Seasonal Tastes at The Westin Manila Offers Special Opening Promotion

The Hungry Kat was invited to experience Westin’s Eat Well program last Friday so it was a great opportunity to try the newest hotel buffet in the city. Seasonal Tastes is Westin Manila’s all-day dining restaurant on the hotel’s mezzanine floor.
The bright and spacious restaurant comes with plenty of seating options. You can sit near the windows facing the busy streets below, or choose one of the tables closer to the live interactive buffet kitchen serving signature global cuisines and local comforts. They also have a private dining room for those intimate occasions.
Helmed by Executive Chef Rej Casanova, Seasonal Tastes lets diners explore the different specialty dishes from East to West. As an opening promotion, Westin Manila is offering their daily Lunch Buffet at only P1,990 nett per person from its regular rate of P2,350 nett per person.
It’s Seafood Night at Seasonal Tastes on Friday and Saturday as they offer the Seafood Dinner Buffet at only P3,000 nett per person from its regular rate of P3,200 nett. So what can you find at the Seafood Dinner Buffet? Let’s start at the Cheese and Charcuterie Station which offers a variety of hams and cheese cuts together with breads and dips.

The local favorite Beef Caldereta is also featured at the Asian Station. Seafood Night brings out a lot more than just seafood as diners will really enjoy the exciting mix of dishes and cuisines.
For those who want rice to go with their dishes, you can choose from the Seafood Fried Rice or the Mixed Paella which both offer complete meals by themselves.
Another Japanese treat is also on display here as the Mixed Tempura comes with a combination of shrimp and vegetable tempura. I always look for tempura whenever I go to a hotel buffet and Seasonal Tastes does not disappoint with their crunchy ebi tempura.
From Asia, it’s now time to head West as we explore the different Western Dishes on the buffet table. The Baked Salmon is a very creamy seafood dish offering tender salmon cuts baked to cheesy perfection. Other seafood options include the Pollock on Cream Sauce and the Cioppino which is an Italian-American fish stew.
Popular meaty items such as the Beef Salisbury and the Herb Roasted Pork Belly create the perfect surf and turf combinations for your plate.
Over at the Carving Stations, the Baked Emperor Fish proudly sits on its throne as diners can enjoy all these beautiful seafood offerings.
The main attraction at the carving station is the Slow Roasted US Beef Short Plate. Ask the server for a slice or two and have it seared according to your preferred doneness. Add some roasted vegetables and mashed potatoes plus a touch of gravy to complete your plate of beefy goodness.
The highlight of the Seafood Dinner Buffet is, of course, the seafood! There are several Fresh Seafood Stations all throughout the buffet area where you can find the freshest crab legs, curacha, prawns, mussels, clams, squid, and more.
At the Asian station, you can ask the chefs to use these seafood ingredients for your Singaporean Laksa, Clear Chicken Soup, or Signature Biang Biang Nian noodles.
Better yet, simply fill your plate with all the seafood that you like and ask the chef to cook it in glorious garlic and butter. There are several other ways of enjoying your fresh seafood like having it cooked in chili garlic or simply having it grilled. There’s plenty of time to explore and enjoy all these possibilities during the Seafood Dinner Buffet.
Don’t forget about desserts because the Dessert Station comes with a lot of sweet and tempting items. Take a look at these mini cakes, chocolate chip cookies, donuts, leche flan, and S’mores Brownies topped with chocoalte “seafood.”
There’s also halo halo, ice cream, fruits, and a crepe station that prepares your freshly made crepes on the spot. Top it with a scoop of Vanilla ice cream drizzled with chocolate syrup to complete your adventure.
Executive Chef Rej Casanova also presented a sample of other specialty dishes which you can expect to find at Seasonal Tastes. He also explained Westin’s Eat Well program and how he and his team tries to make healthier versions of each dish with ingredients responsibly and sustainably sourced. For their final day in Morocco, the Duke and Duchess of Sussex carried out several engagements in Rabat celebrating young people and Moroccan culture.

They kicked off the busy day with a visit to the Royal Federation of Equestrian Sports.
From there, the Duke and Duchess visited Villa des Ambassadors in Rabat for a cooking demonstration.

The couple were joined by renowned chef Dar Moha. Harry was already familiar with his work as he visited his restaurant in Marrakesh before the royal wedding.

The couple saw how traditional Moroccan cuisine is supporting young people and teaching children from under-privileged backgrounds a new skill. Meghan is passionate about food bringing people and communities together. During the launch of Grenfell cookbook Together, she said: “This is more than a cook book and what I mean by that is the power of food is more than just the meal itself it is the story behind it. And when you get to know the story behind the recipe, you get to know the person behind it and help us celebrate what connects us rather than divides us. That is the ethos of Together.”

