was... Hot. Hot, spicy, burning nightmare. You felt the tears gather in the corner of your eyes, quickly dropping the spoon back where it was, running up to your fridge to get some milk. He just stood there, wide eyed at your intense reaction. "Man, it's spicy as fuck," you wiped the droplets of milk stuck to the corner of your lips, "did you throw the whole packet of chilli into it?"
He grinned bashfully, rubbing his arm, "I... May have overdone it a little. I tried it myself, and couldn't taste it at all, so I poured more until I finally felt it sting. Which- thinking about it now, might have been because vampires aren't meant to feel much flavor." You didn't comment, choosing to point out his stupidity with a simple, disappointed sigh. "B-But I made everything else correctly, right?" Slight hope reflected in his eyes, even if the odds were against him. After you calmed down from the sudden assault of your tastebuds, you took a moment to actually process what you ate. Aside from the overwhelming spiciness, the dish was actually quite tasty. He waited with bated breath for your review.
"Mm... Yeah, skipping the fuckton of chilli, it was pretty good." A big, proud smile formed on his face.
"So- Are you gonna eat it?" He asked, leaving you in an awkward position. You didn't really wanna break his heart (or waste any food) by refusing his gift, just because it destroyed your tongue. You didn't expect to come back home just to feel guilty about your dinner. You sighed, giving up.
"Yeah, I guess I will. Can't wait for that tummy ache," you complained, but still made sure to reward his behavior - he had good intentions. A soft peck on his cheek made him flash you his sharp, pointy teeth in delight.
Even though the dinner physically hurt you, after some time you just ignored the the numbness in your mouth. Overall, it was a 6/10 experience. Matthew watched you as if your reaction would differ with each bite, which you thought was adorably stupid. Done with this painful experience, you finally got to do what you planned from the beginning - that is, absolutely nothing. You lazily laid yourself on the couch, turning on the tv. Matthew was quick to get all over you, placing himself on your chest like a disrespectful cat. You didn't mind it this time, granting him your affection by playing with his hair. He absolutely melted under your touch.
Maybe getting yourself a vampire wasn't such a bad idea after all?

i'm super bad at cooking and never know where to start because every recipe out there asks for ingredients i simply don't have at home so do you perhaps know what basic ones would be good to stock up on? like eggs and stuff...especially when it comes to spices i have no idea what is okay to use
Haii o/ very honored that you sent me an ask, and ofc I’ll do my best to help! This reply got a bit out of hand so. Long text under the cut. Behold. Feel free to reach out in asks or dms or whatever with any future questions (@ everyone tbh).
Food is, of course, very subjective, so my idea of a perfect list of foods to keep a stock of will not be universal, but I hope this will, at least, give you some ideas if anything.
First of all, I usually mentally break down my typical weekday recipe into vaguely carbs source - protein source - veggies, buy a couple of options for each category and just switch them around for variety. My standard set is
rice / pasta (usually spaghetti re:shapes) / glass noodles
eggs / chicken / tofu / bacon
random pack of frozen vegetables, bell peppers, eggplants, tomatoes, cucumbers, leafy greens. garlic and onions too
I have an option of making egg fried rice with chopped up bacon and added frozen vegetables one day, then blending the leftover vegetables with bell peppers and tomatoes to use as pasta sauce with chicken and spaghetti the next day, then branching out and making eggplant tofu stir fry with glass noodles, then using whatever eggplant tofu stir fry i had left as rice balls filling and making myself a quick vegetable salad on the side… And all those things are easy to make and don’t need much fussing around.
Other options to consider would be potatoes (you can roast them with whatever, boil, fry, etc), buckwheat (my wife doesn’t like it otherwise I’d use it more often), kidney beans and chickpeas for your carbs*; fish and meat for your proteins (those are. a bit too expensive for me usually); carrots, cabbage, leeks etc.
The list looks long, but, again, you just need to pick out a couple of things from each group and throw shit in a pan so to speak. And a lot of them are easily soup-able (boiling water chicken potatoes carrots rice? boom soup. etc), which is another easy base recipe to exploit.
Now to the matter of spices. Salt and pepper are obvious enough, but a good thing to look for are, especially if you are just getting into cooking, spice blends. Something something French Herbs™ something something Taco Seasoning™ something something Seven Spice™ something something Garam Masala™. There’s a lot of different ones, but they are, essentially, a formed flavor profile in themselves, so you don’t need to worry about mixing spices and herbs that might not go well together, and by paying attention to contents you can learn for yourself what individual seasonings are commonly used together.
Also, everyone, hold your judgement real quick and trust me with this, but ooh I always save leftover flavor packets from instant ramen and reuse them in other dishes. Egg fried rice just doesn’t taste right without suspicious red powder courtesy of shin ramen… It’s probably MSG my beloved or something…
While I’m at it, bouillon cubes are handy to have, you can use them for soups, crumble them up in other recipes. Adding one to the water you’re cooking rice in is a great hack at making it more flavourful.
In general, while I do actually have way too much spices (and keep buying more… very excited about my newly acquired dried tarragon…), the ones I’d advise to have for an average person would be:
Salt (ideally both coarse grain and fine grain, but fine grain only serves you just right)
black pepper (both in a mill/grinder and peppercorns), red pepper flakes
paprika, garlic powder, ginger powder
bay leaves, dried oregano, basil, thyme, dill, cinnamon, coriander, cardamon, cumin, turmeric, sumak....
I really got a bit carried away by the end, but. You don't actually need to buy all of them and at the same time, just start with whatever couple of things you'd need for whatever you are cooking and let your collection build up over time, since spices aren't something you need to buy often anyway 👍
Other things I think it’s nice to have in stock in your kitchen would be flour and baking powder, vinegar (distilled vinegar, rice vinegar… I like to have balsamic vinegar too but it’s so expensive it’s ridiculous ngl), soy sauce, cooking oil of your choice (I use sunflower oil, olive oil and sesame oil), panko or breadcrumbs, starch (i have potato starch, cornstarch and tapioka starch, I would suggest just getting cornstarch at first).
* going to clarify here that while beans are often brought up as a source of protein, most are rich in complex carbs, excluding edamame and green beans for example. And since I mostly often cook beans with meat, they check out my daily carbs in my head.

