shepherd's pie and pull apart monkey bread from 03/03/2025
No real recipe just vibes, I'll share how I did it
cook a beef stew
line a pie dish with pre-baked biscuit dough crust (from a can works just fine)
make some mashed potatos
put the stew on top of the biscuit and the potatoes on top of the stew
monkey bread is:
take the leftover buttermilk biscuit dough from the Pillsbury can and rip it into chunks, mix with white sugar brown sugar butter and cinnamon and nuke it for at least 20 minutes

French fries :)
Peel and cut a potato into wedge-ish shapes
Boil in salted water until tender but not falling apart
Drain
Dry in the freezer for a bit
Fill a skillet full of a high temperature oil like canola or vegetable
Put the potatoes in until golden brown or firm to the touch
Let them cool and eat. Salt as desired

I haven’t cooked or eaten any potatoes until today.
And it was in a frozen meal, lmao

I like frozen pot pies as an easy meal; i just grabbed this one because it was on sale. It has potatoes in it…. Does that count?

Ok I didn't get my hashbrown recipe written down this weekend like I planned (I thought I'd actually started doing previously it but uhhh I was wrong) BUT. a) I will do it at some point and b) in the meantime I offer someone else's transcription of one of my other favorite potato recipes of all time! They came out so good!
And they were even better reheated the next day.

Pork, Beans, Potatoes
1/6/2025
This isn't what I planned to make or eat for dinner, but I really wanted rice and beans after talking to my mom, hahahah.
I hit the gym today and it always makes me very hungry, and I can't really focus well when I'm hungry, so I'll try to break down how I made these beans as best as I can.
I'm going to consider this a stew.
I never claimed to be a talented photographer, just a guy who likes potatoes.
Recipe:
No recipe from the web, this is a PQ original.
As such, it's probably gonna seem a little chaotic.
What you're about to see is my handy dandy Fucking Throw It All In A Fucking Pot, Baby, The Whole Spice Cabinet (except not the whole spice cabinet, the curry ingredients were mostly left alone, but I've been known to throw a garam masala or 5 chinese spice into this bad boy) method
Ingredients:
Pork chops (I had 3 so I used 3)
Sweet Potato (I used one)
Green Bell Pepper
Whole tomato
Olive Oil
A handful of pearl onions
Red Kidney Beans
Spices: Garlic, ginger, cayenne pepper, oregano, paprika, cumin, salt, black pepper, cilantro, chili powder, garlic powder and onion powder, bonito flakes, tomato paste, miso paste, powdered chicken bouillon, sazon con achiote y culantro
Vinegar of your choice. I poured some from a jar of pickled onions.
Broth & wine of choice. God only knows which one I used.
To save money & time I have a lot of frozen ginger, garlic, and cilantro. I hate chopping these items. So I always have a lot. A little bit of fish oil or bonito flakes + miso paste will bump up any kind of stew.
Cooking Instructions
I popped a cube of frozen ginger, garlic, and cilantro into a pressure cooker along with the roughly chopped bell pepper, tomato, and onions, and all the spices.
I sauteed them until the onions were a little glassy and there were bits sticking to the bottom. At that point I poured in a little broth and wine to unstick the yummy from the bottom of the pot. It was chicken broth and a yummy red wine, I know that much, but use whatever.
So, kill the heat there. We're gonna do the pork now.
You can just throw the porkchops into the pot whole. The instant pot will make it easy to shred later. This is the easy way. It's still pretty tasty.
What I did because I'm a tryhard is I put the pork chops in my cast iron skillet with salt, olive oil, more vinegar, and more wine. (I didn't add too much salt because the stew pot is already pretty salty). I blasted it at the highest setting and flipped so it was brown/black on both sides.
If it looks like it's threatening to get stuck or too hot or whatever, unstick with more broth or wine.
It doesn't need to be fully cooked, you're mainly after that little burnt /fried pork flavor. Throw those chops in the pot. Deglaze the skillet with more broth / throw in some butter if you want and pour that into the pot.
Wash peel and roughly chop a large sweet potato. Put that in the pot.
Open a can of red kidney beans. Put that in the pot.
Pressure cook for 20 minutes or until tatos tender.
Serve with a bowl of rice. Sometimes I also add lentils to the pot; I didn't this time.
Another fun thing to do is stir in a spoonful of plain full fat whole milk yogurt into your bowl after you've served yourself. I like Brown Cow. This is good for most savory dishes ime.

every time i ask people if they do any new years resolutions its all ooooo i dont like making them bc i fail or ohhhhh no i couldnt keep up wiht that and then when they ask me and i tell them about Pasta Quest (i am eating as many different pasta shapes as possible in the space of a year) or when i did Fruit Adventures (every time i saw a fruit i had never eaten before id get one and eat it and read the wikipedia article about it) theyre like hang on i forgot you can make Fun Ones i want a fun one

1/5/2025: I'm not sure if this dish has a name but it is essentially a roasted potato with a Parmesan crust. The recipe calls for sweet potato, but I needed to get rid of these other potatoes.
Parmesan was a little gummy and didn't stick, this could be because I changed the recipe and didn't use sweet potatoes. I also used a glass dish with sides when the recipe video, I think, used a baking pan.
It looked pretty similar to the one in the video so overall I would call this a success. It was pretty tasty.

Ingredients:
Sweet Potatoes
Paprika, salt, black pepper, garlic powder (measurements not given) (I measure with my heart, so a hefty pinch of each)
Olive Oil (two tablespoons)
Grated Parm (no measurement given, but enough to cover a whole baking sheet)
Cooking Instructions:
Preheat Oven to 400 degrees Fahrenheit
Cover a baking sheet in parchment paper
Cut the potatoes lengthwise, in half
Coat them in the oil and spices, mixing by hand
Grate parm to cover the baking sheet
Put the potatoes flesh-down
Bake for 35-40 minutes

Idea shamelessly stolen from the "pasta quest" new year's resolution person and the person with the soup spreadsheet. I might also make a soup spreadsheet as I want to eat more soup. For now this is good.
Ideas / Submissions welcome. I will almost definitely be doing dupes / similar items, and will be tracking all potatoes eaten in 2025.