It seemed only fitting for the group to prepare one of the recipe’s from Together. They chose the pancakes with honey and almond butter by Cherine Mallah (which reminds me Shrove Tuesday is next week).

When Harry sampled one Meghan laughed and said “Big bite”, Harry replied “It’s a bit late now”.

‘Hadaf supervises 85 people suffering from moderate or mild developmental disabilities, many of whom come from disadvantaged backgrounds.
“It all started with my daughter, who has a mental disability,” says Amina Mseffer, president of the association. When she could not put her daughter at school because people were scared to have a disabled person with the other children, Mseffer said, she decided to put her in a special institution. But this was expensive, and stops when the person is 21 years old.
So she joined forces with relatives and friends and in 1997, they created Hadaf, which means “goal” in Arabic, but also stands for “Association of parents and friends of mentally disabled people.” Help and donations have come from official institutions, companies and even the Moroccan king and private donors, including nearby mosque-goers.
In 2005, Hadaf set up a social-professional center in the Hay Nahda neighborhood of the capital Rabat, housing various workshops and courses including jewelry making, sewing, decorative painting and carpentry.’

The Mail Online reports:
‘Inside they walked around the stations and chatted to the young cooks, aged between nine and 18, stopping to try mince and onion pastries (Harry) and Harira – a spicy chickpea soup (both). Chef Moha handed them each a decorated ceramic bowl to try and they each took a sip. ‘C’est delicieux,’ said Meghan in French. ‘What’s in it?’ asked Harry, before joking, ‘It’s a secret recipe!’
One child said something in Arabic to the chef, who turned to the Duke and said: ‘He finds you a very good person. ‘He is a good person,’ smiled the Duchess, putting an affectionate hand on her husband’s arm. 
‘Harry and Meghan took up the offer of a meal for ‘the whole family’ from top chef Moha Fedal, who hosts the North African nation’s version of Masterchef. He told the couple: ‘I hope to cook for you next time,’ as they joined him for a cookery demonstration with underprivileged children in the capital Rabat.
The Duchess replied: ‘The whole family next time.’ The chef said: ‘You come with your baby to Marrakesh next time’ referring to the fact that the prince is believed to have visited in 2018, just before his wedding. 
‘We would love to,’ said Meghan. ‘Come with your baby and I will cook for all three,’ he told Harry as he joined them. The Duke – clearly inspired by the delicious spread he had sampled – replied: ‘We will cook for you!’ 
The Duchess gave Chef Moha a copy of Together. She wrote: “Chef Mohar. Wishing you continued success and congratulating you on your incredible work in engaging the community in cooking. All the best. Meghan”.

The couple discussed sustainability. More from the Mail:
‘Harry spoke as he and the duchess met entrepreneurs in Morocco who have started companies aimed at tackling the country’s social, economic and environmental problems. Talking to Youssef Chaqor, who runs a recycling company called Eko-Geste, Harry said: ‘You need to put more pressure on the big companies.’
He said that while big companies might give money to environmental projects, ‘they are still producing single-use plastic bottles.’ He added: ‘Go to the source!’
Looking at a stand which featured wallets and shoes made from cured fish skin, the duchess told PhD student Nawal Allaoui: ‘It’s very clever.’ Meghan asked what happened when it got wet, but she replied: ‘It’s waterproof.’ Harry congratulated her on moving away from snakeskin and crocodile skin.
Meghan said: ‘It’s really amazing not to use exotics like that, and instead use something sustainable that would otherwise go to waste. But they still have a fashionable impact.’

‘Silver craftsman Sakhi Driss had a photo of Harry’s father, Prince Charles, on display from when the Queen’s son visited his store in Fez. Driss said of Harry, “He asked when the visit was and where was the picture taken.” At one point, Harry jokingly shielded his eyes as the sun reflected off one of the silver pieces – and Meghan learned that it takes about six days to make one tray.
At one of the first stops in the fabulous walled gardens high above the coast with the Mediterranean sea, they were handed two embroidered foot cushions – which will perhaps come in useful in their new home, Frogmore Cottage in Windsor Castle. “They were interested. They asked many questions. It was a great pleasure to see them,” Ismail Boudrous from the social enterprise says.’

For the afternoon’s engagement, Meghan changed into a more formal look. Initially it was thought Meghan’s dress might be a re-purposed Givenchy piece, however it turns out she wore the Loyd/Ford Pleated Dress (with many thanks to eagle-eyed reader Jennifer).