Stove 1:
1/2 cup oil
2 tbl ginger garlic paste each
1 cup chopped onions - brown
Crushed and roasted coriander - 3 tbl
Red chilli powder - 3 tsp
Crushed and roasted cumin - 2 tsp
Garam masala - 1 tsp
Black pepper- 1 tsp
Turmeric - 1/2 tsp
Salt - 2 tsp
Cook
Add yogurt 1/2 cup and cook
Tomato puree 1 cup and cook
Stove 2:
1/2 cup oil
6 cardamon
2 lbs Chicken boneless cube
Cook till almost done
Yogurt 4 tbls
Cook till oil separates
Combine:
Add puree to chicken
Cook till oil seapartes
Add 4 tbl water
Cook till oil separates
Crushed roasted coriander 1 tbl
Dry fenugreek 1 tbl
Garam masala 1 tsp
Heavy whipping cream 1 cup
Cover cook low heat 5 mins

### Ingredients:
- 500 grams of Basmati rice - 1 kg chicken ( pitch as per your choice) - 2 cups of yogurt - 4 medium-sized onions (thinly sliced) - 4 tomatoes (chopped) - 4 green chilies (chopped) - 1 tablespoon of ginger paste - 1 tablespoon of garlic paste - 1 cup of chopped coriander leaves - 1 cup of chopped mint leaves - 1 teaspoon of turmeric powder - 1 teaspoon of red chili powder - 1 teaspoon of garam masala powder - 1 teaspoon of cumin seeds - 1 teaspoon of whole black peppercorns - 4-5 cloves - 4-5 green cardamom pods - 2-inch cinnamon stick - 2-3 bay leaves - Salt to taste - As much ghee or vegetable oil as needed - Saffron strands (optional) - Fried onions for garnish (optional)
### Instructions:
1.**Marinating the Chicken:**
- In a large bowl, mix yogurt, ginger paste, garlic paste, turmeric powder, red chili powder, half of the chopped coriander leaves, half of the chopped mint leaves, and salt.
- Add chicken pieces to this mixture and coat them well. Allow to marinate normal in the fridge for 2-3 hours. If you have time, you can keep it overnight in the fridge, it will marinate very well and will increase in taste.
2. **Preparation of Rice:**
- Wash Basmati rice thoroughly and soak it in water for 30 minutes.
- Take warm water in a bowl. Add salt, whole spices (cumin seeds, black peppercorns, cloves, cardamom pods, cinnamon stick, bay leaves), and soaked Basmati rice.
- Cook the rice until it's 70-80% done. It should still have a slight bite to it. Drain the rice water well and cool it.
3. **Layering the Biryani:** - In a heavy-bottomed pan or a handi, heat ghee or oil. Brown some finely chopped onions and fold them, then keep some onions aside for later serving.
- Add chopped tomatoes and green chilies to the remaining onions in the pan. Cook until the tomatoes turn mushy.
- Now, add marinated chicken along with the marinade to the pan. Cook the chicken until it's half done.
- Layer the partially cooked rice over the chicken in the pan. Sprinkle garam masala powder, remaining chopped coriander leaves, and mint leaves over the rice.
- Optionally, you can dissolve saffron strands in warm milk and drizzle it over the rice for added flavor and color.
-.Cover the pot well with a lid to prevent air from escaping, or you can also use aluminum foil paper. Cook on low heat for about 20-25 minutes or until the chicken is cooked through and the rice is completely done.
4. **Final Garnish and Serving:**
- Once the biryani is cooked, remove the lid and gently fluff up the rice with a fork.