The Duchess wore the Artizia Babaton Keith jacket she debuted for a polo match in 2016. It is described as “This take on the tailored blazer does away with a standard collar and plays with architectural tailoring. Trial run of Chefs Plate
My first delivery of Chefs Plate meals arrived today.1
My company sent everyone SnackMagic boxes with treats for the holidays, and the box also came with a discount code for Chefs Plate, a meal delivery service.2
I decided to try it even though I’m not really the target market for it. We live close by to grocery stores and I enjoy cooking things from raw ingredients.
But, it was steeply discounted, and I’ve always been curious about these services. I don’t know how long this one has been available or what others there are in Canada / are live in Vancouver.
I picked the meals ahead of time with Rachael. This order included:
Herby Panko-Crusted Chicken
Creamy Butternut Squash Orzo
Loaded Beef Burrito Bowls
Usual price $60CAD, discounted price $27CAD. For 2 people for 3 meals that’s pretty good.

There is a glossy double sided print out of meal prep and cooking instructions. My first reaction was that this is a lot of packaging and paper and inks and it’s definitely wrecking the planet.

The kits are in a big cardboard box, each meal’s ingredients in a bag. The bags are compostable so you can use them for your bucket liner (as it says in the explainer).

There’s a compartment in the bottom with an ice pack and things that need to be kept cold. This week, chicken breasts and some ground beef. There was also a loose whole bulb of garlic.
The kit bags aren’t full to the brim, so the tops could be folded down. But I still had to find room in my apartment sized fridge to stick them.

Here’s everything from the kit laid out on the counter. The sticker on the bag has a full ingredient list for everything like the slide blend and they mayo, plus the nutrition info for the whole meal.

The double sided instructions are good. Tells you the equipment and other stuff you need (basics like salt, pepper, oil, honey). And the instructions are laid out in time it takes to cook. So preheat the oven right away and get the potato wedges started.

And now we’ll teleport all the way to the plated meal. Chicken breast covered in mayo and panko-crusted, potato wedges baked in the oven with Montreal Steak Spice, and honey glazed carrots.
It was good! We added our own salt and pepper to everything as instructed and it was nice and flavourful.
It called for parchment paper for both the potato wedges and the final bake of the chicken. That was a nice tip for me to save on clean up and keep things crisp.
It definitely reminded me that potato wedges are something we can make any time!
The carrots are pretty much how I make them anyway - finished with a little butter and honey. Dill if you like, or I’ll add cumin seeds sometimes.
The mayo-instead-of-egg was another nice tip that I’ll be using.
All in all, a good, tasty first experience.
On Meal Kits Generally
The discounts to get me on a subscription is very much an investment driven business.
The packaging feels like a lot. But: no plastic other than on the meat.
There is an app, so maybe I can opt out of the printed meal instructions.
Are the ingredients local? Could one check a box and have 80% local ingredients?
Could one apply this to community supported agriculture?
This meal was ~$9CAD with discount, ~$20CAD without. For 2 people, that’s reasonable. The chicken breasts alone would cost me $5-6. Everything else low cost: 2 carrots, 3 potatoes, mayo, steak spice. Maybe another $1.
We used to do zero take out. And then the pandemic. Now we’re at 1-2 take out meals per week. This would be cheaper.
I’m interested in perhaps doing some food sharing with people, where everyone cooks a larger quantity and then shares with the group. Don’t know if I’ll get to it as a habit this year, but it’s the sort of thing I’d like to see more of.

SHALLOW FRY, LESSON 4: PARISIENNE GNOCCHI My version has no shallow fry, coz I don’t have a working stovetop! So all the veggies are raw, only the beurre blanc is cooked. But it’s easy enough to make a raw vegan sauce for this too, actually 😃 My submission to @foodfutureinstitute 🥒The last time I tried making gnocchi in my Thermomix, it was a bit too challenging so this time I experimented with using avocado and mango instead and used a donut cutter to cut them into gnocchi-like shapes! In terms of texture, the avocado worked pretty well coz it's soft and pillowy :) I couldn't get zucchini so I substituted with kyuri instead. Made the beurre blanc with a coconut oil spread instead of nuttelex so maybe that's why it didn't seem thick enough. But I ate up everything coz it tasted real good to me. We’re taking you all over the world to some of the hottest, fanciest, and most innovative restaurants, and finding out what makes the people behind them tick!

HOST: Today, we’re visiting a long-running restaurant that has fallen on some hard times, but hopes to revitalize itself under an up-and-comer who’s manning a kitchen as head chef for the very first time.

Last year, our head chef, well, he had a very bad time. First, he had an entire night, he served no food. Just forgot. He swore it would never happen again, but it happened again. Then he fell in a lake.
HOST: That’s rad.
FRÉDÉRIC: So the owners, they do not like the sous chef. He is not a pleasant man. He would pay waiters cash bonuses for spitting in critics’ food. I tell them, I will run your restaurant, and we will get four Michelin stars.
HOST: To be clear, no restaurant in the world has more than three. The scale only goes up to three.
FRÉDÉRIC: The T-shirt man does not know this, and he respects bold ideas.
HOST: So you took over, and suddenly business was booming. It was the talk of the town. Sold out for weeks. Suddenly the local press is saying you’re an innovator that’s going to bring this old gray mare into the 21st Century. What were some of your big ideas?
FRÉDÉRIC: You know Taco Tuesday, the idea?
HOST: Oh yeah. Rad stuff.
FRÉDÉRIC: I put on Taco Threesday. I served tacos, but three different ways.
HOST: Wow. Wow.
FRÉDÉRIC: Hard shell, soft shell, and something I call “in-between shell”.
HOST: That’s wild. Wild stuff, man. Reminds me of a meal I had inside an abandoned factory in Berlin, and —
[an explosion is heard from inside the kitchen]
HOST: Do you need to check on that?
FRÉDÉRIC: On what?
HOST: [mildly concerned, but continuing] OK, so you get through the holiday rush season last year, everyone’s talking about Le Fourrière again, and suddenly expectations are high. Ownership opens their wallet, and loads you up with talent. Top sous chefs, a world-class pastry chef, a sommelier from France, even one of New York’s top sushi chefs! How did you incorporate his sushi into your menu?
FRÉDÉRIC: We do not have sushi on our menu.
HOST: So, what are you doing with — OK, nevermind, nevermind.
[another apparent explosion is heard from within the kitchen]
HOST: Are things going according to plan for you this season?
FRÉDÉRIC: There have been some growing pains.
SOUS-CHEF [chef’s whites blackened by soot]: I’m sorry to interrupt, Chef, but the salmon dish you planned for tonight keeps exploding. I think it might be all the gunpowder causing the problem. I think maybe we should try a different —
FRÉDÉRIC: [with unearned confidence] Add a quarter-cup more gunpowder.
SOUS-CHEF: I just don’t think that —
FRÉDÉRIC: If it does not work, blame me.
SOUS-CHEF: I want to be very clear, everyone blames you for everything. That is not in dispute.
FRÉDÉRIC: [thoughtfully] Make it a half-cup.
SOUS-CHEF: [sighs, returns to kitchen]
HOST: I understand you’ve had some struggles.
FRÉDÉRIC: It takes time to implement a plan.
HOST: There was the night you gave everyone in the restaurant food poisoning. Even a few people just passing by on the street got it. Didn’t even eat the food. Didn’t know that was possible.
FRÉDÉRIC: That’s on me, and I’ll take the blame for that.
HOST: All of your kitchen appliances were stolen.
FRÉDÉRIC: I have started locking the door every night after this. It’s a lesson learned, and we’re growing as a staff.
HOST: Several diners have gone missing while eating at your restaurant.
FRÉDÉRIC: Everyone’s experience is going to be their own, and we’re just going to have to keep doing things according to our plan. The results will come.
HOST: You attempted to officially challenge a magazine’s review.
FRÉDÉRIC: I thought that was the rule.
SOUS-CHEF: [arrives at the table with plate of food] The chef’s specialty; Salmon ala trinitrotoluene.
HOST: Wow. This looks dynamite.
SOUS-CHEF: [pleading with his eyes for the host not to try it] It literally is.
HOST: [ignoring him] Now, Fred, I have to ask — you’ve got a very unusual family name, that’s not one you hear much. Did you ever consider going into football coaching? Maybe there’s something to nominative determinism, perhaps your bombastic style would be more suited to the sideline than the prep line.
[both glance over at a television, where the Cleveland Browns are currently attempting to “go for four,” and the referees don’t seem to know what to penalize them for]
FRÉDÉRIC: No, of course not. Imagine a man of my kitchen talent on a football field. It would be a disaster.
HOST: Well, I’m sure glad you — [takes bite] [explodes]
VOICEOVER: Shortly after this episode aired, management of Le Fourrière removed Frédéric Footballfields from his position, citing “a culture of winning,” and also numerous health-code violations. The restaurant has been rebranded as a Perkins.