- Garnish with the reserved fried onions and some chopped coriander leaves.
- Serve hot with raita (yogurt sauce) and your favorite salad.

Earthen vessels are also beneficial in the kitchen because they provide a much more stable temperature than metal pots, meaning you don't have to worry about hot spots and cold spots. They're not porous so any food on them is sealed off from outside bacteria or viruses that might cause spoilage. And finally, clay cooking pottery can last long time by just following these easy steps (read below)
1. Preparing Clay Pots Prior to First Use:
Take the earthen pot and immerse it in water for a couple of hours.
You can also leave it immersed in a sink filled with water overnight.
Remove from water and let the pot dry completely.
2. Seasoning Clay Pots:
Take any vegetable oil and rub it nicely all over the pot.
Fill the pot up to ¾ level with water and cover with the lid before placing it on your stove at low temperature for 2-3 hours. You can also keep it in your oven at 350 degrees Fahrenheit instead.
Bake the pot for 2 to 3 hours before removing from the heat. Let it cool down before washing. This process hardens the pot, makes it crack resistant and also helps in getting rid of the clay smell.
3. Before Cooking:
Submerge the clay pot in water for approximately 15 to 20 minutes before cooking food so that the pot absorbs water. The steam released as the pot gets heated slowly helps in preventing the food from drying out while maintaining its natural flavours.
Ensure proper temperature settings because a sudden increase or decrease in temperature may lead to cracks or breakage. Place the pot in the centre of the oven and let it slowly heat. Always cook food on low or medium heat.
4. While Cooking:
The ideal cooking temperature should be between 190 degree Celsius and 250 degrees Celsius. Unlike metal cookware, clay pots take longer to heat, therefore, on an average, cook the food for 15 to 20 minutes longer in comparison to your regular pots.
While cooking food in a clay pot, the temperatures need to be set approximately 40 degrees Celsius higher than your regular cookware. In case, the recipe has a longer duration, it is suggested that you cook on low heat.
Never add cold water or cold spices while the pot is hot as it may lead to breakage or cracks. If required, add only warm water.
5. Post Cooking:
Always use oven mittens or any kind of bakers pad to lift the hot pot.
Place the pot on a mat, wooden surface or kitchen towel. Placing a hot pot on a cold surface may lead to cracks.
Be careful of hot steam while removing the lid of the pot.

As far as possible, make sure you hand-wash the clay pots and avoid putting them in a dishwasher.

Do not use harsh chemical detergents and avoid excessive scrubbing.
A mixture of baking soda and water can be applied to the pot for removing the strong smell of certain ingredients.
If any kind of mould gets formed, put salt or baking soda on a scrub pad and gently remove the mould.
Boil the pot in water for 20 to 30 minutes to unclog the pores.
Never use detergent or soap to clean the clay pots. The pores may absorb the soap and lend a soapy flavor and taste to your dishes.
